Hungarian Crepes: Palacsinta image

Provided by Food Network

Categories     dessert

Time 1h30m

Yield 12 to 14 servings

Number Of Ingredients 7

3 eggs
1 1/4 cups all-purpose flour
1 cup milk
1 teaspoon sugar
Pinch salt
1 cup carbonated water
Butter, for cooking pancakes

Steps:

  • Mix eggs, flour, milk, sugar and salt to make a smooth pancake dough. Let the dough rest for 1 to 2 hours.
  • Stir in the carbonated water at the last moment, just before cooking the pancakes.
  • Heat an 8-inch frying pan. When the pan is hot, add 1/4 teaspoon of the butter. Let butter melt and swirl to cover the bottom of the pan.
  • Pour a ladle of the batter into the pan and gently tip and twist the pan so that the batter covers the entire bottom of the pan. When the top of the batter bubbles, turn the pancake over and cook for 4 or 5 seconds longer. Remove the pancake. Continue until the batter is all cooked; add butter before cooking each pancake.
  • Serve by spreading raspberry jam, cocoa mix, or your favorite filling and roll up the pancake, serve with fresh berries.

GRANDMA IRENA'S PALACSINTA (HUNGARIAN CREPES)

Grandma Irena's Palacsinta (Hungarian Crepes) image

My Hungarian grandmother has made this for us ever since we were kids...certainly not health food but maybe one of the tastiest things you'll ever eat! Make it for breakfast or dessert.

Categories     Breakfast and Brunch     Crepes     Sweet

Time 9h10m

Yield 5

Number Of Ingredients 15

2 cups all-purpose flour
2 eggs
1 cup milk
1 cup soda water
½ cup vegetable oil
1 pinch salt
1 cup chopped almonds
½ cup white sugar
¼ cup milk
¼ teaspoon vanilla extract
1 ½ teaspoons rum
¼ cup water
½ cup white sugar
½ cup chopped bittersweet chocolate
2 tablespoons margarine

Steps:

  • Combine the flour and eggs and mix until smooth. Add the milk, soda water, vegetable oil, and salt and mix to combine; refrigerate the batter overnight.
  • To make the pancakes, heat a lightly greased frying pan over medium heat. Remove the batter from the refrigerator and mix well. Pour 1/4 cup of the batter into the pan and cook the pancake for about one minute. Flip it over and cook for another minute, or until golden brown. Remove the pancake from the pan and place it on waxed paper. Repeat with the remaining batter, stacking the pancakes while keeping them separate with waxed paper.
  • To make the filling, combine the chopped almonds, 1/2 cup sugar, milk, vanilla extract, and rum (if desired) in a saucepan. Cook and stir over low heat until the sugar is dissolved and the mixture is creamy. Allow it to cool slightly before filling the pancakes.
  • For the chocolate topping, combine the water, 1/2 cup sugar, and chocolate in a saucepan and cook over low heat just until the chocolate melts. Remove the pan from the heat and add the margarine, stirring until melted and combined.
  • Spread 1 heaping tablespoon of almond filling onto each pancake, rolling them up and placing them on a platter. (You will have 10 to 15 total, depending on their size.) Pour the chocolate topping over the platter of rolled pancakes. If desired, warm the platter in a microwave for about 30 seconds before serving.

PLACHINDA

Plachinda image

This plachinda recipe-the Moldovan flatbreads filled with fresh cheese, spring onions, and dill-also includes tangy sorrel for extra flavor.

Provided by Olia Hercules

Yield Makes 4

Number Of Ingredients 13

1 cup kefir
½ Tbsp. sunflower oil
½ Tbsp. white wine vinegar
½ Tbsp. granulated sugar
½ tsp. salt
350 g (11½ oz) all-purpose flour, plus extra for dusting
1 scant tsp. baking soda
400 g (13 oz) feta cheese, crumbled
50 g (2 oz) sorrel or fresh spinach leaves, finely chopped
4 spring onions, finely chopped
2 Tbsp. chopped dill
Scant ¼ cup sunflower oil
¼ cup sunflower oil

Steps:

  • Place the kefir, sunflower oil, vinegar, sugar and salt in a large bowl and mix together well with a fork.
  • Sift the flour with the baking soda, then sift again into the kefir mixture and mix in. The dough should be soft and pillowy. If it's still slightly sticky, heavily flour your work surface and start kneading the dough, incorporating more flour into it. The dough should stop sticking to your hands when it's ready but also remain soft.
  • Divide the dough into 4 pieces. Flour the work surface really well and roll out each piece of dough, one by one, into a 20 cm (8 inch) diameter circle.
  • For the filling, mix the feta, sorrel or spinach, spring onions and dill together, making sure that the feta is finely crumbled.
  • Moisten the surface of one dough circle with 1 scant tablespoon of the sunflower oil and sprinkle one-quarter of the filling over the whole surface.
  • Next, take one edge of the circle and fold it into the middle. Now bring the edge of the first fold into the middle and fold again. Repeat until you have created about 7 folds (fewer won't seal the filling in properly). The dough should resemble a flattened moneybag.
  • Make sure all the edges are firmly pinched together in the middle of the flatbread, flour the top lightly and gently flatten the moneybag with your rolling pin.
  • Repeat with the remaining dough circles and filling.
  • Heat the ¼ cup sunflower oil in a frying pan until hot and gently lower in each flatbread, one at a time. The first one will take about 3 minutes on each side, but as the oil heats up, the next ones will take about 2-2½ minutes on each side. You can alternatively brush them with oil and cook them under your broiler. The result will be somewhat different but still delicious.

BLADCHINDA

Bladchinda image

Blatchinda is also spelled Blachinda, Plachinda, Platchenda, Platchinta, Blachinde, Blagenda, Bladginda, Plachenden. Alfred Opp, who was born in Bessarabia, said they spelled it "Platschenta" in reference to "Platchta" or blanket. These, of course are rounds of (pie) pastry dough filled with a pumpkin/sugar/cinnamon mixture or even a fried onion mixture, the pastry is folded shut and edges crimped, and these are baked in the oven.

FAMILY PALACHINKA RECIPE

Family Palachinka Recipe image

Make and share this Family Palachinka Recipe recipe from Food.com.

Provided by RobbieK

Categories     Dessert

Time 1h50m

Yield 16-24 serving(s)

Number Of Ingredients 9

6 eggs
1 quart milk
3 cups sugar
96 ounces cottage cheese
8 ounces Philadelphia Cream Cheese
8 egg yolks
16 ounces sour cream
4 egg whites
2 3/4 cups flour

Steps:

  • First you will make the filling.
  • Mix 2 48 oz. (large) small curd cottage cheese, 1 cup sugar, 1 8 oz. Philadelphia Cream Cheese, and 8 egg yolks together to make the filling.
  • Next you will make the batter.
  • Beat 5 eggs until frothy.
  • Add in 1 quart milk (slowly).
  • Pour in 1 cup sugar.
  • Add 2 3/4 cups flour.
  • Grease 9-inch frying pan with butter.
  • Pour 1/2 cup batter into heated 9-inch frying pan and make a thin pancake (Crépe). This will cook quickly.
  • Next you will construct the crépes and fill them.
  • Fill crépes with the filling carefully. You don't want too little filling and you don't want too much. I suggest anywhere from 1/2 to 3/4 cups filling.
  • Roll the crépe carefully so as not to spill any filling.
  • Place crépes in glass pan for cooking.
  • Now add topping.
  • Combine 16 oz. sour cream, 1 cup sugar, 4 egg whites, and 1 egg.
  • Mix and pour over rolled crépes.
  • Finally you will cook and chill.
  • Cook for 1 hour at 350°F.
  • Once done, chill for about 1 hour or until cold. If it happens to be winter, it works well to wrap the pan in foil and put on a table.
