WHOLE ROASTED CAULIFLOWER WITH WHIPPED CHEESE
This whole roasted cauliflower with a salty cheese sauce is the star of any meal!

Steps:
- Fill a large pot with water, wine, 1/3 c olive oil, 1 T salt, lemon juice, butter, red pepper flakes, sugar and bay leaf. Bring to a boil over high heat.
- Trim cauliflower's stem, and add the head to the pot. Turn the heat down to medium and cook for 7 - 10 minutes, or until the bottom is approaching tenderness.
- Preheat oven to 475.
- Gently flip it in the pot and cook for another 5 -8 minutes or until the center is easily pierced with a knife. Gently life the cauliflower from the pot using two large spoons or spatulas. Discard the broth.
- Place the cauliflower in a cast iron skillet or on a rimmed baking sheet and roast for 30 - 40 minutes or until the top becomes golden brown with white cauliflower showing through. Do not let it overcook or it will droop!
- While the cauliflower is in the oven, place your cheeses in a 4 c measuring cup and using an immersion blender, with the heavy cream and 2 T of olive oil, process until the mixture is smooth and light. Stir in 1/2 t of salt or to taste. Set aside at room temperature. Stir in more heavy cream if you want more of a drizzle.
- When cauliflower is finished roasting drizzle with more olive oil and sprinkle with sea salt. Cheese can be placed on the cauliflower or cauliflower can be placed on the cheese. This is great scooped up with fresh bread.

- Combine all Dip ingredients in bowl; beat on medium speed 1 minute or until fluffy and light. Cover and refrigerate. Remove from refrigerator 20 minutes before serving.
- Heat oven to 425°F.

WHOLE ROASTED CAULIFLOWER CHEESE
Steps:
- Heat the oven to 190°C (Gas Mark 5 / 375°F).
- Remove the green leaves from the cauliflower, and cut off the end of the thick stalk, until you're left with just the white head. Wash the cauliflower thoroughly and, once mostly dry, rub it lightly with oil. Place in a baking dish and cover with foil. Bake for around 30 minutes.
- Melt the butter in a small saucepan over a fairly low heat. Add the flour and cook, stirring constantly, for 1 minute. Add the milk a little at a time, stirring until smooth each time before adding more. Allow to cook over a fairly low heat for a couple more minutes, until the sauce has thickened slightly, then add two thirds of the cheese, and mix until smooth. Season with a pinch of nutmeg and plenty of salt and black pepper.
- Remove the cauliflower from the baking dish, and drain away any liquid.
- Pour the cheese sauce into the baking dish, and replace the cauliflower on top. Add more salt and pepper if desired, then place in the oven, uncovered. Roast for a further 30 minutes, until slightly browned on top. Then, sprinkle over the remaining cheese, and return to the oven for 15 more minutes, until the cheese topping has melted and begun to crisp up.

- Prep: Preheat oven to 400°F (204°C). Trim the leaves and tough bottom stem from the cauliflower, being sure to leave the head intact. Whisk together all remaining "Cauliflower" ingredients. Flip the cauliflower upside down and pour half of the mixture into the cauliflower, tilting it around to evenly coat the inside. Brush the remaining marinade onto the outside.
- Bake: Set a pan filled with water in the bottom of the oven, which will steam and tenderize the cauliflower. Place the cauliflower stem side down onto a baking sheet or pan. Bake for 30 to 40 minutes, or until cauliflower is easily pierced with a fork. If cauliflower hasn't become brown on the outside, switch oven to broil and cook for about 5 minutes, watching closely to prevent burning.
- Sauces: While cauliflower cooks, add feta and cream cheese to a food processor and blend until smooth and creamy. Remove from processor, wipe it clean, then blend "Herb Sauce" ingredients until smooth.
- Serve: Place cauliflower on a serving tray. Serve warm, slathered with whipped feta, drizzled with herb sauce, and sprinkled with pine nuts.
