This Simple Cilantro Garlic Sauce recipe is inspired by Pollo Tropical. It only takes seconds to make and you'll want to put it on everything!

8 ounces cream cheese (I implore you to please not use low fat. Pretty please.)
4 tablespoons milk
1 clove garlic (peeled)
1 teaspoon lime juice
1/2 teaspoon salt
1 cup loosely packed cilantro leaves

Steps:

  • Blend all ingredients except cilantro with an immersion blender (or upright blender) until smooth.
  • Add cilantro and continue blending until smooth again.
  • Refrigerate overnight to allow flavors to meld, and ENJOY!

OMG! They're like spanish chicken nachos. Amazing!!! I buy my tostones (green plantains) at my local produce store, but they can be found at any spanish market. They come "pre-cooked /frozen." Do not thaw before frying!

1/2 quart vegetable oil
1 lb green plantain, frozen
3 tablespoons butter
4 boneless skinless chicken breasts, cubed
1 teaspoon cumin
1 tablespoon taco seasoning
2 sweet bell peppers, sliced
1 large onion, chopped
1 cup mushroom, sliced
2 cups mexican cheese, shredded
1 cup salsa

Steps:

  • Heat vegetable oil in fryer or deep skillet over medium high heat until sizzling when a SMALL drop of water is added.
  • Fry frozen tostones in batches of 5 or 6 until crispy and golden. Sprinkle with salt and set aside.
  • In separate skillet heat butter over medium heat. Add chicken, cumin and taco seasoning, stirring occasionally until nearly cooked through.
  • Add in bell peppers, onions and mushrooms. Cover and cook until soft.
  • Stir in cheese until melted.
  • To serve, top 6-7 tostones with chicken mixture. Top with a few spoonfulls of fresh salsa and sour cream if desired.

2 ripe plantains
vegetable oil
sea salt

Steps:

  • Cut plantains diagonally or round; should be about 1/4 inch thick.
  • Drizzle oil into frying pan just enough to coat the bottom of the pan and place on medium heat.
  • When oil begins to shimmer, add plantains (work in batches), and fry for 1½ minutes on one
  • side.
  • Flip and cook for 1½ minute on the other side.
  • Remove plantains from pan and rest on paper towels to dry oil.
  • Remove from paper towels to avoid plantains stick to paper.
  • Continue frying in batches until all the plantains are fried.
  • Sprinkle lightly with sea salt to give a sweet and salt taste to your Fried Ripe Plantains.
