BUDDY'S QUICK PIZZETTAS

- Preheat the oven to 240°C/475°F/gas 9 (full whack) or as hot as it will go. Place 2 large baking trays in to heat up.
- Place the flour in a large bowl with a small pinch of salt, 1 tablespoon of olive oil and the yoghurt. Mix well with a spatula until you can't move it anymore, then use your clean hands to form it into a dough. Turn onto a board and knead for a few minutes until smooth. Plop it back into the bowl, cover with a cloth and leave to one side while you make your sauce.
- Peel and finely slice the garlic and place in a medium pan on a medium heat with 1 tablespoon of oil. Cook for 1 minute, then pour in the tomatoes. Use a potato masher to squash everything down to make a lovely smooth sauce. Cook for 10 minutes, or until thickened, then tear in most of the basil, season to perfection and set aside.
- Now for the fun bit. Place your dough on a flour-dusted surface and divide into 8 pieces. Line up all your toppings so they're ready to go: finely chop the red chilli and grate the Cheddar and Parmesan cheeses. Pick the remaining basil leaves (and finely chop, if you like), thinly slice the mushrooms. and tear the ham into small pieces. Roll the pieces of dough into thin rounds, stacking them up between sheets of greaseproof paper as you go to stop them sticking.
- Carefully remove the baking trays from the oven (get an adult to help you with this bit!). Transfer your pizza bases to the hot trays and, working quickly, spoon over the tomato sauce over each base, spreading out with a spoon. Tear over the mozzarella and add your favourite toppings. Pop the trays back in the oven and cook for 10 minutes, or until the bases are crispy and the cheese is bubbling. Slice into triangles and serve with a side salad.

WALLA WALLA SWEET ONION & CHANTERELLE PIZZA
Not your everyday pizza. If you can't find chanterelles, use cremini or portabella mushrooms-cooked they are fairly close in flavor. This recipe will make one large pizza or 2 medium, my pan is 16 inches.

- Dough-in your food processor add yeast, sugar and warm water.
- Let stand for 10 minutes.
- Add 2 tablespoons extra virgin olive oil, salt and 2 cups flour.
- Pulse 5 or 6 times until well incorporated.
- Add 1/2 cup of the remaining flour-pulse 5 or 6 times. Set remaining flour aside for rolling.
- Turn dough out onto counter-knead about 10 times to form into a ball.
- Place 1 tablespoon extra virgin olive oil into a large mixing bowl, add the dough ball, give it a good toss to cover dough with oil.
- Cover bowl with a clean tea towel and set in a warm spot until doubled in size. This is going to take around 30 minutes.
- While the dough is rising preheat oven to 450 degrees. You want it HOT.
- In a large skilled over medium heat sauté onions for about 5 minutes, stirring often.
- Add sliced mushrooms, sauté for another 5 minutes, stirring often.
- Stir in thyme, remove from heat and set aside. Do not cover your onion/mushroom mixture-they will sweat to much if you do.
- In a medium bowl squeeze out your roasted garlic and mash well with 1/4 cup extra virgin olive oil. You want a paste that is still a little fluid so add EVOO until it's spreadable.
- Flour your counter well.
- At this point it's up to you. We like a thin crust so I roll my dough out onto the counter, punch it down, divide, and take 1/2 putting it into a oil lined freezer bag to use for another night. If you like a medium crust use the whole recipe.
- Roll dough into a large circle, making sure to run a spatula under it from time to time so it doesn't stick to the counter.
- Once you have your dough rolled out sprinkle pizza pan with cornmeal.
- To transfer dough to your pan I find it easiest to simply roll the dough over the rolling pin, then unroll over the pan.
- Tuck under any dough that's hanging over the rim of your pan.
- Evenly spread your roasted garlic and olive oil blend over top of your dough.
- Evenly spread your onion-mushroom mixture over the garlic spread.
- Layer on the cheese, starting with the smoked provolone, then the mozzarella.
- Bake for 15 minutes in your preheated oven. We like to broil ours for an additional 3 to 4 minutes so the top is nicely browned-up to you.
- Remove from oven-let stand for 5 minutes, cut and serve.
WALLA-WALLA ONION CASSEROLE
Here in Washington state we are lucky to get Walla-Walla onions for a short time and this make a nice busy day casserole. I'm sure you could use any sweet onion and get the same taste. We serve it with boiled Kielbasa and a simple salad.

- Boil onion chunks for 15 - 20 minutes; drain and rinse well.
- Melt butter in saucepan on med.
- Stir in flour, broth and milk, stirring until thickened.
- Add onions, salt and pepper.
- Place onion mixture in a 1-1/2 quart casserole dish,.
- top with cheese and cracker crumbs.
- Bake at 350°F for 40 minutes.

WALLA WALLA ONION, PINE MUSHROOM FONDUTA
Steps:
- Roasted Walla Walla Onions:
- Preheat the oven to 450°F.
- Cut the very tops (about 1 inch) off the onions and then replace. Make a bed of coarse salt in a small roasting pan. Place the onions on the salt and roast for about an hour, or until soft through.
- When cool enough to handle, scoop out the insides of the onions, leaving the outer two layers intact within the skin. Take care not to scrape out the base of the onions, as the fonduta will leak out the bottom. Finely chop half of the onion innards for the filling. Set aside.
- Pine Mushroom Fonduta:
- In a medium-size sauté pan, heat the olive oil and add the sliced pine mushrooms. Sweat for 5 minutes, then add the flour. Sauté for 1 minute more, then add the Vegetable Stock and cream. Bring to a simmer and add the reserved chopped Walla Walla, thyme, and salt and pepper to taste. Add the day-old sourdough bread pieces. Cook together for 5 minutes to meld the flavours. Add the grated Gruyère, stirring to melt, then remove f rom the heat.
- Assembly:
- Preheat the oven to 450°F. Place the Roasted Walla Walla Onions in a roasting pan, and fill with hot Pine Mushroom Fonduta (if you have extra, it can be served on the side). Top with the grated Gruyère. Roast for 10 minutes, until bubbly.
- Serve with lots of Arctic Sourdough and any extra fonduta that didn't fit in the onions.
