1 cup all-purpose flour
1 tablespoon sugar, optional
1/2 teaspoon salt
1 large egg, room temperature
1 cup fat-free milk
1 tablespoon canola oil
5 medium apples, peeled and thinly sliced
Confectioners' sugar, optional

Steps:

  • In a bowl, combine flour, sugar if desired and salt. In another bowl, lightly beat egg; add milk and oil. Add to dry ingredients and stir until smooth. Fold in apples. , Pour batter by 1/2 cupfuls onto a lightly greased hot griddle and spread to form a 5-in. circle. Turn when bubbles form. Cook the second side until golden brown and apples are tender. Sprinkle with confectioners' sugar if desired.

This traditional spiced cake is served with a cinnamon whipped cream and a dusting of icing sugar

half a lemon
6 large Bramley or cooking apples
4 tbsp soft brown sugar
1 tbsp ground cinnamon
450g plain flour , plus extra for dusting
1 tsp baking powder
200g unsalted butter , cut into pieces, plus extra for greasing
225g golden caster sugar
3 egg yolks , plus 1 whole egg, at room temperature
1 tbsp natural yogurt
1 tbsp lemon zest (from the half a lemon, above)
1 tsp vanilla extract
icing sugar , for dusting
300ml pot whipping cream
1 tsp cinnamon

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line a 20 x 29cm baking tray with baking parchment.
  • For the filling, zest the lemon half and leave aside for the dough. Peel, core and thinly slice the apples, then squeeze over the juice of the lemon to stop the fruit turning brown. Put the apples in a large pan and add the sugar, 200ml water and cinnamon. Cook for 5 mins, then remove from the heat and leave to cool in the liquid (you'll need this later).
  • To make the dough, put the flour and baking powder in a food processor or into a large bowl and pulse or stir to combine. Add the butter and mix again until the mixture is sandy. Add the sugar, egg yolks and egg, yogurt, lemon zest and vanilla extract and mix into a dough. Tip it out onto a floured surface. Bring it together with your hands and roll it into a ball.
  • Split the dough in half, wrap one half in cling film and freeze for 1 hr. Roll out the other dough half so that it is big enough to fill the bottom of the lined tray. With the palm of your hand, push the dough about halfway up the sides of the tray until the whole base is covered. Prick the dough with a fork and bake in the oven for about 15 mins until it is golden and lightly springy to the touch.
  • Spoon over the apple filling, with about half the cooking liquid, then set aside.
  • Remove the dough from the freezer and coarsely grate, as you would a block of cheese. Sprinkle the grated dough over the apples and bake for 40-45 mins until it is golden and the topping has cooked through. Leave to cool completely, dust with icing sugar, then cut into squares. Whip the cream until thick, stir in the cinnamon and serve alongside the cake.

This is my take on the Polish apple pancake. I sometimes add two diced peaches to the batter rather than the apples. Sometimes I also simply fry these plain (leave the fruit out of the batter) and spoon some warm home-made apple, strawberry or peach sauce over these when served at the table. My kids like them with just powdered sugar on top.

1 cup all-purpose flour
1 pinch salt
2 teaspoons baking powder
2 tablespoons sugar
1 cup skim milk
2 eggs
2 apples, medium
5 tablespoons oil, for frying (I use canola)
100 ml non-fat vanilla yogurt

Steps:

  • Whisk all dry ingredients in a bowl to combine.
  • Add milk and eggs, mix well (using whisk).
  • ** If frying just plain pancakes (no fruit in batter), add the vanilla yogurt and mix well. If adding apple or peach into batter, omit the yogurt.
  • Add thinly sliced or grated apple to the batter, mix well (I usually grate the apple on the largest openings of grater).
  • Let the batter rest 20 minutes.
  • Spoon by heaping tablespoons onto hot oil on a pan to fry - or on griddle.
  • Fry over medium-high heat.
  • Once bubbles have appeared on top of pancakes and some have burst, turn pancakes over. Fry for approximately one more minute or until golden brown.
  • Remove pancakes onto a paper towel lined plate to drain off any excess oil before serving.
  • Serve warm with powdered sugar as garnish.

These are really similar to the pancakes/crepes that I had for the first time last week on a studytour in Russia. They can be dessert or breakfast or whatever. There were a lot of options for fillings, mostly it looked like different flavors of jam, but I don't like fruit so I had mine plain there and found this recipe for a cheese filling when I got back home.

225 g flour
1 egg
3 eggs, separated
300 ml milk
300 ml water
1 tablespoon oil
1 pinch nutmeg
1 teaspoon salt
25 g butter (for greasing the pan)
25 g butter
1 egg yolk
250 g cottage cheese
sugar (I would use about a tablespoon and a half.)
1 pinch vanilla sugar
milk

Steps:

  • Batter: Sift the flour into a large bowl.
  • Add the egg and the egg yolks from the separated eggs.
  • Add the milk, water, oil and nutmeg and mix thoroughly.
  • Whisk the egg whites together with the salt until stiff, and fold into the batter.
  • Filling: Cream the butter with the egg yolk and mix together with the cheese.
  • Add the sugar and vanilla sugar.
  • Mix well.
  • If the mixture is too stiff, add a little bit of milk.
  • Putting It Together: Melt some of the butter over medium heat in a small frying pan.
  • When it's hot, pour in about 2tbs of batter and cook on both sides until lightly browned.
  • Remove from pan and keep warm in the oven at low heat.
  • Repeat until all of the batter is used.
  • Put a tablespoonful of filling on each pancake, fold over and serve hot.

Steps:

  • Combine milk, flour, eggs, sugar, cinnamon, baking soda, and salt in a large bowl; beat with an electric mixer until smooth and creamy. Mix in apples.
  • Heat 1 tablespoon oil in a skillet over medium-high heat. Drop batter by large spoonfuls into the pan and cook until the edges are dry and the bottom is browned, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
