We call these Cheesy Mashed Sweet Potatoes. But in fact, they're cheesy-cheesy sweet potatoes-thanks to the cream cheese and Parmesan.

3 lb. sweet potatoes (about 6), peeled, cut into 1-inch cubes
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed, softened
1/2 cup milk
1/4 cup KRAFT Grated Parmesan Cheese, divided
2 Tbsp. PLANTERS Sunflower Kernels, toasted

Steps:

  • Cook potatoes in boiling water in large saucepan 15 to 20 min. or until tender; drain.
  • Mash potatoes. Add cream cheese, milk and 3 Tbsp. Parmesan; mix well.
  • Sprinkle with remaining cheese and sunflower kernels.

Steps:

  • Boil whole russet potatoes in their skins until they're easily pierced with a knife; let cool slightly before peeling. While the potatoes are boiling, saute sliced white onions in olive oil or butter over low heat until soft and deeply caramelized. Mash the potatoes with milk or cream, butter, and salt and pepper to taste. Stir the caramelized onions into the potatoes just before serving.

2 lbs bright-orange sweet potatoes, peeled,cut into 2 inch pieces (about 3 medium)
2 tablespoons olive oil
4 ounces pancetta, finely diced
1 medium onion, coarsely chopped
1 tablespoon red wine vinegar
1/4 cup mascarpone cheese or 1/4 cup cream cheese (2 oz)
3/4 teaspoon salt
1/4 teaspoon fresh ground pepper

Steps:

  • Boil sweet potatoes in large saucepan of boiling salted water over medium-high heat 15-20 minutes or until very tender.
  • Drain sweet potatoes; return to saucepan.
  • Meanwhile, heat oil in large skillet over medium heat until hot.
  • Add pancetta; cook 2-3 minutes or until pancetta begins to brown.
  • Add onion; cook 15-20 minutes or until onions are caramelized, stirring frequently.
  • Adjust heat, if necessary, to prevent onions from browning too quickly.
  • Add vinegar; stir, scraping up browned bits from bottom of skillet.
  • Over very low heat, mash sweet potatoes.
  • Add mascarpone, salt and pepper.
  • Stir in onion mixture.
  • *Noteyou can use bacon if you don't have pancetta available.
  • Just cook the bacon in a medium pot of boiling water 1 minute.
  • Drain and rinse until cool.
  • Blanching helps remove some of the smoky flavor from the bacon.

3 pounds sweet potatoes
¾ cup mascarpone cheese, softened at room temperature ((about 6 ounces))
2 tablespoons unsalted butter, melted
¼ teaspoon garlic powder, plus more to taste
Salt and pepper to taste

Steps:

  • Peel the sweet potatoes and cut them into 1 inch cubes.
  • In a medium or large pot, bring water to a boil, enough to cover the sweet potatoes. Then, add the sweet potatoes and cook for 15 to 20 minutes until tender and easily pierced with a fork. Drain and transfer to a large bowl (no need to rinse).
  • Mash the cooked sweet potatoes with a potato masher or a fork. Fold in the mascarpone cheese and the melted butter until evenly combined. Season with the garlic powder, and salt and pepper to taste. Enjoy! Note: don't microwave the mascarpone because it can melt very fast.

3 onions (brown medium)
2 teaspoons oil
1 lb sweet potato (peeled and cubed)
1/2 tablespoon butter
salt and pepper (to taste)

Steps:

  • Peel onions, cut in half and finely slice so you have half moon shaped circles.
  • Put into a medium frypan and drizzle with oil and massage the oil in to break up the half rings.
  • Cover frypan and cook over a low to moderate heat giving a stir occasionally until a nice golden colour (about 30 to 40 minutes), the longer you take the sweeter the onion will be.
  • Put sweet potatoes in a pot of cold water and season with a little salt and bring to the boil and cook till tender.
  • When potatoes are cook, drain and give a good shake, put in butter and mash (I used a potato masher) till you get the consistency you like (I like a slightly lumpy texture).
  • Add your caramelised onions and mix in well (I just used a fork) and season with salt and pepper to taste.

I fail to remember where this recipe first appeared but chances are it was from Canadian Living magazine. This simple dish is much richer than you would expect and pairs well with grilled meats especially lamb and pork. Since sweet potatoes are very moist, adjust the amount of sour cream or milk to your taste. I do recall that the original recipe recommended placing the sweet potatoes and onion mixture in a food processor until blended. I found this method too gluey and altered it as stated.

1/4 cup olive oil
1 large Spanish onion, thinly sliced
2 tablespoons fresh thyme leaves
3 large sweet potatoes
2 tablespoons butter
1/4 cup low-fat sour cream (Carnation low fat works very well) or 1/4 cup milk (Carnation low fat works very well)
salt
fresh ground pepper

Steps:

  • Preheat oven to 400º.
  • Heat olive oil in frying pan at medium heat and add onion. Sauté until rings separate. Reduce heat to medium low and continue cooking uncovered, until onions are soft and caramelized at least 30 minutes or more, stirring occasionally.
  • Meanwhile, prick whole potatoes with skins on and bake in roasting pan for 40 minutes or until soft. When cool enough to handle peel skins from potatoes and set aside.
  • When onions are soft add thyme, salt and pepper to taste and mix well. At this point you can either place the onions in a food processor and pulse until they are slightly chunky or chop with a sharp knife.
  • Heat a medium sized pot and add butter. Add the sweet potatoes and mash with a fork or potato masher. Add the sour cream or milk a little at a time then add the onion mixture. Blend with a wooden spoon until fully incorporated and adjust S & P to taste.

1 egg yolk
¾ cup milk

Steps:

  • Place potato halves into a large pot of salted water, bring to a boil, and reduce heat to medium-low. Cook until very tender, about 15 minutes. A knife should pierce the middle of a potato half easily. Transfer potatoes to a colander and drain thoroughly, about 5 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Whisk mascarpone cheese in a mixing bowl until smooth. Stir egg yolk and milk into mascarpone cheese, whisking until smooth; season with salt, black pepper, and cayenne pepper.
