RAKOTT KRUMPLI RECIPE HUNGARIAN LAYERED POTATOES
Rakott krumpli is a gloriously simple layered potato recipe from Hungary, eggs and smoked sausage are all layered up with sour cream to make a super-rich and delicious dish.

Steps:
- Bring a pan of well-salted water to the boil.
- Add in the potatoes and the eggs.
- Boil the eggs for 10 minutes before removing.
- Remove the potatoes after 30 minutes.
- Allow both to cool for 10 minutes and then peel both.
- Mix the egg yolk with the sour cream.
- Cut the sausage, boiled eggs and potatoes into 3-4mm thick slices.
- Grease an 18cm X 12cm gratin dish with butter.
- Layer up the dish starting with potatoes, then sausage, then egg and then a third of the sour cream.
- Season this layer with salt and pepper and add another identical layer.
- Finish with a layer of potatoes and then add the remaining sour cream.
- Place in an oven and cook for an hour at 200°C or 400°F.

RAKOTT KRUMPLI
Rakott Krumpli or layered potato is a traditional Hungarian casserole. This is an incredibly tasty, quite simple and quick dish to make.

Steps:
- In a deep pan cook potato in the skin for 15 minutes, without being overcooked. Remove the potatoes from the water and set aside to cool, then peel and slice them.
- In another pan, boil the eggs for 15 minutes to be cooked hard. When eggs are cooked, peel and slice them.
- Coat the baking dish with oil and put: - A row of potatoes (be sure to salt), a row of sausages, a row of eggs (be sure to salt) and coat with sour cream - A row of potatoes (be sure to salt), a row of sausages, a row of eggs (be sure to salt) and coat with sour cream - A row of potatoes (be sure to salt) and coat with sour cream
- Place in oven and bake for 35-40 min at 200 C.
- Serve Rakott Krumpli with pickled cucumbers or beetroot or any other pickled vegetable.

Steps:
- Grease a shallow casserole dish with the butter or margarine.
- Boil potatoes in their skin until tender, but still firm.
- Pre-heat oven to around 200 degrees celsius.
- Layer the potatoes, eggs and ham in the casserole dish, finishing with ham on the top.
- Place polish sausage around edge of dish, if using.
- Cover with sour cream.
- Put bacon or speck on the top.
- Bake for around 15-20 minutes.
- Enjoy!

Steps:
- Boil peeled potatoes until fork inserted tells you it's cooked.
- Boil eggs until hardboiled.
- Slice potatoes to form medallions.
- Slice eggs.
- In casserole dish, layer butter, sour cream, potatoes and eggs until used up.
- Sour cream should be top layer.
- Cover, put in 350 degree oven for about 1 hour or until brown.
- Add salt to taste and enjoy.
- Best if eaten fresh.
