POLISH PORK WITH SAUERKRAUT



Polish Pork with Sauerkraut image

A hearty and delicious, cold-weather dish, pork and sauerkraut!

Number Of Ingredients 10

2 - 2 1/2 pounds pork roast or chops
salt, pepper, and sweet paprika to season the pork
2 pounds sauerkraut (Preferably natural, fermented in brine. If you're using canned kraut, drain and rinse.)
1 tablespoon Vegeta (or 1 teaspoon salt, 1/2 teaspoon garlic powder, 1/4 teaspoon turmeric)
2 bay leaves
1/4 teaspoon black pepper
3 whole allspice berries
1 medium onion, diced
1/4 cup oil, divided
2 - 4 carrots, peeled and shredded

Steps:

  • If you're using a roast, slice it into 3/4-inch thick pieces and season with salt, pepper, and paprika. Put in a sealed container and marinate for 2 hours.
  • Preheat oven to 350° F.
  • Add the sauerkraut to a pot and cover with water. Bring to a boil. Remove from heat and drain. Add to the pot with the sauerkraut: 2 cups of water, Vegeta (or substitute spices), bay leaves, 1/4 teaspoon black pepper, and allspice. Simmer for 30 minutes.
  • Meanwhile, saute the onion in 1 tablespoon oil over medium-high heat until it just begins to brown. Add the onion and the carrot to the sauerkraut.
  • Add 2 tablespoon oil to a frying pan and brown the meat on both sides. Add an additional tablespoon of oil if needed.
  • Place half of the sauerkraut mixture in a casserole dish (I used 9 x 13-inch). Place the meat on top of the kraut, and top the meat with the remaining sauerkraut. Cover (with foil if your dish doesn't have a lid). bake for 90 minutes.

This is the smell of Cleveland in late fall. Show up at the Municipal Parking Lot to tailgate before any home football game and you'll see a million variations on the theme of pork, kraut, and beer. The hoppy beer-I like Commodore Perry IPA from Great Lakes Brewing- deglazes the pan and makes a great sauce for the chops. Go Browns!

1 teaspoon paprika
1/2 teaspoon coriander seeds, toasted and ground
Kosher salt and freshly ground black pepper
Four 4-ounce boneless pork chops, each 1/4-inch thick
3 tablespoons olive oil
2 cups thinly sliced red onions
1 cup sauerkraut
1 cup IPA-style beer
1/3 cup fresh flat-leaf parsley leaves, chopped
Put a large skillet over high heat.
Whole grain mustard, for serving

Steps:

  • Combine the paprika, coriander, 1 teaspoon salt and black pepper to taste in a small bowl. Season both sides of the pork with this spice mixture.
  • Add the oil to the preheated skillet. Add the pork in a single layer in the pan. Cook, without moving, until lightly golden brown, about 1 minute. Flip the meat and scoot to the outer edges of the pan. To the open space in the middle, add the onions and a pinch of salt. Cook for 2 minutes, stirring the onions occasionally.
  • Add the sauerkraut and continue cooking until the onions have softened and the sauerkraut turns golden brown, about 1 1/2 minutes. Add the beer and deglaze the pan, scraping with a wooden spoon to get up the browned bits on the bottom of the pan. Cook until the sauce reduces slightly, about 30 seconds.
  • Remove from the heat and stir in the parsley. Serve the pork chops topped with the sauerkraut mixture, any accumulated juices and mustard.

3 tablespoons canola oil
6 pork loin chops
1 large onion, finely chopped
1 clove garlic, minced
salt and pepper
2 lbs sauerkraut
1 bay leaf
1/2 pint chicken stock
1 large Red Delicious apple
1 teaspoon cumin seed

Steps:

  • In a large heavy skillet heat oil to medium high and brown the chops on both sides.
  • Remove from pan.
  • To the pan add the onions and garlic.
  • Reduce heat to medium and cook onions until translucent.
  • Season with salt and pepper.
  • Add the bay leaf and the drained sauerkraut.
  • Arrange chops on top.
  • Pour the stock over top, bring to a slow boil and cook for 15 minutes.
  • Peel, core and dice the apple.
  • Add to the pan with the cumin seeds and stir well, simmering for another 15 minutes.
  • Test for doneness.
  • Remove bay leaf and serve.

It's a feel-good and flavorsome ritual and it may be just what you need to start the New Year. Serve with mashed potatoes or dumplings.

1 (3 pound) pork roast
salt and ground black pepper to taste
2 (14.5 ounce) cans sauerkraut, or to taste
3 cups water, or more as needed
1 onion, chopped
1 apple - peeled, cored, and finely chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place pork roast in a large roasting pan. Season with salt and black pepper. Mix sauerkraut, water, onion, and apple together in a large bowl. Pour sauerkraut mixture over roast.
  • Bake roast in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 300 degrees F (150 degrees C). Continue to cook roast until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), adding water if sauerkraut mixture looks dry, about 2 hours more.
  • Remove roast from oven and allow to rest in a warm area before slicing, about 10 minutes.

POLISH PORK TENDERLOIN IN APPLE-ONION SAUCE & SAUERKRAUT



Polish Pork Tenderloin in Apple-Onion Sauce & Sauerkraut image

Made this for Easter with fresh pork from a local farm. ABSOLUTELY delicious and tender. Very unfussy, great for everyday. I use Polish Grill Seasoning but you can use any seasoning or make your own with any combo such as 1 tsp. each of marjoram, garlic powder, onion powder and paprika.

1 lb pork tenderloin
salt & pepper
1 tablespoon pork seasoning
flour, to coat
1 tablespoon oil, fat or 1 tablespoon butter
8 ounces sauerkraut
onion soup mix, 1/2 packet
1 cup applesauce or 2 apples
1 teaspoon brown sugar
1/4 teaspoon ginger
1/2 cup apple juice, separated in half

Steps:

  • *If using fresh apples, peel, core and dice the apples. Simmer in a little apple juice or water, covered until soft. Mash with a potato masher and you have easy, fresh, homemade applesauce!
  • Pat pork loin dry. Season generously on both sides with salt & pepper and then with the pork seasoning. Let sit for 15-30 minutes at room temperature
  • Sprinkle the roast on both sides with flour to coat.
  • Preheat oven to 325.
  • Heat oil or butter over medium-high heat, add loin and brown on all sides.
  • Add undrained sauerkraut to an oven dish and place loin on top.
  • Add applesauce, onion soup mix, brown sugar and ginger to the skillet used to cook the pork. Mix well and spoon over the top of the pork.
  • Pour 1/4 cup of the apple juice to the bottom of the pan, over the sauerkraut.
  • Cover dish with foil and bake for 30 minutes, basting halfway through.
  • After 30 minutes, remove foil, add the other 1/4 cup of apple juice, baste again and cook for 15 more minutes, uncovered.
  • Remove from oven and let pork sit for 10-15 minutes before slicing.
  • Slice and serve over the sauerkraut.

This is a fantastic way to prepare pork chops. I've been doing it for years. For the apples, I usually use Granny Smiths, but you can use any apple that you'd normally eat on its own. DON'T use a cooking apple. You need a sweeter apple to balance with the sauerkraut.

2 tablespoons butter
6 pork loin chops
1 large onion, peeled and finely chopped
2 garlic cloves, peeled and crushed
2 lbs sauerkraut
1 bay leaf
1 cup chicken broth
1 large sweet apple, peeled, cored, and diced
1 teaspoon cumin
salt and black pepper, to taste

Steps:

  • Melt the butter in a flameproof casserole dish, and fry the chops till browned on both sides. Remove from pan and set aside.
  • Add onion and garlic to the dish and fry till transparent.
  • Season with salt and pepper, add the sauerkraut and the bay leaf, and then arrange the pork chops on top.
  • Pour in the chicken broth. Bring to a boil, then lower the heat and allow to simmer for about 15 minutes.
  • Add apple and cumin. Stir well and simmer for another 15 minutes. Adjust seasoning and serve.
