PINA COLADA MOLDED SALAD
My gelatin ring gets a tropical twist from coconut, pineapple and macadamia nuts. It's a wonderful anytime treat. Now that I'm retired from teaching, I have more time for kitchen experiments. -Carol Gillespie, Chambersburg, Pennsylvania

Steps:
- Drain pineapple, reserving juice; set the pineapple aside. In a large saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Cook and stir over low heat until gelatin is completely dissolved, about 2 minutes., Remove from the heat; stir in the cream of coconut, sour cream, soda and reserved pineapple juice. Transfer to a large bowl. Cover and refrigerate for 30 minutes or until thickened, stirring occasionally. , Fold in the flaked coconut, nuts and reserved pineapple. Pour into a 6-cup ring mold coated with cooking spray. Cover and refrigerate for 3 hours or until firm. , To serve, unmold salad onto a platter. Fill the center with pineapple chunks and shredded coconut if desired.

- Add the pineapple chunks, coconut milk, rum, shredded coconut, coconut extract and ice cubes to a blender and process until smooth and creamy. Pour into glasses and garnish each with a pineapple wedge.

Elevate the traditional piña colada by blending fresh pineapple, coconut cream and limes and serving it in an unexpected way. - Blend pineapple rings and coconut cream until fairly smooth. Add lime zest and juice. Blend until mixed.
- Pour mixture into 10 popsicle molds that each hold about 1/3 cup (80 mL). Freeze until firm.
- Pour Crabbie's ginger beer into a chilled rocks glass. Stir in rum. Add one prepared popsicle. Repeat immediately with remaining pops, Crabbie's and rum if you're serving a crowd, or save the pops for yourself for another day.
- Tip: For a fun tropical flair, garnish with Tiki-inspired elements like umbrellas or edible flowers.

VIRGIN PIñA COLADA

Steps:
- To make a mock rum syrup, put the dark brown muscovado sugar and 200ml water in a saucepan, stir well and heat gently until the sugar has dissolved. Add a few strips of skin from the pineapple, add the black peppercorns, cloves and a cinnamon stick, then bring to the boil. Turn off the heat and leave to infuse until cold. Strain into a jug and set aside in the fridge until needed. Will keep for up to three days.
- Pour the pineapple juice into a tall glass, and add the coconut milk and lime juice. Stir gently. Fill up the glass with a handful ice then slowly add 25ml of the syrup so it sinks to the bottom. Garnish with pineapple leaves and a tinned cherry.

OLD FASHIONED PINA COLADA
Pina Colada means "strained pineapple." Our modern Pina Colada relies on coconut milk or coconut cream and is overly sweet and heavy. Before the 1950s Pina Coladas were very different. This version is light and not too sweet. I made it with Goya canned coconut water. Next time I will invest in an actual coconut and I think it will be even better. If you use canned pineapple, you will need to use a couple of tablespoons of the liquid to sweeten the cocktail.

- Place pineapple pieces in a resealable plastic bag, laying them flat. Freeze until solid, at least 3 hours.
- Shake cream of coconut and coconut milk in their cans before measuring. Purée pineapple, cream of coconut, coconut milk, white rum, lime juice, and 3 cups ice (about 15 oz.) in a blender until smooth. - If using fresh or drained canned pineapple, arrange in a single layer on a rimmed baking sheet lined with parchment paper, or in a ziplock bag, and freeze until firm, about 1 hour.
