- Chill the curd and water in the refrigerator. If you want to use saffron, soak it in 2 tbsps hot milk and let it rest for sometime.

Scented yoghurt drink from India. Great served with curries. Very smooth and refreshing in a hot climate. It has a very cooling effect on the mouth. You can make mango lhassi by blending in mango pieces with the yogurt or try it with different fruits or spices.

Traditionally lassi is unsweetened and has a pinch of salt and some spices mixed in. More recently, sweetened fruit lassis have become very popular drinks, both in India and around the world."

- 1.Place all ingredients except the ice cubes in a blender and blend until smooth.
- 2.One by one, add the ice cubes and blend further until they are broken down into a slush.
- 3.Serve in a tall, cold glass on a hot, hot day.
- Variations.
- •Plain Lassi: eliminate the sugar, fruit and rosewater. Substitute a pinch of salt and some toasted cumin seeds.
- •Bhang Lassi: a traditional lassi with cannabis extract and ground almonds. Used in the religious festival of Holi.
- •Good fruit choices are mangoes, papayas, strawberries and melons. Or try using lemon or lime juice. You can use anything you like really.
- •Add a pinch of ground cardamom, a few strands of saffron or some chopped mint if you like.

- Combine the yoghurt, cumin and salt in a deep bowl and beat vigorously with a whisk or spoon until the mixture is smooth. Beating constantly, pour in the ice water in a slow, thin stream and continue to beat until all the ingredients are well blended.
- Taste for seasoning. (A quicker, though hardly traditional, method is to combine the yoghurt, cumin, salt and ice water in the jar of a blender and blend on high speed for 1 minute, or until the mixture is smooth.).
- Pour the lassi into a chilled pitcher and serve it from chilled tumblers. If you like, you may prepare the drink ahead of time and keep it chilled in the refrigerator until ready to serve.
