Steps:
- Preheat oven to 275 degrees. In a large bowl using an electric mixer on medium-high speed, beat butter, granulated sugar and brown sugar until creamy.
- Add egg yolk and vanilla extract and mix until thoroughly combined. In a medium bowl, whisk together flour, cardamom and salt. Reduce speed to low and add flour mixture to butter mixture until thoroughly combined.
- Spread dough into an ungreased 9- by 13-inch baking pan. Brush egg white over dough, sprinkle evenly with chopped nuts and bake for 1 hour.
- Remove from oven and transfer to a wire rack to cool completely.
- To make icing: In a large bowl, using an electric mixer on medium speed, beat melted butter and vanilla into powdered sugar. Add milk, 1 teaspoon at a time, until icing reaches drizzling consistency. Spread icing over slightly warm bars. Allow icing to set and cut bars into cookies while bars are still slightly warm. Decorate with candied fruit, if desired.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, cardamom, salt and nutmeg; gradually add to creamed mixture and mix well., Divide dough in half. Shape each portion into a ball, then flatten into a disk. Cover and refrigerate for at least 3 hours., Roll each disk directly on parchment to 1/8-in. thickness. Cut with a floured 2-1/2-in. snowflake-shaped cookie cutter, leaving at least 2 in. between cookies. Remove trimmings; repeat with remaining dough, refrigerating dough as needed., Place parchment with cookies on baking sheets. Bake at 325° until edges are lightly browned, 12 to 15 minutes. Cool for 5 minutes before removing from pans to wire racks to cool completely., In a small bowl, combine confectioners' sugar and milk. Pipe over cookies and sprinkle with coarse sugar and/or glitter. Let dry completely.

- Whisk all-purpose flour, semolina flour, and 1 teaspoon cardamom in a large bowl; set aside. Using an electric mixer, beat butter, salt, and 3/4 cup sugar in a large bowl until light and fluffy, about 4 minutes. Add egg yolks and orange flower water and beat to blend. With mixer on low, add dry ingredients and mix just to blend.
- Place dough on a large sheet of parchment paper. Using paper as an aid, roll up dough into a 1 1/2-inch diameter log. Wrap in plastic and chill until firm, about 1 hour.
- Preheat oven to 350°. Mix remaining 1/4 cup sugar and 1/4 tsp. cardamom in a small bowl. Slice dough into 1/4-inch-thick rounds. Dip 1 side of each round in cardamom sugar and arrange, sugar side up, on 2 large parchment-lined baking sheets. Bake until golden brown and firm, 20-25 minutes. Transfer cookies to a wire rack; let cool.
- DO AHEAD: Dough can be made 3 days ahead. Keep chilled. Cookies can be baked 3 days ahead. Store airtight at room temperature.
