POPCORN SOUP (CORN CHOWDER)
This will be a recipe that you won't lose--it is SO good! Kids will love the idea of using popped corn instead of croutons on top.

Steps:
- Saute onion in butter with parsley flakes until onion is tender, about 8 minutes.
- Sprinkle flour over mixture and stir (will be lumpy). Slowly stir in the half and half until smooth and creamy. Add corn and cook until slightly thickened, about 5 minutes.
- Add salt and pepper to taste. To serve, ladle into bowls and garnish with popped corn.

POPCORN SOUP
This popcorn soup is so velvety and buttery. It's like eating an elegant version of a bag of popcorn.

Steps:
- Remove the corn kernels from the ears of corn and keep for later.
- In a medium saucepan, combine the corn cobs, water, celery, carrot, bay leaf, garlic and onion.
- Bring to a boil over high heat, then immediately reduce to a simmer.
- Let the broth simmer for 2 hours. Remove from heat and let cool, then strain.
- In a medium stock pot, melt the butter and add the onions. Saute onion until tender, about 5 minutes.
- Add the corn from the cob, corn broth, and salt. Allow to simmer for 10 minutes.
- Put the soup in a blender and blend until as smooth as possible. Remember to let the hot air escape as it blends.
- Return the blended soup to the pot. Add the popcorn. Simmer for 5 minutes. Return the soup to the blender and blend again until as smooth as possible.
- Strain the soup through a fine mesh strainer back into the stock pot. Add the cream to taste.
- For a velvety smoooth soup, blend the soup a third time.
- Serve with kernels of popcorn on the top.

PUMPKIN-POPCORN SOUP

- In a medium saucepan, melt the butter over medium heat. Add the leeks and cook until wilted, about 5 minutes. Add the garlic, ginger and curry powder and cook, stirring, until fragrant, about 1 minute. Add 2 cups of the popcorn and toss to coat in the butter.
- Add the stock, pumpkin and heavy cream. Bring to a simmer. Cook until the leeks are very tender, the popcorn has dissolved away from the kernels and the kernels are softened, about 15 minutes.
- Puree the soup with a hand blender or in batches in a countertop blender. Stir in the lime juice and taste for seasoning, adding a little salt if necessary. Thin with up to 1/2 cup water, if desired. Serve in individual bowls with the remaining popcorn as a garnish.
CORN SOUP
The base for this soup, corn stock, can be frozen and used in all kinds of vegetable soups. It is also a good poaching stock for fish. - Place cobs in a large soup pot with just enough water to cover (about 2 quarts). Add bay leaf, halved onion, and thyme, and bring to a boil. Reduce heat, cover, and simmer 30 minutes. Strain through a fine sieve into a bowl (you should have 1 quart). Stock can be refrigerated 3 days or frozen up to 3 months.
- Heat oil in a deep pot over medium heat. Add chopped onion and garlic, and saute until onion is translucent, about 5 minutes. Add corn kernels, and saute 2 minutes.
- Add stock, and simmer until liquid is reduced by half. Add half-and-half, and return to a simmer. Puree half the liquid in a blender until partially or completely smooth. (To prevent spattering, remove cap from hole in lid, and cover lid with a dish towel). Return to pot, heat, and season with 1 teaspoon salt and 1/4 teaspoon pepper. Divide among 4 bowls, and garnish with scallion and more pepper.

- In a large pot, melt 1 tablespoon butter over medium-low heat. Add onion, and sauté until translucent. Add celery, and continue cooking until celery is just soft on edges. Add bay leaf, popcorn and chicken stock. Cover, and reduce heat to low. Simmer until popcorn is very tender, 1 1/2 to 2 hours.
- Discard bay leaf. Place a fine sieve over a clean pot. Working in batches, use a blender to purée mixture as finely as possible. Transfer each batch to sieve, and press out as much liquid as possible; discard pressed purée remaining in the sieve.
- Place pot of sieved broth over medium-high heat. Add heavy cream and milk. Cut 5 tablespoons butter into pieces, and whisk in one piece at a time. Season to taste with salt and pepper. Serve hot.
