TARRAGON CHICKEN
This is a quick-time version of the classic French poulet a l'estragon (though you could speed it up further by bashing out the chicken breast or by using a turkey cutlet in its place, which would make this dish pleasingly alliterative) and is an instant reminder of the comforts of old-school cooking. Tender chicken (it's the poaching early on that sees to this), aromatically fresh and insistently herbal tarragon, a generous splosh of vermouth, all rounded off by rich, pale cream: this has the nostalgic, yet robust, charm of that French bistro of fond memory or happy imaginings. If you can't get fresh tarragon, do not despair: just double the freeze-dried tarragon at the start and add some freshly chopped parsley at the end. And I can assure you it would be worth your while considering a teaspoon of tarragon mustard, too, along with the cream. About which, please don't wimp out on me: this is old-fashioned cooking which cannot be proscribed by new-age dietary concerns. But, if you insist, halve the cream, and add another 2 tablespoons of vermouth when you're pouring the rest in after the chicken's had its first 5 minutes cooking. Eat with a tumbled mixture of French or green beans and asparagus tips along with steamed baby white-skinned potatoes or, hard to beat for me, some white basmati rice forked through with a soupcon of butter and freshly ground white pepper.

- Heat the garlic oil in a frying pan or Dutch oven that has a lid and in which the chicken breasts will fit pretty snugly. Add the scallions, stir, then sprinkle in the freeze-dried tarragon, stir again and cook them in the garlic oil for a minute, stirring some more as they cook.
- Put the chicken fillets into the pan, curved side down, and cook for 5 minutes, watching the scallions don't burn. If they look like they're beginning to, scrape them from the pan and let them sit on the chicken pieces.
- Turn over the breasts, and add the vermouth (or white wine). Let the vermouth bubble up, then add the salt. Put the lid on, turn the heat down low and leave it to simmer gently for 10 minutes. Check the chicken is cooked through by making a small cut into the thickest part and ensuring the juices run clear - if not, simmer for a few minutes longer and check again.
- Remove the chicken breasts to warmed plates. Bring the remaining liquid to a boil, add the cream and stir well, then sprinkle in the fresh tarragon, stir again and give a good grind of white pepper.
- Pour the sauce over the chicken breasts, and give a final scattering of tarragon to serve.
CHICKEN WITH DRIED CRANBERRIES AND TARRAGON
My son just brought me a bottle of verjuice. I wasted the last one, so went to the web to find out how to use this bottle. It seems you can just try using it in place of vinegar, lemon or fruity wine. This recipe is good,it's from a Canadian site.

- Heat the oil in a large skillet over medium high heat.
- Combine the flour salt and pepper and dredge the chicken breasts in this, shaking off any excess.
- Add the chicken breasts skin side down to the skillet, cook until golden brown, turn over and repeat.
- Transfer the chicken to a baking dish, place in oven and bake for 12-15 minutes.
- Drain the skillet and return to the heat-reducing it to medium.
- Deglaze the pan with half the verjuice, scraping the bottom with a wooden spoon.
- Add the shallots, garlic, stock and cream, and simmer until reduced to a consistency that coats the back of a wooden spoon.
- Add the remaining verjuice, dried cranberries and lemon juice.
- Stirring with a whisk, reduce sauce a bit more, then season with salt and pepper and add the chopped tarragon.
- To serve, slice the chicken breasts on an angle, and fan out onto a plate.
- Top each breast with a generous amount of the sauce.

- Remove chicken from packaging, remove giblet packet from cavity, and pat thoroughly dry with paper towels. Place in a 9x13-inch baking dish.
- Mix salt, orange zest, rosemary, and thyme together in a small bowl; rub 3/4 of the mixture all over outside of chicken; rub remaining mixture inside cavity. Cover loosely with plastic wrap and refrigerate 1 to 3 days.
- Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap from chicken.
- Bake chicken in preheated oven until no longer pink at the bone and the juices run clear, 2 to 2 1/2 hours depending on size. An instant-read thermometer inserted into the thickest part of the thigh near the bone should read 165 degrees F (74 degrees C). Remove chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 20 minutes before carving.

- Prepare the chicken: Season chicken breasts with salt and pepper to taste. Pound the thickest part of the breast, so that the whole breast is of almost even thickness (it will cook more evenly). You can also cut chicken breasts in half lengthwise (with your knife blade parallel to the cutting board) - it will cook faster this way.
- Sear the chicken: Heat the oil over high heat in a big frying pan. Once hot, add the chicken pieces, cook without stirring for 2 minutes or until browned, then cook on the other side until browned. Transfer the chicken to a plate. The cooking time will depend on the pan type and how crowded the chicken is. It doesn't need to be cooked through in the middle, just golden brown on both sides.
- Make the sauce: Reduce the heat to medium and add finely chopped garlic to the pan. Cook, stirring for 30 seconds, or until fragrant. Add all the other ingredients for the sauce: cranberries, rosemary, chicken broth, orange juice and zest, vinegar, honey, mustard. Season lightly with salt and pepper (only lightly, the sauce will reduce its volume and can become too salty).
- Bring to a boil, then add the chicken pieces back to the pan. Cook over medium-low heat until the chicken is cooked through (flip the chicken breast halfway through). Cooking time depends on how big (thick) the chicken breasts are and how long have you seared them. Small chicken breasts (or cut in half lengthwise breasts) will need just a couple of minutes, bigger chicken breasts will need about 10 minutes.
