SWEET MUNG BEAN SOUP
A classic Cantonese green mung bean soup is a sweet dessert that can serve as warm or chill. This instant pot sweet mung bean soup recipe is easy and delicious! No need to presoak beans to make this authentic Chinese mung bean soup.

Steps:
- First, wash and soak 1/4 cup of dried seaweeds for a couple minutes.
- Then, wash 1 cup of green mung beans and put them into instant pot.
- After that, add 5 cups of water into pressure cooker.
- Add the soaked seaweeds into the instant pot. Close the lid and vent. Push manual button and adjust time to 45 minutes at high pressure. Then, quick release pressure.
- Put 3/4 cups of brown sugar. (You can add more sugar to your taste.) Mix them well. It's ready to serve as warm or refrigerate them to serve as cold.

SWEET GREEN (MUNG) BEAN SOUP
A perfect dessert for an Oriental meal. Sometimes i just drink it as a snack. Very fragrant due to the coconut milk. I've even poured it into a popsicle mold and ended up with a sweet bean popsicle! Refreshing and low in fat (without the coconut, anyway *grin*)!

Steps:
- Wash the beans, drain.
- Put beans in saucepan with lid, cover with water.
- Cover with lid, simmer for about 15 minutes over low heat.
- Add pandan leaves (tie them into a knot for easy removal later), continue to simmer for another 15 minutes.
- After the beans are very soft and some are split, turn off heat and remove leaves Add sugar (do taste before adding too much).
- Just before serving, add the coconut milk.
- Serve hot.

- Wash and soak the Mung Dal for an hour.
- In a deep pan, add the drained dal and 3 cups water, salt and turmeric. Cover and cook on low-medium heat until dal mashes easily. 20-25 minutes.
- Or pressure cook on medium for 1 whistle ( 6 minutes at high pressure). Let the pressure release on its own . The dal in the pictures is pressure cooked hence well mashed.
- Once the beans are cooked, In a small pan, add the oil and heat on medium-high heat.
- Add mustard seeds and let them start to sputter. Reduce heat to low medium.
- Add the garlic, chili and asafetida-hing. (If you have an electric stove the temperature won't immediately come down, and garlic can burn, so wait for a minute or take pan off the stove to reduce the heat of the pan, then add garlic and chili)
- Cook until the garlic and chili have brown edges.
- Drop this tadka into the cooked dal, mix just lightly so a good portion of the tempering stays on top of the dal. and serve hot.

- Place mung beans into a large container and cover with several inches of cool water; let soak, 8 hours to overnight. Drain and rinse the beans.
- Heat a Dutch oven over medium heat and add the olive oil. Stir in onion, carrots, and celery; cook until slightly soft, about 5 minutes. Increase heat to high and add the beans, chicken broth, water, ham bone, garlic cloves, garlic powder, and onion powder. Bring to a boil. Reduce heat to low; simmer, stirring occasionally, until beans are soft, about 45 minutes.
- Take ham bone out of the pot and remove any meat still on the bone; return meat to the pot.
