1/4 cup roughly chopped walnuts
1/4 cup old fashioned oats (not instant)
1/4 teaspoon cinnamon
3/4 cup flour
1/3 cup light brown sugar
1 tablespoon sugar
4 tablespoons unsalted butter
2 1/2 pounds plums and apricots, quartered and pits removed
1/2 cup sugar, plus 2 tablespoons
3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 400 degrees F.
  • Set rack in the center of the oven. Combine all of the topping ingredients into a food processor. Pulse until the mixture forms crumbles the size of small peas; do not over process. Set aside.
  • Pour the plums and apricots directly into a large, shallow baking dish and sprinkle with sugar and flour to coat evenly. Spread crisp topping over entire surface of fruit. Bake until fruit is bubbly and the top is golden brown, approximately 30 to 40 minutes. Serve warm or room temperature, plain or with ice cream.
  • Make the topping ahead. In fact make a double or triple batch and freeze it in single recipe size packets so you can whip up a crisp on the spot, anytime.

4 cups apricot halves
¼ cup white sugar
¾ cup brown sugar
½ cup all-purpose flour
½ cup butter
¾ cup rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange the apricots in a 9x12-inch baking dish and sprinkle with white sugar. Mix together brown sugar and flour in a bowl; cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Lightly stir in the rolled oats and spoon the mixture over the apricots.
  • Bake in the preheated oven until the fruit is soft and the topping is browned and crisp, 35 to 40 minutes.

12 plums, pitted and chopped
1 cup white sugar, divided
1 cup sifted all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon salt
1 beaten egg
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Spread the plums out into the prepared baking dish and sprinkle with 1/4 cup sugar. In a bowl, mix together 3/4 cup white sugar, flour, baking powder, and salt. Combine with beaten egg and spoon the mixture over the plums. Drizzle batter with melted butter.
  • Bake in the preheated oven until the topping is brown, about 40 minutes.

2 (15 ounce) cans purple plums
2 tablespoons granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
1/2 cup all-purpose flour
1 cup raw rolled oats
1/2 cup firmly packed brown sugar
1/2 teaspoon cinnamon
2 tablespoons margarine, softened
2 tablespoons light corn syrup

Steps:

  • Drain plums, reserving syrup.
  • Cut plums in half and pit.
  • In 2-quart saucepan, combine granulated sugar and cornstarch.
  • Add 1/2 cup reserved plum syrup and lemon juice, mixing until smooth.
  • Stir in plums.
  • Cook over medium heat, stirring frequently, until mixture starts to boil.
  • Continue cooking and stirring 1 minute longer, set aside.
  • In mixing bowl, combine flour, oats, brown sugar and cinnamon.
  • With pastry blender, cut in margarine until mixture resembles coarse crumbs.
  • Mix in corn syrup.
  • Reserve 1 cup mixture for topping.
  • Press remaining in bottom of ungreased 8 x 8 x 2-inch baking pan.
  • Spread hot plum mixture evenly over crumb crust.
  • Sprinkle reserved crumb mixture over plums.
  • Bake at 400 degree oven about 20 minutes or until golden brown.
  • Serve warm or cold with whipped topping or frozen yogurt, if desired.

2 1/4 lbs apricots
1 1/4 cups all-purpose flour
1/4 cup walnuts (or almonds)
1 1/4 cups sugar
8 ounces butter
1 pinch ground cloves
1 pinch ground cardamom
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°F.
  • Slice apricots in half and discard stone.
  • Cover bottom of a shallow, buttered oven proof dish with two layers of apricots.
  • Place flour, walnuts,sugar, butter, cloves,cardamom, and ground cinnamon into a food processor and blend until it is like breadcrumbs. Spread mixture on top of apricots.

1 cup prune, pitted and cooked
1/4 cup sugar
1/2 cup sherry wine
1/2 teaspoon cinnamon
1 cup flour
1/2 teaspoon salt
1/2 cup brown sugar
1/2 cup butter
1 cup quick-cooking oats
1 cup coconut

Steps:

  • In a saucepan, combine the first four ingredients; simmer 15 minutes and set aside.
  • Sift flour and salt; add brown sugar, cut in butter; add oats and coconut.
  • Spread half of dry mixture in 8" square pan; spoon prune mixture over top; spread remaining dry mixture over two layers.
  • Bake at 325 degrees for 45 minutes.

3/4 cup whole almond
1 1/2 cups sifted flour
3/4 cup brown sugar
3/4 cup well-chilled unsalted butter, cut into pieces
2 1/2 cups red plums, slightly under ripe,cut into 1/2 inch pieces
3 cups blueberries
3/4 cup sugar
3 tablespoons flour
2 tablespoons vanilla
2 teaspoons cinnamon

Steps:

  • Make topping first.
  • Using a food processer and chopping blade, grind almonds using on/off turns.
  • Add flour, sugar and butter through feed tube.
  • Process until mixture starts to cling together (1 minute).
  • Transfer topping mixture to bowl and crumble with a fork.
  • Chill at least 30 minutes while preparing fruit filling.
  • To make filling: Combine filling ingredients (plums- cinnamon) in a bowl.
  • Let stand 30 minutes before proceeding.
  • Preheat oven to 400 degrees F.
  • Pour fruit filling into 2 quart baking dish.
  • I use a corning ware casserole dish.
  • Crumble topping over fruit.
  • Bake 40-45 minutes or until brown and bubbly.
