1 1/2 cups diced cooked chicken breasts
2 cups spinach
1/2 cup strawberries, sliced
1/4 cup red grapes
1/4 cup green grapes
1/4 cup blueberries
1/4 cup blackberries
1/2 orange, peeled and sliced
1/4 cup sliced blanched almonds
2 tbsp hemp hearts, optional
For the citrus poppyseed dressing:
1/3 c. extra-virgin olive oil
1/4 c. freshly squeezed orange juice
1 tbsp fresh squeezed lime juice
1 tbsp fresh squeezed lemon juice
3 T. honey
1/4 tsp. celtic sea salt
1 1/2 tsp. poppy seeds

Steps:

  • In a large bowl, mix salad.
  • In a medium sized bowl, add all dressing ingredients and whisk well to combine.
  • Toss salad in dressing just as you are ready to serve.
  • Enjoy!

1/4 teaspoon pepper
3/4 pound boneless skinless chicken breasts, cut into thin strips

DRESSING:
1/2 cup white vinegar
1/3 cup sugar
1 teaspoon dried minced onion
1 teaspoon ground mustard
1/2 teaspoon salt
1 cup canola oil
1 tablespoon poppy seeds
SALAD:
1 package (6 ounces) fresh baby spinach
2 cups sliced fresh strawberries
1 cup fresh sugar snap peas, trimmed
1 small red onion, chopped
1/2 cup pecan halves, toasted

Steps:

  • In a large bowl, combine limeade concentrate and pepper; add the chicken. Cover and refrigerate for 2 hours., Drain and discard marinade. In a large skillet, saute chicken in oil until no longer pink., Meanwhile, in a blender, combine the vinegar, sugar, onion, mustard and salt. While processing, gradually add oil in a steady stream.
