RATATOUILLE WITH POACHED EGGS AND GARLIC CROUTONS

Ratatouille with Poached Eggs and Garlic Croutons image

Provided by Rachael Ray : Food Network

Time 1h45m

Yield 4 servings

Number Of Ingredients 17

4 tablespoons butter
4 cloves garlic, 2 cloves finely chopped, 2 thinly sliced
8 (1-inch) thick round slices baguette
2 teaspoons dried herbes de Provence or dried thyme leaves
1/2 cup shredded or grated Parmigiano-Reggiano
Salt
1 1/2 pounds eggplant, 1/2-inch dice
2 red bell peppers
2 tablespoons extra-virgin olive oil
1 pound firm, small zucchini, 1/2-inch dice
2 medium onion, 1/2-inch dice
2 sprigs fresh rosemary, finely chopped
Freshly ground black pepper
1 (28-ounce) can San Marzano tomatoes for sweeter stew, or diced fire roasted tomatoes, for smokier stew
1 tablespoon aged balsamic vinegar
4 extra-large or jumbo eggs
A handful fresh basil leaves, torn

Steps:

  • Heat the oven to 375 degrees F.
  • Melt the butter in small pot over low heat, then add the 2 cloves of chopped garlic. Let the garlic bubble for 2 minutes. In a medium bowl add the bread, 1 teaspoon dried herbes or thyme, about 1/3 palmful and the cheese. Drizzle the garlic butter over the bread mixture and arrange the croutons on parchment lined baking sheet. Bake until golden and evenly brown, about 20 minutes. Remove from the oven and cool. Croutons may be stored in an airtight container for a couple of days in a cool place.
  • Salt the eggplant and drain it in a colander for30 minutes to remove the bitterness from the eggplant.
  • Meanwhile, blacken the skins of the red peppers over open flame on the stove or under a hot boiler. If broiling, leave the oven ajar to allow the steam to escape. Put the blackened peppers in a bowl, cover with plastic wrap and let cool. Peel, seed and dice the peppers.
  • While peppers cool, heat a Dutch oven over medium-high heat with extra-virgin olive oil, 2 turns of the pan. Add the eggplant, zucchini, remaining sliced garlic, onions, rosemary and remaining 1 teaspoon of herbes or dried thyme. Season with salt and pepper, to taste, then cover the pot and cook for about 15 minutes, stirring occasionally. Crush the tomatoes by hand and add them to the pot. Stir in the red peppers and 1/2 tomato-can of water and bring to a boil over medium heat. Reduce the heat and simmer for 15 minutes to concentrate the flavors. Cool and store for a make-ahead meal.
  • To serve, bring the ratatouille back to a simmer over medium heat, covered, then uncover and stir in the balsamic vinegar. Make 4 nests or wells in the ratatouille and crack an egg into each nest. Cover the pot and cook the eggs to desired doneness, about 2 to 5 minutes. Scoop the ratatouille and eggs into shallow bowls and top with croutons and torn basil.

Yield Serves 4

Number Of Ingredients 11

3 tablespoons extra-virgin olive oil
2 cups 1/2-inch cubes day-old Italian bread (crusts removed)
Kosher salt and freshly ground black pepper
2-3 slices thick-cut lean bacon, cut into 1/8-inch dice
1/2 cup minced onion
1 garlic clove, minced
1/4-1/2 teaspoon crushed red pepper flakes
2 28-ounce cans plum tomatoes, with their juice
4 medium or large eggs
1 tablespoon minced fresh flat-leaf parsley
Freshly grated Parmigiano-Reggiano cheese

Steps:

  • 1. Heat the oil in a large, wide, heavy saucepan over medium heat. When the oil is hot enough to sizzle a bread cube, add all the bread cubes and saute until golden, about 3 minutes. With a slotted spoon, transfer to a medium bowl. Sprinkle with salt and a grinding of pepper and set aside.
  • 2. Discard the oil in the pan and wipe the pan dry with a paper towel. Add the bacon to the pan and cook, stirring, over medium heat for 2 minutes. Add the onion, reduce the heat to medium-low and saute until golden, about 5 minutes. Stir in the garlic and red pepper flakes and saute for 1 minute more.
  • 3. Place a food mill over the saucepan and puree th etomatoes and their juices directly into the pan. (Or, if you do not have a good mill, puree in a food processor and press through a strainer, using a rubber spatula; discard the solids.) Bring to a boil, reduce the heat to low and simmer, stirring occasionally, until the liquid is slightly reduced, about 20 minutes. Season to taste. (The soup can be made up to 1 day ahead.)
  • 4. Just before serving, break the eggs one at a time into a cup and slip them into the simmering soup, distributing them evenly. Cover and cook until the whites are setand the yolks are cooked to the desired doneness, 8 to 10 minutes.
  • 5. Distribute the croutons among four soup bowls. Carefully ladle the eggs into the bowls, then ladle the soup on top. Top each serving with some of the parsley and cheese and serve.

Categories     One-Pot Meal     Dinner     Pasta     Orzo     Egg     Tomato     Mozzarella     Butter     Onion     Garlic     Basil     Soy Free     Peanut Free     Tree Nut Free     Vegetarian

Yield 4 servings

Number Of Ingredients 11

2 Tbsp. unsalted butter
1 small or medium onion, finely chopped
2 garlic cloves, thinly sliced
½ tsp. crushed red pepper flakes
1 cup orzo
2 cups canned whole peeled tomatoes with juices (from one 28-oz. can), cut up with kitchen shears
1¼ tsp. kosher salt
4 large eggs
4 oz. mozzarella, coarsely grated (about 1 cup)
Freshly ground black pepper
Torn basil leaves (for serving)

Steps:

  • Melt butter in a large skillet over medium heat. Cook onion, garlic, and red pepper flakes, stirring often, until onion is softened and translucent, about 4 minutes. Add orzo and stir until coated in butter, about 30 seconds. Add tomatoes and juices and cook, stirring, until liquid is reduced and tomatoes are starting to stick to skillet, about 4 minutes.
  • Add salt and 2 cups water, increase heat to medium-high, and bring to a simmer. Reduce heat to low, cover pan (a baking sheet works well if you don't have a lid), and cook 8 minutes, stirring halfway through. Uncover and simmer 1 minute-mixture should be fluid but not watery. Stir again, then remove from heat and crack each egg into a quadrant of pan.
  • Cover pan, set over low heat, and cook, rotating pan every 2 minutes or so, until eggs are nearly set, about 5 minutes. Sprinkle cheese over, avoiding eggs, cover pan, and cook until cheese is melted, about 2 minutes. Remove from heat and top with a few grinds of pepper and basil to serve.
