2 pollo s enteros (3-1/2 lb cada uno)
2 limones amarillos (lemons) pequeños, cortados por la mitad
1 taza de salsa para asar original KRAFT Original Barbecue Sauce
1 cucharadita de sazón italiana
4 dientes de ajo, pelados

Steps:

  • Calienta la parrilla para cocinar a fuego indirecto: enciende un lado de la parrilla, dejando el otro lado sin encender. Ponle la tapa; calienta la parrilla a 350ºF.
  • Recorta y desecha el exceso de grasa de los pollos. Exprime el jugo de los limones en un tazón pequeño. Reserva las mitades de limón para usarlas después. Añade la salsa para asar y la sazón al jugo de limón; mezcla bien todo. Coloca 2 mitades de limón y 2 dientes de ajo dentro de la cavidad de cada pollo.
  • Coloca en el lado de la parrilla que no está encendido, los pollos con la pechuga hacia arriba. Cierra la tapa de la parrilla. Ásalos de 1-1/2 a 2 horas o hasta que se cocinen (temperatura interna de 165ºF); durante los últimos 20 min. a la parrilla, voltea los pollos y pincélalos de vez en cuando con la mezcla de salsa para asar. Antes de servir, saca de las cavidades de los pollos las mitades de limón y los dientes de ajo y deséchalos.

One of my favorite things to make is Arrachera (which I have my personal recipe for on here) but I threw a party once that some of the guests don't eat beef so I wanted to make a Chicken option so I made this up. I love mangos so I thought by marinading the meat in mango nectar and lime juice it would give the meat a nice flavor and I was right! I hope you like it.

2 lbs boneless skinless chicken breasts
1 whole white onion, sliced into rings
4 -6 garlic cloves, peeled and chopped
adobo seasoning
cumin
pico de gallo
mango nectar
lime juice

Steps:

  • For steak tacos I have the steak run through a machine so it is flat. I haven't tried pounding the chicken flat when making this but I think it may work better. Consider this an optional step, as every time I've made it without pounding it, it still comes out fantastic but it takes a while to cook. Maybe split breasts would be good.
  • Season meat by sprinkling with Adobo, Cumin, and Pico de Gallo seasoning. I like to use the adobo that has cumin in it and if you choose to go this route, you don't need to use any extra cumin. If you like spicy food use more pico seasoning, if you like mild use a smaller amount.
  • Rub seasoning into meat thoroughly.
  • Layer meat, onions, and garlic in a deep pan or bowl. I have also begun layering lime slices along with it.
  • Pour mango nectar and lime juice over meat so that the liquid just covers the top of the meat. I use about a 3 part mango nectar, 1 part lime juice mix.
  • Let sit for several hours or over night.
  • Cook on hot grill.
  • Serve with warm tortillas and desired taco toppings.
  • An alternate cooking method:.
  • I had the guy at the meat counter cut up the chicken into taco meat, if you shop at a hispanic grocery store they'll know exactly what you mean if you ask them to cut it for tacos but basically its just cutting it into small chunks. I still marinaded everything the same way, rubbing the seasonings into the meat is more difficult but still doable. Instead of grilling the meat however, after everything marinaded I put the whole mixture, marinade and all in a slow cooker. I wouldn't use lime slices in the marinade for this though so you won't have to pick them out.

  • Using a blender or food processor, purée garlic, orange juice, lime juice, cumin, oregano, black pepper, allspice (if using), and 2 teaspoons kosher salt until smooth.
  • If using chicken breast halves, cut into cutlets following our instructions here, pounding to an even thickness of about 1/4 inch (if desired, you can butterfly the breast halves by not fully cutting all the way through, so that they open like a book; butterflied breasts also need to be pounded to an even thickness).
  • Place chicken cutlets in a large zipper-lock bag or shallow baking or glass storage dish. Add marinade, making sure it coats chicken evenly all over. Press out excess air and seal zipper-lock bag, or cover dish with plastic or a lid.
  • Remove the chicken breasts from the marinade and wipe off any excess. In a stainless steel skillet, heat oil over medium-high heat until shimmering. Working in batches if necessary to prevent crowding the pan, add the chicken cutlets and cook until golden brown on each side, 2 to 3 minutes per side.
  • In the same skillet that you cooked the chicken, add more oil if the pan is dry and heat over medium-high heat until shimmering. Add the onion rings, season with salt, and sauté until the onions have softened a bit and started to brown, 7 to 10 minutes; lower heat and/or add a small splash of water if the contents of the pan threaten to burn.
