2 lbs country-style pork ribs
1 medium onion, chopped
1 tablespoon cooking oil
1 (14 ounce) can German-style sweet sauerkraut
1 cup applesauce
2 tablespoons brown sugar
2 teaspoons caraway seeds, more to taste
1 teaspoon garlic powder
1/2 teaspoon pepper

Steps:

  • In a dutch oven, cook ribs and onion till ribs are browned and onion is tender.
  • Remove from heat.
  • Combine remaining ingredients and pour over ribs.
  • Cover and bake in oven 350 deg for 1 1/2-2hrs or until ribs tender, or place in Nesco or crock pot and cook on low 8 hours.

1 lean pork roast, about 4 to 5 lb
1 cup water
1 teaspoon ground black pepper
1 (15 ounce) can sauerkraut
1/2 cup applesauce
1/4 cup brown sugar

Steps:

  • Preparation -.
  • Place the pork roast in a Dutch oven or other large, deep, heavy pan. Add about 1 cup water and black pepper. Cover and cook over low heat for about 2 hours. Mix the sauerkraut, applesauce and brown sugar together. Pour the mixture in to the pan, over the pork roast. Cover and simmer for about 1 to 1-1/2 hours longer or until the pork is tender and falling apart.
  • This can also be roasted in the oven, in a covered roasting pan. Set the oven temperature to 350º and roast for about 2 hours. Add the sauerkraut and other ingredients, lower the oven temperature to about 300º, and roast for an additional 1 to 1-1/2 hours. This is also a good crockpot meal. Just add all the ingredients at once and cook on the low setting for about 7 hours.

8 center cut pork chops
2 pounds sauerkraut, drained
1 large red apple, diced
1 onion, chopped
1 cup brown sugar
1 tablespoon caraway seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.
  • Mix the sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl until well combined, and spread the sauerkraut mixture over the pork chops. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the pork is no longer pink inside, about 45 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

It's a feel-good and flavorsome ritual and it may be just what you need to start the New Year. Serve with mashed potatoes or dumplings.

1 (3 pound) pork roast
salt and ground black pepper to taste
2 (14.5 ounce) cans sauerkraut, or to taste
3 cups water, or more as needed
1 onion, chopped
1 apple - peeled, cored, and finely chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place pork roast in a large roasting pan. Season with salt and black pepper. Mix sauerkraut, water, onion, and apple together in a large bowl. Pour sauerkraut mixture over roast.
  • Bake roast in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 300 degrees F (150 degrees C). Continue to cook roast until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), adding water if sauerkraut mixture looks dry, about 2 hours more.
  • Remove roast from oven and allow to rest in a warm area before slicing, about 10 minutes.

4 pork chops
1 lb sauerkraut
1 glass wine, white
1 cup water
2 teaspoons juniper berries
1 teaspoon caraway seed (optional)
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons flour
2 tablespoons sunflower oil

Steps:

  • Dry the pork chops. Salt and pepper them, then dredge them in flour.
  • In a medium hot, seasoned cast iron skillet (or pan you can use on top of the stove and in the oven), brown the chops. Remove them to a dish.
  • Add the sauerkraut to the pan and stir up the meat juices into it. Add the wine and water, and the juniper berries. (You may use all wine or all water!) The liquid should just come to the surface of the kraut, or just under. Sprinkle on some salt and pepper. Add the optional caraway, if you like. Using a fork, quickly blend everything.
  • Bury the pork chops back into the sauerkraut. Cook in a 325 F oven for 40 minutes. Lift out the chops; check the liquid level. Add more liquid if little remains; you don't want the kraut to dry out and burn the pan its final 20 minutes in the oven.
  • Arrange the chops on top of the sauerkraut. Return the dish to the oven and cook another 20 minutes. At the end of cooking, little liquid should remain to transfer to your dinner plate. The pork should have browned again. If the kraut should become dry, cover with foil to avoid scorching.
  • Serve with boiled or mashed potatoes and a green vegetable. You can make this during the final 20 minutes the pork chops cook.
  • *note: if using a very salty, brined sauerkraut, you must rinse it several times.

2 lbs sauerkraut, well rinsed and squeezed dry
3 onions, peeled and sliced
1 onion, stuck with
2 whole cloves
2 apples, peeled, cored and sliced
3 ounces pork drippings or 3 ounces bacon drippings
8 ounces stock (See *) or 8 ounces water (See *)
1 bay leaf
3 juniper berries
1/4-1/2 teaspoon salt, to taste
1/4-1/2 teaspoon sugar, to taste
1 large potato, peeled and grated (or corn flour)
1/4 lb lean bacon (optional) or 1/4 lb pork (optional)
fresh ground black pepper

Steps:

  • In a large pot or Dutch oven, heat the drippings.
  • Add the sliced onions and apples, cooking until onions get transparent, but not colored.
  • Add the sauerkraut.
  • Add the stock or water, and the onion with the cloves, bay leaf, juniper berries, salt and sugar.
  • Cover pot, and cook over low heat for about 45 minutes.
  • *Ifwater has been used instead of stock, add a piece of lean bacon or pork to the cabbage to improve the flavor.
  • When the cabbage is done (after about 45 minutes), thicken the mixture with the grated potato (or corn flour mixed with water).
  • Remove the bacon/pork from the sauerkraut and season with salt and freshly ground pepper to taste.

This is the famous Bavarian Pork Roast. Juicy and very very tender with a fantastic sauce. Traditionally served with potato dumplings and sauerkraut. The recipe reads very lengthy but in fact is very simple and easy to make.

5 lbs pork roast (deboned shoulder roast)
1/4 cup Dijon mustard
1/4 teaspoon caraway seed, ground
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 dash ground paprika
1/4 teaspoon celery powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
2 medium onions, with skin, quartered
2 medium carrots, diced
1/4 cup leek, diced
1 1/2 cups vegetable broth

Steps:

  • wash and pat dry roast.
  • mix all dry ingredients together and rub onto roast.
  • spread a liberal amount of mustard onto roast.
  • heat oil in a heavy roasting pan (enameled cast iron works well) on top of stove and brown carrots and leeks.
  • push vegetables aside and brown roast from all sides in the very very hot roasting pan.
  • ad onions INCLUDING the brown skins (this is VERY IMPORTANT since it will give your gravy an good color).
  • ad broth and transfer everything to the oven.
  • roast covered for 1 1/2 hours at 350°F.
  • uncover, stir onions and veggies.
  • turn roast over and roast uncovered for 1 hour (if liquid evaporates a lot, add some more occasionally.
  • once roasting time has finished transfer meat to a plate to rest.
  • take a basting brush, dip into the hot liquid and scrub all the sides of the roasting pan (and the lid if necessary). All the brown stains on the walls of your pan will ad flavor and color to your sauce!
  • strain all the liquid through a fine meshed strainer (stainless steel will work better then the plastic ones). Press solids vigorously with a spoon to press as much liquid (as well all solids that can get pressed through) through the strainer into a sauce pan and reduce slightly on high heat.
  • Slice roast into 1/2 thick slices and pour gravy liberally over everthing.
  • Best served with potato dumplings and sauerkraut.

Deutsche Style Pork & Sauerkraut image

A delicious and flavorful German main dish. Leftovers can be used for making Reuben sandwiches and potato pancakes. The reserved bones can be used for making stock.

2 1/2 lbs baby back ribs
1 1/2 lbs smoked pork chops
1 lb pork kielbasa or 1 lb bratwurst
4 (14 ounce) cans sauerkraut (ensure that the sauerkraut is natural without any added vinegar, sugar, spices)
1 cup water
1 large bay leaf
8 whole black peppercorns
5 lbs potatoes, peeled and boiled

Steps:

  • Remove the membrane (stomach lining) from the ribs and cut off excessive fat. Rinse under cold running water and pat dry with paper towels. Season the ribs with garlic powder, salt and pepper and place on a rack in a baking pan. Bake in a preheated 400 degree oven for 40 minutes or till the ribs are nicely browned.
  • Meanwhile, slice the kielbasa into 3" pieces then slice each piece lengthwise. Or cut the bratwursts in half crosswise then slice them lengthwise. Spray a large skillet with vegetable oil and brown the cut side of the meat slices in a skillet over medium heat till lightly browned. Remove the meat from the skillet and set the meat aside on a plate.
  • When the ribs are done, cut into single rib portions and place into an 8 quart stockpot. Add the peppercorns and the ribs to the pot.
  • Cut off any fat from the smoked pork chops and place into the stockpot.
  • Add the bay leaf and the peppercorns to the stockpot. Add the prepared kielbasa or bratwurst, un-drained sauerkraut and water to the stockpot. Bring to a boil, lower the heat to low, cover and simmer for about 1 hour. Remove the bay leaf and the peppercorns from the pot and discard them before serving the pork & kraut.
  • Meanwhile, peel the potatoes and boil in salted water till fork tender.
  • Cut the meat from the smoked pork chops, cut the meat into bite sized pieces, return the meat to the pot and reserve the bones for making pork stock in the future.
  • Serve with boiled potatoes. My Deutsche family smashes the potatoes on one side of their plates with a fork then they smear some butter over the potatoes. Follow with topping the potatoes with some kraut and kraut juice and placing some meat on the vacant side of their plates. Refrigerate any leftover pork and kraut in a sealable plastic storage bag. Reserve and refrigerate any leftover potatoes in a sealable plastic storage bag for making potato pancakes.
