Beat the heck out of the ingredients and watch baking time. One hour usually does it. I don't know where I got this recipe, but I've had it a long time. I think it's great!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place sugar, egg, half and half, flour, whipping cream, and butter or margarine in blender. Beat until thoroughly combined. Pour into pie shell and sprinkle with cinnamon.
- Bake in preheated oven for 60 to 70 minutes, until set in center.

Steps:
- Preheat home oven to 350 degrees.
- Mix the sugar with the flour until completely blended. Add the salt and whipping cream.
- Blend the half-and-half with the yolks and stir into the sugar mixture, then add the vanilla.
- Just blend the mixture; do not beat it.
- Pour into an unbaked pie shell, distribute the cold, chopped butter evenly on top of the pie filling and sprinkle cinnamon on the top.
- Bake the pie until the filling is completely set when the pie is jiggled. Bake "until it bubbles through for 10 minutes." In a convection oven that takes and hour and 15 minutes. In the home oven start checking the pie after an hour.

WICK'S SUGAR CREAM PIE RECIPE - (3.9/5)

- CRUST: Pulse the flour and salt in a food processor. Add the butter and shortening and pulse until the mixture looks like coarse meal with pea-size bits of butter. Drizzle in 3 tablespoons ice water and pulse until the dough begins to come together (add more water, 1/2 tablespoon at a time, if necessary). Turn out onto a sheet of plastic wrap and pat into a disk; wrap tightly and refrigerate at least 1 hour and up to 1 day. Roll out the dough into an 11-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp the edges with your fingers. Pierce the bottom all over with a fork. Refrigerate the crust until firm, about 30 minutes. Place a baking sheet on the middle oven rack and preheat to 425°F. FILLING: Whisk the heavy whipping cream, sugar, flour and vanilla in a bowl. Pour into the chilled crust, dot with the butter and sprinkle the nutmeg on top. Carefully transfer the pie plate to the hot baking sheet and bake 10 minutes. Reduce the oven temperature to 350°F and continue baking until the crust is golden and the filling is bubbly in spots, about 55 more minutes (the center will still jiggle slightly); cover the crust edges with foil if they're browning too quickly. Transfer to a rack and let cool completely. Serve chilled or at room temperature.
SUGAR CREAM PIE
A delicious sugar cream pie that is just like the ones my dad bought at Christmas time each year. I made this for my work Christmas party and it was the first pie to go. I'd love to take full credit for this recipe however it came from the southernfood site and was written by Diana Rattray. I've only modified it slightly.

- Mix 1/2 cup of cold half and half with cornstarch until dissolved. Pour through sieve into pan once desolved. (This will help avoid lumps and give a smooth conistency).
- Add to pan the sugar, reminder of half-and-half, and salt in saucepan. Cook to boiling point. Add vanilla and the butter; return to heat. Cook, stirring constantly until thickened.
- Pour the mixture into pie shell and sprinkle with nutmeg and cinnamon.
- Bake at 325° for 35 to 45 minutes or until firm and lightly browned.

- Sift flour, sugar and salt three times and to be sure they are mixed well. Add boiling water, stirring well to prevent lumps. Then add the small can of milk and vanilla. Pour into a 9 inch unbaked pie crust. Dot top with butter and sprinkle with nutmeg. Bake at 450° for 10 minutes, reducing heat to 350° for 20 minutes or until done. The secret is getting the flour and sugar mixture sifted and mixed well.

OLD FASHIONED CHOCOLATE CREAM PIE
This recipe was given to me by a neighbor when I was a young bride 47 years ago. I have passed it on to my daughter-in-law, and it is a favorite of her five brothers and sister. Warning: The filling is very rich, almost gooey--that's what makes it so good. You can mix the filling ingredients in the standard way for cream pies and cook them over low heat, stirring constantly as I did until microwaves were invented. Now, I prefer to cook mine in the microwave.(I do not have lumps in microwaved cream pies as I sometimes do when I use the standard cooking method).

- Whisk dry ingredients with milk in a large glass heat-proof bowl and cook on high in the microwave.
- Whisk every 3 or 4 minutes.
- Separate eggs and beat egg yolks in a medium bowl while the liquid cooks.
- When the liquid begins to thicken, wisk ladle-fulls of the hot liquid into the beaten egg yolks.
- Strain the egg mixture back into the microwave bowl, whisking again to keep it smooth.
- Continue to microwave until the filling begins to look sort of "cakey" around the edges.
- Whisk to return it to the creamy texture.
- After cooking it this way once, you will become accustomed to consistency and appearance at certain stages.
- When the pie filling is quite thick, remove it from the microwave and add butter and vanilla.
- Pour into the baked pie crust and cover with meringue.
- Prepare meringue while the filling cools: Beat egg whites until "peak" stage.
- Add sugar gradually, beating constantly.
- Add vanilla.
- Spread meringue on pie and bake in a 400° oven 8 to 10 minutes until the meringue has toasty peaks.

- Preheat oven to 450°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack.
