TRADITIONAL POACHED SALMON

Number Of Ingredients 6

1 teaspoon olive oil
Four 4- to 6-ounce fillets salmon
Sea salt and white pepper
2 lemons, 1 halved and 1 cut into wedges
1 bottle dry white wine, such as pinot grigio
Fresh parsley, for garnish

Steps:

  • Drizzle the olive oil over the salmon fillets and season with some sea salt and white pepper. Set aside.
  • Fill a high-sided large skillet one-third of the way up with water. Add the wine and lemon halves. Bring to a low simmer, add the salmon and let cook until firm to the touch, 5 to 7 minutes for medium. For well-done salmon, cook for 10 minutes.
  • Serve garnished with the lemon wedges and parsley.

GINGER SALMON STEAKS

Salmon is my favourite fish. This is an easy recipe, it's quick for the weekday meal and it has lots of flavour.

4 (4 ounce) salmon fillets
2 tablespoons unsalted butter, softened
2 teaspoons soy sauce
1/4 teaspoon garlic powder
2 teaspoons grated fresh ginger
1 tablespoon sesame oil
8 slices limes (optional)

Steps:

  • Mix butter, soy sauce, garlic and ginger in a bowl.
  • Heat oil in a nonstick skillet over medium high heat.
  • Add salmon and dot with half the butter mixture.
  • Cook about 5 minutes or until browned on one side.
  • Turn, dot with remaining butter and cook another 4-5 minutes until salmon flakes easily.
  • Garnish with lime slices.

a 1-inch piece of peeled fresh gingerroot, sliced thin, plus 1 teaspoon minced peeled fresh gingerroot
1 large garlic clove, mashed with the flat side of a knife
2 lemon slices
2 tablespoons soy sauce
1 cup water
two 1/2-inch-thick salmon steaks (each about 6 ounces)
1 tablespoon unsalted butter, cut into bits
1 tablespoon minced fresh parsley leaves

Steps:

  • In a 2-quart microwave-safe casserole with a lid combine the sliced gingerroot, the garlic, the lemon, the soy sauce, and the water and microwave the mixture, uncovered, at high power (100%) for 5 minutes. Add the salmon in one layer and sprinkle it with the minced gingerroot. Microwave the mixture, covered, at medium power (50%) for 5 minutes, or until the salmon just flakes, and transfer the salmon with a slotted spatula to 2 plates. In a bowl whisk together 2 tablespoons of the cooking liquid, the butter, the parsley, and salt and pepper to taste and spoon the sauce over the salmon.

ASIAN GINGER POACHED SALMON

2 tablespoons whole grain mustard
1 1/2 ounces sesame oil
1-ounce tarragon vinegar
1 tablespoon freshly minced ginger
Salt and pepper, to taste
1/2 yellow, red and orange bell pepper (julienne sliced)
1/4 cup fresh ginger, julienned
2 tarragon sprigs
1 (4-ounce) salmon fillet
1/4 cup Sylvia?s Secret Herb Seasoning (available from Sylvia?s Food Product Line)
1 tablespoon white wine
1/2 fresh lemon, juiced
1/2 red onion, julienned
1 teaspoon sesame seeds and 1/4 cup pickled ginger, for garnish

Steps:

  • Combine dressing ingredients in a medium size mixing bowl, whisk thoroughly and let stand until ready to use.
  • In an 8-inch saucepan, fill 3/4 with water. Bring to a boil. Place 14 inches of plastic wrap on a flat surface. Add 1/2 cup each of yellow, red and orange peppers on plastic wrap. Add 1/4 cup of julienne slices of ginger on top of peppers. Put 1 tarragon sprig on top of ginger. Coat salmon fillet (front and back) with Sylvia?s Secret Herb Seasoning and place on top of veggies. Add 1 tablespoon of white wine and juice from 1/2 fresh lemon. Place tarragon sprig on top of salmon fillet and fold in plastic, tightly. Place plastic wrap in boiling water and let it poach for 15 minutes. Take your favorite choice of green leaf salad mix and place on plate. Place cooked salmon on salad mix. Spoon Asian salad dressing on top of salmon fillet. Add red onion, remaining peppers, sesame seeds and ginger, to garnish.

1/3 cup low sodium chicken broth
2 salmon steaks (or fillets about 5 ounces each)

Steps:

  • Place lemon juice and chicken broth in medium saucepan with cover.
  • Add raw salmon steaks.
  • Bring liquid to slow boil over medium-low heat.
  • Reduce heat slightly, cover, and simmer 5 minutes.
  • Flip salmon over, cover, and continue to simmer 5 more minutes or until salmon is cooked through.

This recipe is from a friend. The poaching liquid really imparts a nice flavor to the salmon. I like to serve with Vegetable Galaxy, Recipe #125401, and rice. Prep and cooking time does not include 1/2 hour for liquid to blend.

2 carrots, cut into 1/4 inch slices
1 leek, trimmed, washed, and cut into 1/4 inch slices
1 lemon, cut into 1/4 inch slices
4 sprigs fresh thyme
10 sprigs flat leaf parsley
1 bay leaf
1/2 teaspoon whole black peppercorn
1/2 teaspoon whole coriander seed
2 tablespoons coarse salt
2 cups dry white wine
24 ounces salmon steaks

Steps:

  • Combine all ingredients except salmon in a saucepan large enough to hold the salmon steaks.
  • Add water to make liquid 1 1/2 to 2 inches deep.
  • Let stand 1/2 hour to blend flavors in the liquid.
  • Bring liquid to a boil and reduce heat to a very slow simmer.
  • Add salmon and cover.
  • Cook very slowly until fish is firm, usually 6 to 8 minutes, careful not to overcook.
  • Garnish with your favorite cucumber sauce.
  • Serve over rice.

4 salmon steaks, each about 1/2 pound and 1 1/2 inches thick
4 sprigs fresh thyme or 1/2 teaspoon dried
4 sprigs fresh parsley
6 peppercorns
1 bay leaf
Salt to taste, if desired
2 tablespoons white-wine vinegar
5 cups water, approximately
Caper sauce (see recipe)

Steps:

  • Put the salmon pieces in one layer in a skillet or casserole and add the remaining ingredients except the caper sauce. There should be enough water to barely cover.
  • Bring to the simmer and cover closely. Let simmer about seven minutes. Drain and serve with caper sauce spooned over.

3 quarts water
2 medium carrots, peeled and cut into 1-inch pieces
1 leek, sliced crosswise 1/4-inch thick, white and light green part only
1 medium rib celery, cut into 1-inch pieces
1 lemon, thinly sliced
2 dried bay leaves
2 sprigs fresh thyme
1/2 teaspoon whole black peppercorns
4 salmon steaks (at least 1-inch thick)
Coarse salt
Fresh dill, for garnish (optional)

Steps:

  • Prepare Court Bouillon: In a large saucepan, combine water, carrots, leek, celery, lemon, bay leaves, thyme, and peppercorns. Bring to a boil, then lower the heat and simmer 30 minutes, depending on desired intensity of flavor.
  • Prepare Salmon: Fill a medium straight-sided skillet with simmering court bouillon. Reserve remaining court bouillon for another use. Season salmon steaks on both sides with coarse salt. Carefully lower into the skillet. Return liquid to just under a simmer. Cook until the fish is opaque throughout and firm to the touch, 5 to 8 minutes. Use a slotted fish spatula to transfer salmon steaks to plates. If desired, remove skin using the tines of a fork.

4 salmon steaks, about 1-1/2 inches thick
2 cups water, approximately
2 teaspoons salt
1/4 cup apple cider vinegar
1 tablespoon chopped fresh dill (or dried)
3 scallions, chopped
1 lemon, juice of
1/3 cup peanut oil
1 teaspoon sugar
10 ounces frozen spinach, cooked and drained
3 cups cooked asian sticky rice

Steps:

  • Place salmon steaks in a large skillet with water, salt and vinegar [the water should come 1/2 up the side of the salmon].
  • Turn on heat and keep just under a boil for 10 minutes.
  • Turn steaks and cook, simmering, for another 10 minutes.
  • Remove steaks and take off skin and remove bones on the inside.
  • Add dill, chopped scallions, lemon juice and peanut oil to water.
  • Cook on medium heat until reduced to a sauce - 5-10 minutes.
  • Place salmon steak on plate.
  • Mold cooked rice in a 1/2 cup measuring cup and unmold on plate.
  • Top rice with spinach.
  • Pour sauce over spinach.
  • And serve.
