Time 1h45m

Number Of Ingredients 15

300ml dry white wine
1 small fennel , sliced or 2 sticks celery, sliced
1 large carrot , cut in sticks
2 sprigs each thyme , rosemary and tarragon
2 large bay leaves
about 100g/4oz smoked bacon pieces or rinds
½ tsp whole black peppercorns
1 tbsp bouillon powder or 2 stock cubes
1 whole chicken , about 2kg/4lb 8 oz
1 onion , quartered
2 egg yolks
142ml pot double cream
handful fresh tarragon , chopped
1 tsp cornflour
juice of 1 lemon

Steps:

  • Put the wine, vegetables, herb sprigs, bay leaves, bacon, peppercorns and stock powder or cubes in a large pan. Bring to the boil, then simmer for 10 mins.
  • Remove any excess fat from the chicken and push it into the liquor.
  • Return the liquor to the boil, then turn heat down. Cover and cook for 11⁄4 hrs until chicken legs feel tender when pierced. Remove from heat, stand for 15 mins, then lift onto a plate. Strain the liquor into a bowl and pour 500ml into a pan. Boil to reduce by half.
  • Pull and cut the bird into neat portions, discarding skin, wing tips and backbone. Put on a plate and cover.
  • Beat together the yolks, cream and tarragon in a jug. Ladle in a quarter of the liquor, mix, then pour back into the stock and turn the heat down. Mix the cornflour with a little water and add. With a wooden spoon, stir for 3-5 mins until it begins to thicken.6 Remove from the heat, then stir in lemon juice to taste. Pour some sauce over the chicken and put the rest in a jug. TARRAGON AND LEMON ROAST CHICKEN

Tarragon and Lemon Roast Chicken image

This stress-free dish is based on one of my favorite flavor pairings-golden roast chicken and tarragon. The chicken is simply seared on the cooktop, then placed in the oven to bake with zingy lemon, garlic, fresh fennel and tarragon for just 25 minutes. That's dinner, done!

TARRAGON CHICKEN WITH LEMON

Tarragon Chicken with Lemon image

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 11

1 tablespoon extra-virgin olive oil
4 skinless chicken legs, skin removed (about 2 1/4 pounds)
Kosher salt
Freshly ground black pepper
2 tablespoons dry white vermouth
1 cup chicken broth, low-sodium canned, or homemade
1 teaspoon cold water, more if needed
1 teaspoon cornstarch
Finely grated zest of 1 lemon
2 teaspoons freshly squeezed lemon juice
3 tablespoons minced fresh tarragon leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a medium-large skillet over high heat. Add the olive oil. Season the chicken all over with salt and pepper, and lay the pieces in the pan rounded-side down first (the side that had the skin). Cook the chicken, turning only once, until golden brown on both sides, about 5 minutes. Transfer chicken to an oven-proof dish, reserving the skillet. Place the chicken to the oven and bake until an instant-read thermometer inserted into the thickest part of the chicken registers 170 to 75 degrees F, about 15 minutes.
  • Meanwhile, pour the vermouth into the reserved skillet, scraping up any browned bits that cling to the pan with a wooden spoon, and cook over medium heat until the liquid reduces by about half. Add the chicken broth and continue to cook until slightly thickened.
  • In a small bowl whisk a teaspoon or so of cold water with the cornstarch, then whisk the mixture into the broth and bring to a full boil. Remove from heat and add the zest, lemon juice, and tarragon. Season with salt and pepper, to taste.
  • Remove the chicken from the oven. Pour any pan drippings from the chicken into the sauce and stir to combine. Divide the chicken pieces between 4 plates. Pour the sauce over the chicken and serve.

POACHED CHICKEN WITH TARRAGON CREAM SAUCE

Poached Chicken With Tarragon Cream Sauce image

This is a classic dish that I made in my basic culinary class. I thought it was delicious, so I decided to share. Enjoy!

Provided by SaffronMeSilly

Categories     Chicken

Time 25m

Yield 8 chicken breasts, 8 serving(s)

Number Of Ingredients 10

4 boneless skinless chicken breasts
1 1/2 ounces whole butter
4 ounces white wine
1 pint chicken stock
1 bay leaf
1/4 teaspoon dried thyme or 1 teaspoon fresh thyme
1 teaspoon dried tarragon or 1 tablespoon fresh tarragon
1 ounce flour
4 ounces heavy cream
fresh tarragon sprig (to garnish)

Steps:

  • Trim any rib meat and fat from the breasts. Cut breasts into 2 pieces, removing strip of cartilage that joins halves.
  • Select a pan that will just hold the breasts when they are placed close together.
  • Season both sides of chicken breasts with salt and white pepper, arrange them presentation side up.
  • Add wine, chicken stock, bay leaf, thyme, and dried tarragon.
  • Cut a piece of parchment paper to fit the pan you are using, rub butter on it. Place it butter side down on top of chicken mixture.
  • Bring liquid to a simmer and reduce the temperature to just below simmering (this is poaching temperature).
  • Allow chicken to cook through (about 7 minutes or until no longer pink in the middle). Remove chicken from pan.
  • Turn temperature up until remaining liquid is boiling. Allow to reduce for a minute or two.
  • Meanwhile mix 1 oz of butter and 1 oz of flour into a paste (this is called beurre manie).
  • Once the liquid in the pan has reduced a little, whisk in the beurre manie, and bring back to a boil.
  • Once liquid has thickened, add cream, and continue whisking until desired thickness.
  • Strain liquid through cheese cloth, and serve over chicken breasts, with a sprig of tarragon.

POACHED CHICKEN WITH TARRAGON SAUCE AND PEAS

Poached Chicken with Tarragon Sauce and Peas image

Poached chicken is prepared with noadded fat -- just water, garlic, herbs, and pepper.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Number Of Ingredients 12

4 boneless, skinless chicken breast halves (about 6 ounces each)
1 1/2 pounds garden peas, shelled (1 1/2 cups), or 1 1/2 cups frozen peas, thawed
4 garlic cloves
1 bay leaf
6 whole black peppercorns
3 cups loosely packed fresh flat-leaf parsley, plus a few sprigs
1/2 cup loosely packed fresh tarragon, plus more for garnish
3 thin slices white bread, crusts removed, bread torn into large pieces
2 1/2 tablespoons drained capers, rinsed
2 tablespoons extra-virgin olive oil
1/2 teaspoon coarse salt
Freshly ground pepper

Steps:

  • Put chicken, garlic, bay leaf, peppercorns, and a few parsley sprigs in a Dutch oven. Fill almost to the top with cold water; bring to a boil. Reduce to a bare simmer. Cook until chicken is no longer pink in the center, 18 to 20 minutes; transfer to a bowl. Add enough poaching liquid to cover; let cool. Reserve garlic and 1/2 cup remaining poaching liquid from pot.
  • Process tarragon, bread, capers, reserved poached garlic, and parsley in a food processor until smooth, about 15 seconds. With processor running, add oil and reserved 1/2 cup poaching liquid. Stir in salt, and season with pepper.
  • Bring a small pot of water to a boil; add peas. Cook fresh peas until bright green and crisp-tender (or frozen peas until heated through), about 2 minutes; drain. Spoon 2 tablespoons sauce onto each of four plates. Cut each breast half into 5 or 6 pieces. Divide among plates; scatter peas on top. Garnish with tarragon; serve with extra sauce on the side.

LEMON TARRAGON CHICKEN WITH PAN SAUCE

Lemon Tarragon Chicken With Pan Sauce image

By Abigail Johnson Dodge, Fine Cooking Issue #38. If tarragon isn't available, substitute another fresh herb, such as parsley or savoury.

Provided by evelynathens

Categories     Chicken

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 9

1 (3 1/2-4 lb) roasting chickens, cut into quarters
3 tablespoons unsalted butter, very soft
1/2 teaspoon grated lemon zest
1 large lemon, juice of
2 teaspoons dijon-style mustard
2 teaspoons chopped fresh tarragon leaves
1 1/2 teaspoons coarse salt
fresh ground black pepper
1/2 cup canned low sodium chicken broth

Steps:

  • Heat the oven to 425°F Rinse the chicken and pat it dry with paper towels. Cut away any excess fat and tuck the wings behind each breast.
  • In a small bowl, mash the soft butter, lemon zest, 1 Tbs. of the lemon juice, the mustard, and the tarragon until well blended and smooth. Stir in 1 teaspoons of the salt and pepper to taste.
  • Loosen the skin from each chicken piece to create a pocket. Be careful not to tear the skin or peel it away completely. Spread an equal amount of the flavored butter under the skin of each piece. Use your fingers to massage the butter around so that it spreads out as evenly as possible under the skin. Pull the skin back in place over the butter.
  • Arrange the chicken in a shallow baking pan that can safely go on the stovetop. (An enamel-coated cast-iron pan such as a Le Creuset or a stainless-steel pan would work well.) Sprinkle with the remaining 1/2 teaspoons salt and more pepper. Bake, basting at first with the remaining lemon juice and then the pan juices, until the chicken is browned and cooked through, 55 to 60 minute.
  • Remove the chicken from the pan and loosely cover it with foil. Pour off the pan juices into a small measuring cup and let them settle until they separate. Spoon off the fat and discard it. Meanwhile, set the baking pan over medium-high heat and add the chicken stock and 1/2 cup water. Bring to a boil, scraping the bottom and sides of the pan to loosen the browned bits. Continue boiling until the sauce is reduced by half. Add the reserved pan juices, taste, and adjust the seasoning. Spoon a little sauce over each piece of chicken before serving.
