MESSY WILD WACKY CHICKEN WINGS
Steps:
- For the wings: In a bowl, combine the chili powder, granulated garlic, paprika, pepper and salt. Pat the wings dry with paper towels. Add the wings to the bowl with the spice mixture and toss to coat. Let sit for a few minutes.
- For the glaze: Heat the olive oil over medium heat in a saucepan. Add the garlic and ginger and cook for 1 minute. Add the soy sauce, brown sugar, crushed red pepper flakes and 1/4 cup water and stir until the sugar is dissolved. In a small bowl, mix together the cornstarch and 2 tablespoons water until smooth. Stir the cornstarch mixture into the sauce and simmer until thickened. Turn off the heat.
- Preheat a deep fryer filled with peanut oil to 350 degrees F, or fill a large heavy pot with 3 to 4 inches of peanut oil and heat to 350 degrees F.
- In a large bowl, combine the cornstarch and flour and stir. Add the seasoned wings and toss to lightly coat. Shake off any excess and fry the wings in batches until golden brown and cooked through, about 6 minutes. Drain the wings on paper towels to soak up any extra oil.
- Put the wings in a large bowl, pour the glaze over the top and toss to coat. Transfer the wings to a serving plate and sprinkle with the black and white sesame seeds and scallions.
CARIBBEAN JERK CHICKEN WINGS
Steps:
- Preheat grill to medium-high.
- Prepare sauce by combining all ingredients together in a saucepan over medium heat. Cook until heated through.
- Rub jerk seasoning into chicken wings. Grill for 10 to 12 minutes or until cooked through. Brush generously with sauce and serve.
BACON-WRAPPED PIG WINGS
Who says pigs can't fly? Take a few boneless pork chops, add some bacon and a little creativity, and Pig Wings are on the menu! The bacon adds great flavor and keeps the loin meat from getting dry. - Cut each pork chop into three strips. To wrap the "wings," start by overlapping the bacon on one end of a pork strip, then wrapping it up and around in a candy-cane fashion. Secure the bacon at the top with a toothpick. If you need to use a toothpick at both ends, go ahead. Season the bacon-wrapped wings liberally with the rub. Prepare your cooker to cook indirectly at 235 degrees F using medium pecan wood for smoke flavor. Place the wings directly on the cooking grid and cook for 90 minutes, or until the bacon is cooked. You may want to finish these on a hot grill or under the broiler to crisp the bacon. Serve hot with barbecue sauce for dipping.
- Barbecue Rub # 67: After a lot of years of making barbecue rubs, I've used up all the good names, so sometimes I just use numbers now. Numbers 67 and 68 are a little tip of the hat to the band named after my hometown, Chicago. This one is a great all-around rub for the new barbecue cook because it's good on just about everything. Combine all the ingredients in a medium bowl and mix well. The rub may be stored in an airtight container in a cool place for up to 6 months.
CARAMELIZED BAKED CHICKEN LEGS/WINGS
Delicious! Yummy caramelized legs, kids love these! So quick and easy and no marinating required. Just prepare the sauce, pour over the chicken and pop in the oven! - Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
- Place chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper.

- Preheat oven to 350 degrees F.
- Cut off chicken wing tips and snip the skin between the joints. Place in disposable large baking pan. Add the maple syrup, soy sauce, teriyaki sauce, garlic, garlic powder, onion powder, and black pepper, toss to coat.
- Place pan on baking sheet and bake for approximately 1 hours, tossing every 15 to 20 minutes. The liquid will gradually evaporate the longer you cook it.
- After 1 hour, increase the oven temperature to 425 degrees F. Turn wings to coat evenly and cook an additional 45 minutes.
SMOKED JUMBO CHICKEN WINGS
Steps:
- Preheat a smoker to 310 degrees F.
- Stir together the chili powder, paprika, garlic powder, dried parsley, pepper, rosemary, sage, onion powder and salt in a bowl.
- Coat the wings in the rub (save the remainder for another use). Place in the smoker until wings reach an internal temperature of 165 degrees F, about 1 hour 30 minutes.
- Heat oil in a deep-fryer to 350 degrees F.
- Deep-fry wings for 2 to 3 minutes. This makes them crispy on the outside and juicy inside.
- Generously toss wings in Soy Ginger Sauce. Serve Ranch dressing or Alabama sauce on the side to cool the heat from the chiles.
- Blend soy sauce, lime juice, sesame oil, garlic powder, onion powder, ground ginger, garlic and fresh ginger in a food processor. Continue to process, slowly adding olive oil until smooth. Add peppers last, then mix.

Steps:
- Cut wings at joints.
- Preheat oven to 425 degrees.
- Be sure wings are thawed and dry them well with paper towels.
- Combine flour, paprika, garlic salt, black pepper and cayenne pepper in a plastic bag.
- Shake to mix ingredients and add wings.
- Line a large baking sheet with Release foil and melt the butter on it. ( Makes for easy clean up.).
- Add wings to pan and turn to coat.
- Bake for 30 minutes.
