These cookies are similar to Anzac biscuits, but are not as hard. They are very quick to make, and go down well with a cup of tea.

Number Of Ingredients 7

1 tablespoon golden syrup
⅞ cup butter
1 teaspoon baking soda
1 cup flaked coconut
1 cup all-purpose flour
1 cup white sugar
2 cups rolled oats

Steps:

  • Boil butter or margarine and syrup together. Add soda. You should end up with a frothy mixture after soda is added. Stir in coconut, flour, sugar, and oats, and stir well. Press mixture lightly into a large baking tray.
  • Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool, and cut into bars.

1 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
3/4 cup margarine, softened
3/4 cup brown sugar, lightly packed
1/2 cup honey
1 egg
1/3 cup plain low-fat yogurt
2 cups cereal, flakes
2 cups toasted rice cereal
1/2 cup coconut, flaked (optional)

Steps:

  • Combine flours, baking soda and baking powder.
  • Mix well.
  • Cream margarine, brown sugar, honey, egg and yogurt together thoroughly.
  • Add dry ingredients to creamed mixture, mixing well.
  • Stir in cereals and coconut.
  • Drop dough by tablespoonfuls onto UNgreased baking sheets.
  • Press lightly with floured fork.
  • Bake at 350ºF for 7-9 minutes, or until light golden.
  • Don't overbake.
  • Cool on baking sheets 3 minutes, then remove and cool completely on wire racks.

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the flour, baking soda and baking powder.
  • Cream the butter, sugars, honey and egg thoroughly.
  • Add the dry ingredients to the creamed mixture, mixing well.
  • Stir in the remaining ingredients.
  • Drop the dough by tablespoonfuls about 2 inches apart on an ungreased cookie sheet.
  • Bake for 8 to 10 minutes or until golden.
  • Cool for 5 minutes on the sheet, then transfer to a rack and cool completely.

1 cup(s) flaked coconut
1 cup(s) chopped pecans
1 cup(s) flour
1/2 cup(s) brown sugar, firmly packed
1 cup(s) butter
1/3 cup(s) honey

Steps:

  • In a large bowl, mix the oats, coconut, pecans and flour.
  • In a heavy sauce pan, heat the brown sugar, butter and honey until it reaches a boil.
  • Pour the honey mixture over the dry ingredients and mix well.
  • Drop the dough by rounded teaspoon into greased muffin tins so that the cookies retain their shape.
  • Bake in a preheated 350 oven for 12 to 15 minutes or until lightly browned.
  • Cool in the pan.

Steps:

  • Line cookie sheet with wax paper.
  • Combine peanut butter chips with shortening in medium microwavable bowl.
  • Microwave on high for 1 1/2 minutes.
  • Stir only for a few seconds.
  • If needed, microwave about 15 additional seconds to melt mixture; stir well. Chips should be completely melted and mix should be smooth.
  • Stir into mixture crushed pretzels, almonds, and cereal; combine well.
  • Drop by spoonfuls onto wax paper.
  • Let cool for approx 1/2 hour, until firm and cooled off.
