2 large onions (sliced thin)
2 large tomatoes (diced)
2 tablespoons garlic paste
1 tablespoon ginger paste
2 teaspoons garam masala powder
2 teaspoons coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chile powder
Salt (to taste)
2 pounds goat or sheep leg (cut into bite-sized chunks)
Garnish: fresh coriander (cilantro; chopped)

Steps:

  • When the meat is cooked and the sauce has thickened, garnish with chopped coriander and serve hot.

1 kilograms mutton
1 cup onion chopped
1 teaspoon garlic
2 teaspoon ginger
1 teaspoon cumin powder
3 teaspoon coriander powder
0 As required salt
1 teaspoon black pepper
1 teaspoon garam masala powder
1/4 cup mustard oil
1/4 cup ghee
1 inches cinnamon
2 Numbers bay leaf
4 Numbers clove
2 Numbers black cardamom
2 Numbers green cardamom
1 teaspoon ginger paste
1 teaspoon garlic paste
4 teaspoon yoghurt (curd)
1 teaspoon salt
2 teaspoon mustard oil
2 teaspoon turmeric
1/2 teaspoon turmeric

Steps:

  • Wash the mutton pieces (chopped into cubes) in running water. Keep aside to drain. When the water has almost dried, add the marinade ingredients. Mix well using your hands, rubbing the spices into the meat. Marinate for 1-2 hours.
  • Now take a heavy-bottomed pan and heat. One with a tight lid is preferred. Add oil and ghee. When smoke starts coming out of it, add the whole spices. Add a pinch of sugar. It gives an amazing colour to the mutton.
  • Add the chopped onions and cook on low flame for 10 minutes. At this point, you can add the salt. This increases the cooking process of onion. When the onions turn translucent, reduce the heat and wait for them to turn pink. Add turmeric and mix well. You can add turmeric at a later stage also, but adding it in the beginning of the recipe helps you get rid of that raw smell of the spice.
  • Now add the marinated mutton, ginger garlic paste and cook on high flame for 5-7 minutes, stirring continuously. It is advisable to use homemade ginger-garlic paste as the store bought one has high preservatives and it impacts the taste of mutton. At this point you can pressure cook the mutton. After 3 whistles you must open the lid to check if the mutton is done. If not, cook for 1-2 more whistles. Do not add water while pressure cooking. Alternately, you can slow cook as suggested below.
  • Cover the lid of the vessel, lower the flame and allow it to simmer. When the mutton is almost done, add coriander, cumin, black pepper and mix well.
  • Cook uncovered till oil starts separating from the meat. Add a cup of water, garam masala powder and cook uncovered till oil floats on top. Transfer the mutton curry into a bowl, adjust seasoning, garnish with ginger juliennes, coriander leaves and serve hot with steamed rice or chapatti.
  • To make the mutton pieces soft and tender, you can wash and soak the pieces in some lukewarm water, rinse properly and then marinate it with the spices and keep it aside for two hours. This makes the mutton pieces juicy and succulent as the spices are fully absorbed.

I first tried this curry in a restaurant in Bangalore. I loved it so much that I asked all my friends if they knew anyone from Mangalore who could share the recipe with me. Finally, one of my friends came through. Below is an adaptation of her mother's recipe. If you like peppery curries and tamarind, you are sure going to love this style of curry. Serve with steamed plain rice or with chapati.

1 teaspoon vegetable oil
15 whole black peppercorns
1 tablespoon white poppy seeds (khus khus)
4 whole cloves (lavang)
1 cinnamon stick (dalchini)
4 dried red chile peppers
1 teaspoon cumin seeds (jeera)
1 pod black cardamom (badi elaichi)
½ cup grated coconut
3 large onions, quartered
6 cloves garlic
1 (1 1/2 inch) piece ginger root, peeled
2 tablespoons vegetable oil
2 large tomatoes, pureed
1 teaspoon ground turmeric (haldi)
salt to taste
1 pound boneless lamb, cut into small pieces
½ pound potatoes, quartered
1 cup water
1 tablespoon tamarind paste
1 teaspoon white sugar
¼ cup fresh cilantro leaves, or to taste

Steps:

  • Heat 1 teaspoon vegetable oil in a small skillet over medium heat. Add peppercorns, poppy seeds, cloves, cinnamon stick, dried chile peppers, cumin seeds, and black cardamom; toast until fragrant, 2 to 3 minutes. Transfer to a spice grinder, add grated coconut, and grind into a paste.
  • Combine onions, garlic, and ginger in a food processor; grind into a paste.
  • Heat 2 tablespoons vegetable oil in a stovetop pressure cooker. Add onion paste; cook and stir until golden brown, about 5 minutes. Pour in pureed tomatoes; cook and stir until darkened, 4 to 5 minutes. Stir in turmeric and salt. Add lamb; cook and stir until evenly coated and starting to release some juices, about 10 minutes.
  • Stir coconut paste, potatoes, water, tamarind paste, and sugar into the pressure cooker. Bring to a boil. Cover, bring to high pressure according to manufacturer's instructions, and cook, about 10 minutes. Reduce heat and continue cooking, about 15 minutes more.
  • Release pressure according to manufacturer's instructions. Serve curry garnished with cilantro leaves.

2 lbs mutton, cubed
3 onions, chopped
1/2 bunch parsley, chopped
1/2 bunch cilantro, chopped
1 garlic clove, minced
1 teaspoon salt
1/2 lb carrot, sliced
2 tablespoons curry powder
2 teaspoons allspice
1 teaspoon sugar
2 tablespoons tomato ketchup
1 tablespoon vegetable oil

Steps:

  • Fry mutton, onions, and garlic in oil to which was added the curry powder.
  • Once mutton is lightly browned and the onions are clear, add the rest of the ingredients except the carrots. Add enough water to cover and simmer for 1 1/2 hours.
  • Add the carrots and simmer til carrots are tender.
  • Serve with rice and fresh fruit salad.

Steps:

  • Heat the oil in a heavy bottomed pan and add the bay leaves,cloves,cardamoms,cinnamon sticks,chopped onions and fry them until the onions are translucent.
  • Add the ginger and garlic pastes and fry until its fragrant.
  • Now add all other spices and 2 cups of water and mix everything well.
  • Simmer it until the oil floats on top and the gravy thickens.
  • Now add the mutton/beef pieces and cover them with the spices.
  • Cook until the meat is tender and the gravy is thick. You can always add water if it's needed.
  • Serve with plain white rice and tomato salsa -- !
