STRAWBERRY CHICKEN SALAD



Strawberry Chicken Salad image

Easy and healthy salad recipe made with romaine lettuce, onions, avocados, strawberries, grilled chicken, and then tossed in a delicious mustard vinegarette.

3 tbsp. Red Wine Vinegar
1 1/2 tbsp. Dijon Mustard
1 tbsp. Maple Syrup
1 tbsp. Chopped Fresh Dill Weed
1/2 tsp. Garlic Powder
1/2 tsp. Kosher Salt
1/4 tsp. Ground Black Pepper
1/4 cup Olive Oil
1 pound Boneless Skinless Chicken Breast
Kosher salt and pepper (to taste)
1 Head Romaine (roughly chopped)
1/2 Red Onion (chopped or sliced)
1 Avocado (halved, seeded, peeled and sliced)
1 1/2 cups Strawberries (quartered)
1/3 cup Shaved Parmesan Cheese
1 Tbsp Avocado Oil

Steps:

  • Mix all the dressing/marinade ingredients to a bowl and refrigerate until ready to use.
  • Season the chicken breast with some salt and pepper. Place it into a ziplock bag or an air-tight container and pour over 1/3 of the prepared marinade. Let it marinate in refrigerator at least an hour. Keep the remaining 2/3 of the dressing marinate in a separate container without touching the raw meat.
  • Meanwhile, roughly chop the lettuce and onion. Peel and slice avocado cut the strawberries into halves.
  • Next, brush the grill or a heavy-bottomed pan with avocado oil and heat over medium-high heat.
  • Carefully place the marinated chicken onto the preheated grill and grill until each side is nicely golden brown and marks appear, about 10-12 minutes or internal temperature reads 165 degrees F.
  • Once the chicken has finished cooking, remove from the grill and let sit for 5 minutes. Slice into 1-inch pieces.
  • For assembling, place the chopped lettuce and onion into a salad bowl. Add avocados and strawberries. Place the sliced chicken on top of the veggies.
  • Drizzle with the reserved dressing/marinade on top and garnish with shaved parmesan.

2 cups sliced strawberries
1 stalk celery, thinly sliced
1 avocado, diced
⅓ cup crumbled feta cheese
½ cup slivered almonds, toasted and salted
3-4 cups cooked, shredded or sliced chicken (such as the meat from a store-bought rotisserie chicken)
½ cup Brianna's Poppy Seed dressing, or more or less to taste

Steps:

  • In a large bowl or platter, or on individual plates, arrange spinach and Romaine.
  • Top with strawberries, celery, feta, almonds and chicken.
  • Drizzle with poppy seed dressing, to taste. Serve immediately.

One of my favorite lunch salads has strawberries, pecans, and poppy seed dressing. I thought those ingredients sounded great for a chicken salad sandwich. Try this delightful chicken salad on a croissant or served on a plate with crackers.

½ cup mayonnaise
2 teaspoons lemon juice
1 teaspoon honey
2 teaspoons poppy seeds
2 cups chopped, cooked chicken
¾ cup sliced fresh strawberries
¼ cup pecan pieces
1 stalk chopped celery
2 stalks green onions, chopped
2 tablespoons chopped fresh parsley
salt and ground black pepper to taste

Steps:

  • Mix mayonnaise, lemon juice, honey, and poppy seeds together in a medium bowl. Add chicken, strawberries, pecans, celery, green onions, parsley; toss to combine. Season with salt and pepper.

Steps:

  • HEAT greased grill to medium-high heat.
  • GRILL chicken 10 min. on each side or until done (170F), turning and brushing occasionally with barbecue sauce. Cut into strips.

1/2 cup sliced almonds
4 (6 ounce) boneless skinless chicken breast halves
2 teaspoons dried tarragon
1 garlic clove, minced
1 tablespoon olive oil
1/2 cup mayonnaise
3 tablespoons lemon juice
1 tablespoon sugar
1 tablespoon poppy seed
3 quarts mixed salad greens, rnsed and crisped
2 cups strawberries, rinsed, hulled and sliced
salt and pepper

Steps:

  • In a wide nonstick frying pan, stir almonds over medium heat just until golden, about 4 minutes.
  • Pour out of pan and set aside.
  • Rinse chicken and pat dry.
  • In small bowl, mix tarragon, garlic and oil; rub all over chicken to coat evenly.
  • Place frying pan over medium heat; when hot, add chicken and cook, turning once, until meat in thickest part is no longer pink (cut to test), 8 to 10 minutes.
  • In a small bowl, combine mayonnaise, lemon juice, sugar and poppy seeds; mix well.
  • In a large bowl, combine salad mix, strawberries, and half the dressing; mix lightly to coat with dressing.
  • Divide salad among dinner plates.
  • Cut chicken on the diagonal into wide strips; set chicken alongside or on top of salad.
  • Drizzle chicken with remaining dressing, then sprinkle with toasted almonds.
  • Season to taste with salt and pepper.

3 large strawberries, slice 4, reserve 2 for mash
4 ounces boneless skinless chicken breasts, sliced
1/2 Hass avocado, sliced
1 tablespoon lime juice
2 cups mixed baby lettuces and spring greens
2 ounces toasted sliced almonds
2 ounces extra virgin olive oil
2 tablespoons balsamic vinegar

Steps:

  • Slice 2 strawberries thinly and slice the grilled chicken breast.
  • Cut the avocado in chunks and toss with lime juice in order to avoid it turning brown.
  • Mix the baby greens, almonds, chicken and sliced strawberries in a large bowl.
  • Mash the remaining strawberry with the olive oil to make a thick paste.
  • Add the avocado and toss one more time.
  • Place all into a large serving bowl, sprinkle with the toasted almond slivers, drizzle the strawberry mash and balsamic vinegar on top.
  • Enjoy with a large glass of peach iced tea!
