¼ cup olive oil
2 teaspoons minced fresh ginger root
1 teaspoon lemon juice
1 teaspoon orange juice
1 teaspoon brown sugar
1 pinch white sugar
4 skinless, boneless chicken breast halves - cut into bite-size pieces
salt to taste
3 mangos - peeled, seeded, and diced
skewers

Steps:

  • In a shallow container, mix the olive oil, ginger root, lemon juice, orange juice, brown sugar, and white sugar. Place the chicken breasts in the mixture, and marinate at least 30 minutes in the refrigerator.
  • Preheat the grill for high heat. Season chicken with salt, and alternately thread chicken and mango onto skewers. Discard marinade.
  • Lightly oil the grill grate. Place skewers on the grill, and cook 15 minutes, turning to cook on all sides, until chicken juices run clear.

1 cup fresh orange juice
1/4 cup extra-virgin olive oil
1/4 cup soy sauce
1/4 cup fresh thyme sprigs
1 tablespoon ground allspice
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
3 cloves garlic
3 green onions, chopped
One 2-inch piece fresh ginger, peeled
1 lime, juiced
1 red onion, chopped
1 Scotch bonnet pepper
Salt and freshly ground black pepper
2 pounds boneless skinless chicken breasts, cut into 1 1/2-inch pieces
Mango Salsa, recipe follows
3 tablespoons fresh lime juice
2 tablespoons brown sugar
1 tablespoon minced ginger
1/2 teaspoon hot sauce
2 green onions, diced
1 English cucumber, diced
1 mango, diced

Steps:

  • In a food processor, combine the orange juice, olive oil, soy sauce, thyme, allspice, cinnamon, nutmeg, garlic, green onions, ginger, lime juice, onions, peppers and some salt and pepper; puree until smooth. Add all but 1/4 cup of the mixture in a 1-gallon plastic resealable bag. Add the chicken to the bag and marinate in the refrigerator for 1 to 2 hours. Heat the grill to medium-high. Skewer the chicken pieces and grill on one side for about 5 minutes. Flip and grill the other side until cooked through and grill marks appear. Top with the Mango Salsa and serve with the 1/4 cup reserved (unused) marinade as a dipping sauce.
  • In a medium bowl, combine the lime juice, sugar, ginger and hot sauce. Mix thoroughly and add the green onions, cucumber and mango. Toss and refrigerate for 1 hour.

1 tablespoon butter
1/3 cup plus 3 tablespoons sliced green onions, divided
1 pound boneless skinless chicken breasts, cut into 1-inch cubes

6 tablespoons olive oil
1/4 cup lime juice
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1 tablespoon sugar
4 chicken breast halves, cut into 1-inch cubes
3 mangoes, peeled and cut into 2-inch cubes

Steps:

  • In a large bowl, whisk together the olive oil, lime juice, chili powder, cayenne, salt and sugar. Add the chicken and mangoes and stir gently to coat with the marinade. Cover and refrigerate for 2 to 4 hours.
  • Prepare a hot fire in a grill.

2 small boneless skinless chicken breasts (1/2 lb.)
1/2 cup KRAFT Mango Chipotle Vinaigrette Dressing, divided
1 mango
12 fresh mint leaves
2 Tbsp. lite soy sauce

Steps:

  • Place chicken in medium saucepan. Add enough water to cover chicken by 1 inch. Add 2 Tbsp. dressing. Bring just to boil on medium-high heat; simmer on medium-low heat 12 min. or until chicken is done (165ºF). Drain chicken; discard cooking liquid. Refrigerate chicken 30 min. or until cooled.
  • Pit and peel mango; cut into 12 (1-inch) cubes. (Reserve any remaining mango to use for snacking or another use.) Cut each chicken breast into 6 slices. Thread chicken, mangos and mint onto 12 skewers.
  • Mix soy sauce and remaining dressing until blended. Serve with the chicken skewers.

I was feeling like a little barbecue action tonight so I dug out this recipe. I love fruit on the grill and the banana is a bit unexpected. The original recipe calls for chicken thigh pieces butI've always used chicken breasts.

3 -4 boneless skinless chicken breasts
1 tablespoon white wine vinegar
1 tablespoon lemon juice
1 tablespoon honey
6 tablespoons olive oil
1 clove garlic, minced
4 strips bacon
2 bananas
salt and pepper

Steps:

  • Cut the chicken into bite sized pieces.
  • Combine the vinegar, lemon juice, honey, oil, garlic and salt and pepper to taste in a large bowl.
  • Add the chicken and toss until well coated.
  • Cover and leave to marinate 1-2 hours.
  • Cut each strip of bacon in half.
  • Cut the bananas into 1" lengths and brish with lemon juice.
  • Wrap a piece of bacon around each piece of banana.
  • Remove the chicken from the marinade, reserve the marinade for basting.
  • Thread the chicken and banana rolls onto the skewers.
  • Barbecue the kabobs over hot coals 8-10 minutes until the chicken is cooked through.
  • Baste the kabobs with the marinade and turn the skewers frequently.
  • Serve with corn on the cob and mango relish.
