Steps:
- Preheat the oven to 450 degrees F.
- Leaving peel on, cut the potatoes into 6 lengthwise to make long wedges, about 3/4-inch to 1-inch wide. Combine the potatoes, oil, salt and cayenne on the baking sheet and toss to combine. (1 less bowl to wash) Arrange the potatoes on a baking sheet in a single layer, so a cut side is in contact with the pan, but evenly spaced so the potatoes aren't touching each other. Bake until golden brown and cooked through, about 30 minutes. Slip a spatula under the potatoes to turn them over and cook for 5 minutes more.
- Transfer potatoes to a serving dish and serve immediately.

- Cut potatoes into wedges. In a large bowl, combine oil, hot sauce, thyme, paprika, and cumin. Toss potatoes in dressing and spread out in a single layer on a nonstick cookie sheet. Season wedges with salt and pepper and roast for 20 minutes, turning once.

- Preheat oven to 425 degrees F (220 degrees C). Grease a baking sheet.
- Cut each potato into 12 wedges; place in a large bowl. Toss potatoes with olive oil, garlic, salt, pepper, onion powder, and paprika. Arrange in a single layer on prepared baking sheet.
- Bake in preheated oven for 20 minutes. Turn potatoes over and continue baking until golden and crisp, 25 to 30 minutes longer.

CAJUN OVEN-FRIED POTATO CHIPS
This recipe comes from a Gourmet magazine way back in the 80's, and I still make them often my family loves these! If you want you can omit the Cajun seasoning! If you are lucky enough to own a mandoline, then use it to slice the potatoes. Your oven must be at 500 degrees to create a crispy potato slice! You could reduce the recipe to half if desired but why would you want too, you won't be able to stop eating these, they are that good, so better make the full amount!!!

- Cut the potatoes into 1" cubes.
- Add to boiling salted water.
- Cook just until fork tender but not mushy, about 7 minutes.
- Drain and cool.
- Meanwhile, in a bowl, combine the salt, peppers, onion and garlic power, cumin and cayenne pepper.
- Add the potatoes to the spices.
- Toss to coat all pieces evenly-- You may do this much in advance and hold the potatoes as long as an hour before completing the dish.
- Heat about 1" oil in a wok or deep skillet to about 350 degrees or until a piece of potato sizzles when added to the oil.
- Add the potatoes.
- Fry until golden brown on all sides, turning frequently.
- Remove from Heat,drain and serve immediately.

- Preheat oven to 400 degrees F.
- In a small bowl, combine oregano, thyme, paprika, cayenne, black pepper, sugar, cumin, salt, garlic powder, onion powder, Tabasco sauce, and oil; mix well into a paste.
- Line a large baking sheet with aluminum foil; pour a small amount of oil onto foil and spread with a paper towel.
- Peel potatoes and slice into french fry shapes.
- Place fries in a plastic bag with paste and work paste onto fries; alternatively you can do this in a bowl, but the bag method is easier.
- Place fries on lined baking sheet, trying not to let edges touch.
- Bake in preheated oven for approximately 30-35 minutes (your time may vary with the size fry you cut); turn once during cooking to brown underside.
WAY TOO EASY CAJUN POTATOES
These were a staple in the Irish Channel in the good ole days. I still make mine in a cast iron pan but you can use any oven proof pan. For those who must have heat, add extra cayenne. To shorten baking time we sometimes nuke the potato chunks a little before adding to the oil.

- Pre heat oven to about 375-400.
- With a fork score all over the potatoes (peeled or not), this will make them more crisp.
- Chop the potatoes into 1 1/2-2 inch chunks.
- Put the oil in the pan (warming the pan first is good, but not vital), add potatoes, sprinkle all seasonings over (go easy with the salt; more can be added after cooking) and toss and stir potatoes with two forks until all chunks are coated.
- Bake for 15 mins, stir well (again with the forks), bake a further 10-15 minutes.
- Note: If you've nuked them, the potatoes will need a little less time. Watch them towards the last few minutes.

- Cut your potatoes (and carrots, if you like) into small wedges. Mix together and sprinkle the potatoes with 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp black pepper, 1/4 tsp cayenne and 1 tsp salt. You could also add 1/2 tsp thyme and 1/2 tsp oregano, if you like. Alternatively or in addition, sprinkle with any type of Cajun seasoning such as Tony Chachere's, Bruce's, or Season All.
