SPARKLING BABY CAKES

Steps:
- Preheat the oven to 350 degrees F. Line the muffin tin with mini cupcake liners.
- Whisk the flour, baking powder, and salt together in a medium bowl.
- In another medium bowl, beat the eggs and sugar with an electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the butter and then the vanilla.
- While mixing slowly, add half the dry ingredients, then add all the milk, and follow with the rest of the dry ingredients. Take care not to over mix the batter. Divide the batter evenly in the prepared tins (about 2 teaspoon batter per cup cake.)
- Bake until a tester inserted in the center of the cakes comes out clean, about 15 minutes. Cool cupcakes on a rack in the tin.
- Whisk together the confectioners' sugar and Prosecco until smooth and sugar dissolves. (If cupcakes are not cool enough to ice, lay plastic film directly on top of the glaze to prevent it from drying out and set aside at room temperature until ready to use.) Dip the tops of each baby cake in the Prosecco glaze, sprinkle with sugar or top with tiny candies and return to the rack to set, about 25 minutes. Cooks Note: This is a great way to use up leftover bubbly. This recipe works just as well with flat Prosecco. For a full wine flavor, prick the mini cupcakes with toothpicks when they are cooling; then drizzle with some Prosecco before icing with the glaze.
BABYCAKES
Steps:
- For the Cupcakes: Preheat the oven to 350 degrees F.
- In a small mixing bowl add the baking soda, salt, baking powder and flour. Mix thoroughly with a fork and set aside. In a large mixing bowl add the eggs, honey, both sugars and butter. Mix until smooth using a hand mixer. Add the cinnamon and baby food. Mix until smooth. Using a rubber spatula fold in the pecans. Slowly add the flour mixture using a sifter and fold in until ingredients are evenly mixed.
- Place 24 mini baking cups (2-inch, nonfoil) into each hole of the mini muffin pan. Place a 1-gallon resealable freezer bag into a bowl (for support) and pour the cupcake batter into the bag. Seal the bag and cut the tip off 1 of the bottom corners of the bag. Squeeze the batter into each baking cup, filling them only 3/4 of the way full. Place the mini muffin pan in the oven on the center rack. Bake for 12 minutes.
- For the Frosting: In a small mixing bowl add the extracts, milk, cream cheese, butter and powdered sugar. Mix until smooth and creamy using a hand mixer. When the cupcakes are done baking remove each cupcake from the pan and place on a cooling rack. Place the cooling rack in the refrigerator for 5 to 7 minutes.
- Once the cupcakes are cooled remove them from the refrigerator. Frost each cupcake by putting a generous dollop of frosting on the top with a spoon. Garnish top with ground pecans and they are ready to serve.
BABY POUND CAKES

- Heat oven to 350°F. Place paper baking cup in each of 30 regular-size muffin cups.
- In medium bowl, mix flour and salt; set aside. In large bowl, beat butter and cream cheese with electric mixer on medium speed 2 minutes or until creamy. Gradually add sugar, beating well 5 to 7 minutes. Add eggs, one at a time, beating after each addition. On low speed, gradually beat in flour mixture just until blended. Stir in vanilla bean paste and almond extract. Spoon batter evenly into muffin cups.
- Bake 22 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely.

BABY BLOCK SHOWER OR BIRTHDAY CAKE
This idea for a cake is so sweet! This would be perfect for a baby shower or even your little ones first birthday party!! You use frozen, store-bought or homemade pound cakes cut in half to make "blocks" and then frost with "b-a-b-y" or the baby/child's name that the party is celebrating!! NOTE: the quantity of cakes and frosting depends on how many blocks you need to spell out the name.

- Make or buy a minimum of 2 pound cakes (quantity depends on how big of a name you are spelling).
- Slice in half width-wise and shave sides and top accordingly to make a cube.
- Color appropriate amount of white frosting with food coloring to make pink, blue or whatever colors "blocks" you want.
- Frost all sides but the bottom of the blocks with the colored frosting.
- Using a frosting gun or a ziploc (with tip cut) filled with remaining white frosting - write the first letter on all sides, including the top of the block.
- Repeat with the additional "blocks" by finishing out the name you are using.
- Arrange blocks to spell out the name on a beautiful platter and getting ready for the compliments!
- NOTE: You could also bake 2 13x9 cakes and cut into cubes and make the "blocks" 2-layers stacked.
- You could get even fancier and pipe the contrasting color of frosting onto the edges/trim of the blocks to define them more.
- Or you could decorate the blocks with the white frosting and spell the baby's name out with the color-tinted frosting.
- The possibilities are endless!

TENDER ALMOND POUND CAKE
This recipe makes a dense, sweet cake. As the name "Pound Cake" implies, the recipe calls for a "pound" each of butter, eggs, sugar, and flour. This recipe was given to me by my Czech Grandmother.

Steps:
- Cream the butter.
- Add a pound of eggs (typically 8 or 9 eggs), the sifted sugar, almond flavoring, and lemon juice.
- Cream until smooth.
- My Grandmother's recipe said to beat for 1/2 hour.
- If you are using an electric mixer, adjust accordingly.
- Gradually add the flour and mix well.
- Pre-heat oven to 300.
- Fill a lightly greased form 3/4 of the way.
- Loaf pans work well, as do mini-loafs or cup-cakes.
- For loafs, check for doneness with knife-test at 90 minutes.
- Mini-loafs and cup-cakes will finish sooner.
- I like this pound cake plain, or with a light dusting of confectioners' sugar.
- Alternately, you can apply a thin coat of icing.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch Bundt pan.
- Sift together the flour, baking powder, cinnamon, cloves and salt. Set aside.
- In a large bowl, combine sugar, eggs, and oil. Beat until smooth. Mix in baby food and nuts. Beat in flour mixture alternately with applesauce. Pour batter into the prepared pan.

- Pre-heat oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (mine was 19cm x 9cm x 6cm). Put all of the ingredients except those for the icing into a large bowl and beat together, either using an electric hand whisk or a wooden spoon until smooth and combined. Pour the mix into the loaf tin and spread evenly with the back of spoon. Bake for 40 - 45 mins.
- Once out of the oven, leave to cool and make the icing. Combine the icing sugar and vanilla paste with three tbsp of water - you may need more but add it gradually to get a thick icing. Spread it over the top of the cake; it's fine if it drips down the edges. Allow to set and then slice.

- Preheat oven to 375 degrees F (175 degrees C). Grease and flour one 9 or 10 inch Bundt pan.
- Combine the cake mix, sugar, vegetable oil, eggs, apricot baby food and plum baby food. Mix for 2 minutes. Stir in walnuts and pour batter into the prepared pan.
- Bake at 375 degrees F (190 degrees C) for 1 hour. Wonderful with a light dusting of confectioner's sugar or with an almond frosting.
