YUMMY PORK NOODLE CASSEROLE

This is my Mom's pork noodle casserole. The added sour cream gives it a little twist on the usual version. The added red pepper and corn give it color and flavor. You can add and subtract any vegetables in this versatile recipe. This is one of my favorite comfort food recipes.

2 cups egg noodles
cooking spray
3 tablespoons butter
¼ cup chopped onion
¼ cup chopped celery
¼ cup chopped carrots
¼ cup chopped red bell pepper
2 (10.75 ounce) cans condensed cream of chicken soup
½ cup sour cream, or more to taste
2 cups shredded Cheddar cheese
1 (8 ounce) can whole kernel corn, drained
3 cups cubed cooked pork
1 teaspoon salt
¼ teaspoon ground black pepper
½ cup dry bread crumbs

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Melt the butter in a skillet over medium heat. Stir in the onion, celery, carrots, and red bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the noodles, cream of chicken soup, sour cream, Cheddar cheese, corn, and cooked pork, then season with salt and black pepper. Transfer mixture into the prepared baking dish. Sprinkle bread crumbs on top.
  • Bake in the preheated oven until bubbly, 30 to 35 minutes.

6 tablespoons reduced-sodium soy sauce, divided
1/4 to 1/2 teaspoon minced fresh gingerroot
2 garlic cloves, minced
1 pound boneless pork loin, cut into 2-inch strips
4 ounces uncooked thin spaghetti
3 teaspoons canola oil, divided
4 cups thinly sliced napa (Chinese) cabbage
2 large onions, sliced
1 cup thinly sliced carrots
1/3 cup sweet white wine or chicken broth
4-1/2 teaspoons sugar
1/4 teaspoon crushed red pepper flakes

Steps:

  • In a resealable plastic bag, combine 2 tablespoons of soy sauce, ginger and garlic; add pork. Seal bag and turn to coat; refrigerate for 30 minutes. Cook pasta according to package directions; drain., In a large nonstick skillet or wok, stir-fry pork in 2 teaspoons oil for 3 minutes. Remove and keep warm. sTir-fry the cabbage, onions and carrots in remaining oil for 2-4 minutes or until crisp-tender. Add the wine or broth, sugar, red pepper flakes and remaining soy sauce. Cook over medium-high heat for 1 minute. Add spaghetti and pork; toss to coat.

1 pound thin boneless pork chops, fat trimmed
8 ounces wide Thai rice noodles
1 cup fresh cilantro (leaves and stems)
Finely grated zest and juice of 1 lime
2 slices peeled ginger
2 cloves garlic, smashed
3 red jalapeno peppers, seeded and roughly chopped
2 shallots, roughly chopped
3 tablespoons fish sauce
2 tablespoons packed light brown sugar
4 tablespoons peanut oil
1/4 pound green beans, split lengthwise and cut into pieces

Steps:

  • Place the pork in the freezer about 10 minutes to make it easier to slice. Soak the noodles in very hot water until just tender, about 10 minutes; drain. Snip the noodles with scissors into shorter lengths. Cut the frozen pork crosswise into 1/4-inch-wide strips.
  • Puree the cilantro, lime zest and juice, ginger, garlic, jalapenos, shallots, fish sauce, brown sugar and 1 tablespoon water in a food processor until smooth, scraping down the processor as needed.
  • Heat 3 tablespoons peanut oil in a large skillet over high heat. Add half the cilantro mixture and stir-fry 1 minute. Add the pork and stir-fry until no longer pink, 2 to 3 minutes. Transfer the pork with a slotted spoon to a plate. Add the remaining 1 tablespoon peanut oil to the skillet; add the green beans and stir-fry until tender, 4 to 5 minutes. Add the noodles, pork and 2 tablespoons of the remaining cilantro mixture. Cook, tossing with tongs, until heated through, about 2 minutes. Stir in the remaining cilantro mixture to taste.

3 tbsp sesame oil
350g lean pork mince
350g egg noodles
thumb-sized piece ginger, peeled and chopped, or 1½ tbsp ginger purée
3 garlic cloves, crushed, or 1 tbsp garlic purée
320g stir-fry veg (we used 2 x 160g bags of mangetout, baby sweetcorn, beansprouts, carrots and peppers)
4 tbsp low-salt soy sauce
2 tsp cornflour
4 tbsp sweet chilli sauce

Steps:

  • Heat the oil in a wok or frying pan. Add the mince, break it up with a spoon and fry over a high heat for about 8 mins until browning. While the meat cooks, boil a kettle, then pour the hot water over the noodles. Set aside for 5-10 mins to soften.
  • Add the ginger, garlic and veg to the pan and stir-fry for 2-3 mins. Mix 1 tbsp soy sauce with the cornflour to make a paste. Add the remaining soy sauce, the chilli sauce and 2 tbsp water. Drain the noodles and add to the pan with the sauce. Cook until the sauce coats the noodles, adding a splash of water if needed, then serve.

Kosher salt and freshly ground pepper
3 tablespoons cornstarch
2 cups fat-free low-sodium chicken broth
4 teaspoons vegetable oil
4 scallions, sliced (white and green parts separated)
1 2-inch piece ginger, peeled and minced
2 cloves garlic, minced
3 cups precut stir-fry vegetables (about 9 ounces)
Grated zest of 1 lime, plus wedges for serving

Steps:

  • Cook the noodles as the label directs, then drain and rinse under cold water. Meanwhile, toss the pork with 1/4 teaspoon salt, pepper to taste and 2 tablespoons cornstarch in a bowl. Whisk the chicken broth and the remaining 1 tablespoon cornstarch in another bowl.
  • Heat a large nonstick skillet over high heat. Add 1 teaspoon vegetable oil, then add the pork and stir-fry until lightly browned, about 5 minutes; transfer to a bowl. Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
4 cups low-sodium chicken broth
1 cup soy sauce
1/2 cup dry sherry
1/4 cup packed dark brown sugar
2 tablespoons toasted sesame oil
1/2 teaspoon red pepper flakes
2 star anise pods
1 cinnamon stick
5 cloves garlic, smashed
1 2-inch piece ginger, peeled and sliced
6 to 8 whole dried shiitake mushrooms
1 pound soba or ramen noodles
1/4 cup water chestnuts, sliced
2 Fresno chile peppers, seeded and thinly sliced
2 scallions, sliced
1/4 cup fresh cilantro

Steps:

  • Season the pork with salt and pepper. Heat a skillet over medium-high heat with the vegetable oil. Add the pork and brown on all sides, 6 to 8 minutes. Transfer to a plate.
  • Combine the broth, soy sauce, sherry, sugar, sesame oil, red pepper flakes, star anise and cinnamon stick in a 5-quart slow cooker. Stir to dissolve the sugar, then add the garlic, ginger and mushrooms. Add the pork, cover and program to cook 4 hours on high, then 2 hours on low, or 6 hours total on low.
  • Transfer the pork to a platter, cover and let rest 15 minutes. Remove the mushrooms from the broth and halve them, then return to the broth.
  • Meanwhile, bring a large pot of salted water to a boil and cook the noodles as the label directs. Slice the pork. Divide the noodles among bowls and top with some of the broth and mushrooms and a few slices of pork. Garnish with the water chestnuts, chiles, scallions and cilantro.

2 garlic cloves (, finely minced)
2/3 cups thinly shredded Napa cabbage
1 green onion (, thinly sliced)
sesame seeds (, for garnish)

Steps:

1 8-ounce package dry thin Chinese noodles
1 tablespoon chili sesame oil, plus more for serving
4 teaspoons vegetable oil
1 pound ground pork
4 scallions, thinly sliced (white and green parts separated)
2 tablespoons grated fresh ginger
1/4 cup low-sodium soy sauce
2 tablespoons mirin
1 tablespoon rice vinegar
2 1/2 cups matchstick or shredded carrots (from a 10-ounce bag)
6 ounces snow peas, trimmed and halved on an angle

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Drain and rinse under cold water until cooled. Drain well and transfer to a large bowl. Toss with 2 teaspoons each chili sesame oil and vegetable oil.
  • Combine the pork with the scallion whites, ginger, 1 tablespoon soy sauce and the remaining 1 teaspoon chili sesame oil in a medium bowl. Combine the remaining 3 tablespoons soy sauce, the mirin, rice vinegar and 1 tablespoon water in a small bowl.
  • Heat the remaining 2 teaspoons vegetable oil in a large nonstick or cast-iron skillet over high heat. Add the pork mixture and cook, breaking up the meat with a wooden spoon, until browned, about 5 minutes; transfer to a large bowl, leaving any drippings in the skillet. Return the skillet to high heat and add the carrots and snow peas. Cook, stirring, until crisp-tender, about 3 minutes. Add the vegetables to the pork. Add the noodles to the skillet and cook, stirring, until warmed through, about 2 minutes. Add the soy sauce mixture and cook, stirring, until the noodles are coated.

350 g higher-welfare pork tenderloin
300 g broccoli
410 g fresh free-range egg noodles or 240g dried noodles
2 cloves of garlic
3 cm piece of ginger
1 tablespoon groundnut oil
200 g beansprouts
1 fresh red chilli, optional
MARINADE
4 tablespoons low-salt soy sauce
1 teaspoon Chinese five-spice powder
1 teaspoon chilli powder
1½ tablespoons runny honey
1 tablespoon rice wine vinegar
1 dash of sesame oil

Steps:

  • Mix the marinade ingredients in a shallow dish. Slice the pork into 4cm to 5cm strips, then add to the marinade and set aside.
  • Cut the broccoli into florets, then cook in a pan of boiling salted water for 2 minutes. Add the noodles and cook according to the packet instructions. Drain, reserving a little of the cooking water, and set aside.
  • Peel the garlic and ginger, finely slice the garlic, then cut the ginger into matchsticks.
  • Heat the groundnut oil in a large pan or wok over a high heat, then fry the garlic and ginger for 2 to 3 minutes, until golden. Add the pork (reserving the marinade) and fry for 3 to 4 minutes, until browned.
  • Add the marinade and reduce the heat a little. Toss the pork to coat and fry for a few minutes until sticky and cooked through.
  • Add the noodles, broccoli and reserved cooking water and toss. Once it's lovely and sticky, stir through the beansprouts for the final 30 seconds or until heated through.
  • Slice and scatter with chilli (if using) and serve at once.

I got this off the internet some time ago, I can't quite remember where...I know the combination sounds strange...but the pork chops fall apart and EVERYONE that tries it, LOVES it!!!

4 -8 pork chops
1 (10 3/4 ounce) can condensed cream of celery soup
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (15 ounce) can tomato sauce
1/2 cup water
2 tablespoons soy sauce
3 tablespoons dry onion soup mix
1 (16 ounce) bag wide egg noodles

Steps:

  • Season chops as you would normally season your meat.
  • Brown chops under broiler 20 minutes or in non-stick skillet, just until brown.
  • Place in Crockpot.
  • In large bowl, combine all other ingredients except egg noodles.
  • The sauce should resemble the thickness of gravy to adhere to the noodles.
  • Pour sauce over pork chops in the Crockpot.
  • Be sure chops are covered by the sauce.
  • Cook on low 8-10 hours.
  • Serve over bed of egg noodles.
  • *Originalcooks notes: I used 8 chops to ensure leftovers.
  • You can use 4, but you will be left with a lot of sauce.

1 lb boneless center cut pork chop, cut into thin strips
1/3 cup hoisin sauce
2 tablespoons fresh minced garlic
1/4 teaspoon crushed red pepper flakes (or adjust to suit heat level)
3 tablespoons low sodium soy sauce
1 tablespoon rice vinegar (do not use rice wine vinegar)
1 1/2 teaspoons sesame oil
1 teaspoon fresh minced ginger
1 (10 ounce) package fresh spinach leaves
1 (8 ounce) can water chestnuts, rinced and drained
1 carrot, peeled and cut into matchsticks (about 2 cups)
3 -4 green onions, chopped

Steps:

  • Cook the pasta in boiling water until just tender then drain and place in a bowl.
  • Place the strips of pork into a bowl.
  • In another bowl whisk the hoisin sauce with minced garlic, chili flakes, soy sauce rice vinegar, sesame oil and ginger; pour HALF of the mixture over the pork strips, toss to coat then allow to stand for 15 minutes.
  • Heat 1 teaspoon vegetable oil in a wok or a large non-stick skillet over medium-high heat.
  • Add in the pork and stir-fry for about 2-3 minutes; remove to a bowl.

1 onion
1/2 stick butter
1 tsp vegetable oil
1 tbsp paprika
1/4 tsp smoked paprika ((optional if you haven't got any leave it out))
10 oz button mushrooms
1.5 lb pork loin steaks ((or pork stir fry pieces))
2 tbsp vegetable oil
1 1/4 cup soured cream
1/4 tsp salt
1/2 tsp black pepper
2 tsp lemon juice
salt
handful of parsley leaves ((finely chopped))
14 oz pappardelle ((or any long pasta))
1/2 tsp salt
1/2 stick butter

Steps:

  • Bring a large pan of water to the boil. Add the salt and then cook the pappardelle as per the packet instructions (set a timer)
  • When cooked drain well, add the butter and use tongs to gently lift and turn the pappardelle until the butter has melted and coated them.
  • Whilst the pasta is cooking, peel and slice the onion, set to one side and slice the mushrooms
  • Add the butter and oil to a large frying pan and melt over a medium heat.
  • Add the paprika, smoked paprika and onion. Mix well and cook slowly until the onion is translucent and soft.
  • Add the mushrooms and cook for 4 minutes over a low heat.
  • Whilst the mushrooms are cooking, cut the pork into thin strips .
  • Transfer the onion and mushroom mixture to a plate and set aside.
  • Use the same pan and add 1 tbsp of the oil until very hot.
  • Add half of the pork and stir fry for about a minute. Transfer this to the onion plate.
  • Add the remaining tablespoon of oil and cook the other half of the pork, again for 1 minute.
  • Tip everything back into the pan and stir well.
  • Add the sour cream, salt and bring to a simmer.
  • Cook for 2 minutes until thickened slightly.
  • Add the pepper, lemon juice and check if it needs salt.
  • Serve with the buttered pappardelle and sprinkle with parsley.

2 tsp chilli oil
3 garlic cloves (crushed)
1/3 cup soy sauce
1/3 cup hoisin sauce
1 tbsp rice vinegar
3 tbsp honey
2 tsp chilli flakes

2 tsp cornstarch / cornflour
500 g (1lb) pork tenderloin (cubed )
2 eggs
1 tbsp soy sauce
½ cup flour
½ cup cornstarch
1 tsp salt
500 g noodles (cooked and drained)
spring onion/green onion (finely chopped )

Steps:

  • In a large pan, heat the sesame and chilli oils together then add the garlic.
  • Cook until fragrant (30 seconds, or so) then add the soy sauce, hoisin sauce, rice vinegar, honey and chilli flakes.
  • Mix cornstarch with water to make a slurry then add and allow to simmer. Cook for a few minutes until the sauce has thickened slightly. Set aside.
  • Chop the pork into bite-size chunks. In a large bowl, whisk together the eggs and soy sauce.
  • In a separate bowl, whisk the flour, cornstarch and salt together. Coat the pork first in the flour, then in the egg and finally in the flour again.
  • Heat a large pot of vegetable oil over high heat and once hot, carefully add the pork in batches and fry until golden brown and cooked through, approximately 5-7 minutes.
  • Remove with a slotted spoon and allow to drain on a wire rack set over a sheet pan.
  • Cook the noodles in a large pot of salted water until al dente then drain. Toss the noodles with the sauce.
  • Serve the noodles and sauce in bowls topped with crispy pork and spring onion.

Steps:

  • Gather the ingredients.
  • Heat the oven to 375 F. Butter a 2 1/2- to 3-quart baking dish.
  • In a large skillet or sauté pan over medium heat, brown the diced pork in the olive oil.
  • Add the chopped onion and sliced celery and sauté for about 3 minutes longer.
  • Add salt, thyme, pepper, condensed mushroom soup, and water. Cover, reduce the heat to low, and simmer the mixture for 1 hour.

4 pork steaks (boneless is best)
garlic salt and black pepper (to taste)
2 tablespoons oil
1 cup celery, sliced thin on the diagonal
1 onion, thinly sliced
1 green pepper, thinly sliced
6 -8 mushrooms, thinly sliced
1 (10 1/2 ounce) can tomato soup
1 (8 ounce) can tomato sauce
1 tablespoon italian seasoning
1 (12 ounce) bag wide egg noodles, cooked as directed on package (or other pasta)

Steps:

  • Preheat oven to 350*. Brown pork in hot oil until browned. Season with garlic salt and black pepper on both sides. Remove to 9x13" casserole dish. In same skillet, saute onions, celery and green pepper about 5-7 minutes. Add tomato soup, tomato sauce, and italian seasoning. Simmer 5 minutes. Put sliced mushrooms over meat in casserole and pour sauce over, spreading evenly over pork. Cover with foil. Bake in oven 45 minutes. When pork is nearly done, cook noodles in salted water until al dente (about 10-12 minutes). Serve each pork steak with noodles on the side topped with some of the sauce. I serve this with a tossed green salad and garlic bread.
