EASY REFRIGERATOR PINEAPPLE GRAHAM DESSERT SQUARES
This dessert is easy to prepare and really good! You can use Cool Whip topping in place of the whipping cream if desired. I like to top each slice with a spoonful of crushed pineapple before serving.

Steps:
- Set oven to 350°F.
- Grease an 8 x 8-inch square baking dish.
- Combine graham wafer crumbs with 1/2 cup melted butter.
- Pat into bottom of prepared baking dish.
- Bake for 10 minutes; cool.
- In a bowl, cream 1/2 cup softened butter with icing sugar for about 3 minutes.
- Add in eggs, beat well until combined.
- Transfer the mixture into cooled crust.
- In a bowl, combine/fold the whipped cream with VERY well drained crushed pineapple.
- Spread over the egg mixture.
- Sprinkle with graham cracker crumbs.
- Refrigerate for 2 hours before serving.

AUNT HATTIE'S POLISH RAISED PINEAPPLE SQUARES, MAZUREK
Aunt Hattie made a living out of baking this, and Placek, pound cake and other Polish recipes to order. That kept her pretty busy. A very old treasured family recipe. Jarred fruit filling (such as Solo brand) may be used instead of the home-made pineapple filling. Not quite as good though. And you might need more than one jar. Might as well bite the bullet and just make it yourself!

Steps:
- To start, make a pineapple filling by mixing a large can of crushed pineapple with cornstarch and simmering until thick. Might need a little fresh lemon juice to make tastier. Cool.
- Mix together and set aside yeast, milk, egg yolks; this is the sponge. If using dry yeast, dissolve it in a little water first.
- Mix as for pie crust: butter, flour, sugar, salt
- Mix with the sponge.
- Divide dough in half. Roll out half of the dough and line a 15 x 11 jellyroll pan.
- Cover with the pineapple filling. Yes, it's a pretty thin layer. Supposed to be!
- Roll second half, cut in strips and lattice over top
- Let raise 1 hour. Bake at 350 for 35 minutes.
- Drizzle with following frosting and sprinkle with chopped nuts if desired.
- Frosting: 1 T butter, /2 t vanilla, powdered sugar.

PINEAPPLE AND CHEESE LATTICE SQUARES
This a recipe the was given to me by my soon-to-be mother-in-law because I told her that I would love to have recipes from my fiance's childhood to make and surprise him with. These squares are so awesome! They are not too sweet, and at great cold out of the refrigerator. I wish my mother would have known how to make them when I was a child. LoL! Thank goodness I didn't go a lifetime without them.

Steps:
- Mix 1/2 cup sugar, cornstarch, and salt in a sauce pan.
- Stir in 1 egg yolk and pineapple.
- Cook over medium-medium-high heat until think.
- Set aside to cool completely.
- In a medium bowl, mix together cottage cheese and 1 egg yolk and set aside.
- Scald milk
- Add teaspoon of sugar to milk and set aside to cool to lukewarm.
- Dissolve yeast in lukewarm water for 1-2 minutes.
- Add yeast mixture to milk and set sit until lots of little bubbles form on surface.
- In a large bowl cut together butter and flour until in resembles a course meal.
- Stir yeast mixture into the flour mixture
- On a floured surface, roll out 2/3's of the dough to fit the bottom of a 16-10" baking pan.
- Spread cottage cheese mixture over dough followed by pineapple mixture.
- Roll out remaining dough and cut into lattice strips.
- Lay the strips in an over-under pattern across the top of the pineapple mixture to give the lattice effect.
- Cover and let rise in a moist warm area for 1 hour.
- Bake in a preheated oven for 35-40 minutes.

- Mix graham cracker crumbs with melted butter and set aside 1/4 of the mixture.
- Put the rest in 2 quart oblong pan and press down on bottom and sides.
- Blend together cream cheese and sugar.
- Add eggs, one at a time, beating well after each addition.
- Add lemon juice and vanilla.
- Pour over crumb crust.
- Bake at 350°F degrees for 30 minute.
- Meanwhile, mix the drained pineapple with the 1/2 teas. vanilla and the sour cream.
- When cake comes out of oven cover cake with the pineapple sour cream mixture.
- Sprinkle top with reserved crumb mixture.
- Bake another 5-10 minute.
- Refrigerate when cool.

- Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine 2 cups flour, confectioners' sugar, and almonds. Cut in butter until mixture resembles coarse crumbs. Press crust mixture into the bottom of an ungreased 9x13-inch pan. Bake in preheated oven for 15 to 20 minutes, until lightly browned. Set crust aside, and leave the oven on.
- While the crust is baking, prepare the cream cheese layer. In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in 2/3 cup unsweetened pineapple juice. Pour over hot crust and bake until filling is set, about 20 minutes more. Allow to cool completely.
- Make the topping: In a saucepan, combine 1/4 cup flour, 1/4 cup sugar and 1 cup reserved pineapple juice. Bring to a boil and stir for 1 minute. Remove from heat and stir in crushed pineapple. Cool completely. When cool, fold in whipped cream. Spread topping over cream cheese layer. Refrigerate 4 hours before serving.

PINEAPPLE SQUARES
These squares are so popular in our N. E. Pa. area and are often requested for bake sales. At times more flour, little at a time, may have to be added to make it easier to roll without the dough falling apart. It is a very forgiving dough, though. If you seem to have extra filling left over it may be used to make small tarts using pie crust dough.

- Place filling ingredients in a large saucepot. Allow to reach boiling point. Reduce heat and let simmer 5 minutes, mixing often. Remove from heat and let cool completely. May be done earlier in the day or day before.
- Dough:.
- In a large bowl work the flour and the butter (or margarine) as you would for pie crust.
- Add the sugar, salt, baking powder, baking soda and mix well.
- Add vanilla, eggs and milk, adding a little at a time until dough comes together. Depending on the flour you may have to add a little more.
- Dough should be pliable enough to be able to roll out on a floured surface. Divide into 2 pieces.
- Take one piece and roll out dusting with sufficient flour to prevent sticking. Using a 12x17 cookie sheet with sides, place dough into ungreased pan allowing the sides to come up the sides. Don't cut off excess dough.
- Pour in filling and even out making sure the corners are evenly filled inches (Filling recipe follows).
- Again, flour surface and roll out other piece of dough and place on top.
- Press dough around the edges to seal in pineapple filling. Then cut around to remove excess dough. Brush top with well beaten egg. Bake 350 deg. for 45 minutes.
- Let cool. Cut into desired squares. May be dusted with confectioners sugar.
