This elegant Asian pear recipe takes mere minutes to prepare. It does most of the work itself while it sits. For dessert, serve by itself, over ice cream, or topped with whipped cream. For breakfast, it's great over yogurt with or without granola, or over oatmeal.

2 medium Asian pears (about 1 pound/454 grams total)
2 cups (475 ml) water
1 cup (200 grams) sugar
1/2 vanilla bean, halved lengthwise, seeds scraped out
3 thin slices ginger (about 1/2 ounce/14 grams total)
Zest of 1 lemon, peeled into strips with a vegetable peeler

Steps:

  • Remove cores from pears and slice them 1/4-inch thick.
  • In a medium pot, combine the water, sugar, vanilla seeds and pod, ginger, and lemon zest.
  • Bring to a brisk simmer and stir until sugar is dissolved.
  • Add pear slices, stir to submerge in liquid, and simmer for three minutes.
  • Remove from heat and leave to cool completely.
  • To serve, divide pear slices among four serving bowls and spoon a bit of the poaching syrup overtop. Serve alone, atop yogurt or ice cream, or topped with whipped cream.

3 star anise
5 slices ginger
2 cloves
1 3-inch cinnamon stick
4 pears

Steps:

  • Combine sugar and spices with 5 cups water in a medium saucepan (large enough to accommodate the pears upright), and turn heat to high. Peel pears, leaving stems on, then core them.
  • Lower pears into the water, and adjust heat to gentle simmer. Cook pears, turning them every 5 minutes or so, until they meet little resistance when prodded with a thin-bladed knife, usually 10 to 20 minutes. Turn off heat, and cool pears in liquid.
  • Place pears on serving plates. (At this point they can also be covered and refrigerated up to a day; they should be brought to room temperature before serving.) Reduce the poaching liquid to about a cup (it can also be stored for a day), then spoon a little over each pear before serving.

2 small firm Asian pears, peeled
2 cups pomegranate juice
2 cups Japanese plum wine
1/4 cup granulated sugar
Vanilla ice cream
Mint leaves, for garnish

Steps:

  • Cut the Asian pears in half vertically. Use a small spoon to scoop out the core. Put the 4 halves in a pot large enough to fit the pears in a single layer.
  • Cover the pears with the pomegranate juice and plum wine. Add more juice and wine if the pears are not completely covered. Bring to a boil, then lower the heat and simmer for 20 minutes. Take the pot off the heat and let the pears come to room temperature in the pot. Remove the pears and juice from the pot and put in a bowl. Cover and refrigerate overnight.
  • Preheat a grill to high.
  • When you're ready to serve the pears, dry each half thoroughly using paper towels. Put the sugar on a shallow plate and dip the flat side of each half in the sugar. Put each pear half, flat side down, on a very hot grill and grill until the sugar is brown and bubbly.
  • Transfer the pears to serving plates, flat side up. Put a scoop of vanilla ice cream in the middle of each pear and garnish with mint.

One 750-ml bottle Moscato wine or other sweet dessert wine
2 cups Simple Syrup, recipe follows
1 cinnamon stick, broken in 1/2
2 tablespoons honey
One 3/4-inch piece fresh ginger, peeled, and finely chopped
1 vanilla bean, split lengthwise
6 small, firm, ripe Anjou pears, peeled
Serving suggestion: Vanilla ice cream or gelato
2 cups sugar
2 cups water

Steps:

  • In a saucepan large enough to hold all the pears, combine the wine, Simple Syrup, cinnamon stick halves, honey, and ginger. Scrape in the seeds from the vanilla bean and add the bean and seeds to the saucepan. Bring the mixture to a simmer, stirring occasionally, until the honey has melted. Add the pears and simmer for 15 to 20 minutes, turning occasionally, until the pears are tender. Remove the pears from the liquid and allow to cool.
  • Continue to simmer the liquid until it thickens and is reduced by half, about 15 to 20 minutes. Cool to room temperature. Remove the cinnamon stick halves and the vanilla bean and discard.
  • Place each pear on a small serving plate with a scoop of vanilla ice cream. Drizzle with the honey, ginger and cinnamon syrup. Serve immediately.
  • In a small saucepan, combine the sugar and water over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool.

3 tablespoons honey
1 orange, zested and juiced
3 whole cloves
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 pinch chili flakes
1 pinch salt
1 cup walnuts, divided
¾ cup pecans, divided
½ cup brown sugar
1 ½ teaspoons ground cinnamon
1 pinch salt
2 tablespoons coconut oil
2 cups rolled oats
½ cup honey
2 teaspoons vanilla extract
8 cups water
8 chai tea bags
¼ cup brown sugar
8 large Bosc pears - peeled, halved and cored
8 cups coconut yogurt
1 tablespoon orange zest, or to taste

Steps:

  • Mix together 1/2 cup brown sugar, honey, juice and zest of 1 orange, cloves, cinnamon, nutmeg, chili flakes, and salt in a small saucepan over medium heat for the sauce. Bring to a boil, reduce heat, and bring sauce to a very low simmer. Simmer for about 5 minutes, then remove from heat and allow to cool for about 10 minutes.
  • Meanwhile, combine 3/4 cup walnuts, 3/4 cup pecans, 1/2 cup brown sugar, 1 1/2 teaspoons cinnamon, and a pinch of salt in a food processor. Pulse until finely ground, 15 to 20 seconds.
  • Heat a skillet over to medium-high heat and melt coconut oil. Chop remaining 1/4 cup walnuts and pecans. Add chopped nuts and oats to the hot oil. Toast, stirring frequently, for 1 minute. Add ground nut mixture and mix until combined. Allow to toast until sugar begins to melt, 2 to 3 minutes. Stir in honey and vanilla extract. Remove from heat and allow to cool in the skillet, mixing a couple times as it cools.
  • Bring water to a boil in a large pot, add tea bags, remove from heat, cover, and brew tea for 8 minutes. Remove tea bags and discard. Stir 1/4 cup brown sugar into chai.
  • Bring tea/water to a boil again over high heat, add pears, reduce heat, and simmer over low heat for 15 minutes. Gently rotate pears with a spoon (pears will be soft - you don't want to puncture the skin) and continue to simmer another 15 minutes. For a stronger spice flavor, leave pears soaking in the chai for an additional 10 to 15 minutes with the heat off.
  • To serve, place a heaping spoonful of coconut yogurt into the hole of the pear. Top with granola and drizzle with orange sauce. Garnish with orange zest.

2 cups dry white wine
1 1/2 inches piece fresh ginger, cut in half crosswise
2 cinnamon sticks
1 tablespoon allspice berry
2 tablespoons black tea leaves, loose
4 slices orange zest, about 4 inches long
4 large Asian pears, peeled and halved

Steps:

  • Preheat oven to 275 degrees F. In a large oven-safe saucepan, bring sugar and 3 cups water to a boil over medium heat; cook, stirring occasionally, until sugar is dissolved, about 5 minutes. Add wine, ginger, cinnamon, allspice, tea leaves, and orange zest; bring to a boil again. Add pears, remove from heat, and cover; transfer to oven.
  • Bake pears 1 1/2 hours, turning every half hour until tender but still crisp.
  • Remove from oven; let stand until cool enough to handle. Serve warm in cooking liquid.

1 cup red wine
2 tablespoons lemon juice
1 cup sugar
1 cinnamon stick
1 teaspoon whole allspice
4 -5 firm pears, peeled with stalks attached
1 cup fresh whipped cream

Steps:

  • Combine the water, red wine, lemon juice, sugar and spices in a medium saucepan and bring to a boil.
  • Reduce heat and simmer gently for 5 minutes.
  • Place the pears in an ovenproof dish and pour the syrup over them.
  • Poach at 150°C (300°F) for 20 - 25 minutes or until tender.

1 cinnamon stick
2 strips lemon zest (use a potato peeler)
1 star anise
1 vanilla pod , split lengthways
5 cloves
piece fresh root ginger , peeled and sliced
4 ripe pears , peeled
200g good-quality dark chocolate
142ml double cream
150ml full-fat milk
pinch ground cinnamon
vanilla ice cream , to serve

Steps:

  • In a pan big enough to hold the pears snugly, tip in all the ingredients except the pears. Half fill the pan with water and bring to the boil. Simmer for 10 mins to infuse, drop in pears, cover and gently poach for about 30 mins until soft. Turn off the heat and set aside. The pears can be poached up to 2 days ahead and kept in the poaching syrup in the fridge.
  • To make the chocolate sauce, tip the chocolate into a heatproof bowl. Bring the cream, milk and cinnamon to the boil and pour over the chocolate. Stir until the chocolate has melted. To serve, drain the pears and, holding them by the stem, dip them in the chocolate sauce to completely cover. Serve each pear with a generous scoop of vanilla ice cream.

Steps:

  • Bring first 7 ingredients to boil in heavy large saucepan, stirring until sugar dissolves. Cover and simmer 5 minutes.
  • Peel and core pears. Add to syrup. Add enough water to cover pears. Cover pan; simmer until pears are tender, about 40 minutes. Using slotted spoon, transfer pears to bowl. Increase heat; boil liquid until reduced to 3/4 cup, about 25 minutes. Strain syrup; pour over pears. Chill until cold. (Can be made 2 days ahead. Chill.)
  • Stand 1 pear in center of each plate. Spoon papaya and mango around pear. Spoon syrup over and serve.

2 Asian pears
4 whole star anise pods
1/4 cup honey
1/4 cup dry vermouth, dry white wine, cider, or water

Steps:

  • Preheat oven to 350 degrees. Cut 4 pieces of parchment paper to measure 12 square inches each. Juice lemon into a small bowl. Halve each pear horizontally. Dip cut sides of pear in lemon juice (to prevent browning). Using a melon baller, remove core from each half.
  • Place 1 star anise in cored center of each pear. Drizzle 1 tablespoon honey over each star anise.
  • Place a pear half, cut side up, on each piece of paper. Working with one piece at a time, hold pear half in paper in the palm of your hand; gather edges of paper around fruit with your free hand. Transfer to a rimmed baking sheet.
  • Pour 1 tablespoon vermouth into pear half in parchment. Twist paper tightly around top of each fruit to seal. Bake 45 minutes; pears should be tender. Transfer packets to shallow bowls. Serve immediately, opening packets at the table.

  • Put pears in a heatproof bowl. Pour kumquats and syrup over pears and toss gently, then cool.
  • Chill fruit, covered, at least 2 hours.
