This is a fun and flavorful loaf that will please the palates of those who like pizza. The sauce and cheese really star.-Jim Hopkins, Whittier, California

Number Of Ingredients 8

2 eggs
1 jar (14 ounces) pizza sauce, divided
1 cup shredded mozzarella cheese
1 cup Italian-seasoned bread crumbs
1/4 teaspoon garlic salt
1/8 teaspoon pepper
2 pounds ground beef
1/2 pound bulk Italian sausage

Steps:

  • In a large bowl, beat eggs. Add 3/4 cup of pizza sauce, cheese, bread crumbs, garlic salt and pepper; mix well. Combine beef and sausage; add to egg mixture and mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1-1/4 hours. Drain. Spoon remaining pizza sauce over meat loaf; bake 15 minutes longer or until no pink remains. Let stand 10 minutes before slicing.

1 large egg, lightly beaten
1/2 cup pizza sauce
1/4 cup seasoned bread crumbs
1/2 teaspoon Italian seasoning
1-1/2 pounds ground beef
1-1/2 cups shredded part-skim mozzarella cheese
Optional: Additional pizza sauce and basil leaves

Steps:

  • Preheat oven to 375°. In a large bowl, mix first 4 ingredients. Add beef; mix lightly but thoroughly. Divide into 12 portions; press each onto the bottom and up sides of a greased muffin cup. Add cheese to centers., Bake until meat is cooked through, 15-18 minutes. If desired, top with additional sauce and basil before serving. Freeze option: Freeze cooled meat loaves in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through.

1 (1 1/4 ounce) envelope Lipton Recipe Secrets onion soup mix (1 envelope)
2 lbs ground beef
1 1/2 cups fresh breadcrumbs
2 eggs
1 small green bell pepper, chopped (optional)
1/4 cup water
1 cup ragu old world style pasta sauce, divided
1 cup shredded mozzarella cheese, divided (about 4 ounces)

Steps:

  • Preheat oven to 350°F.
  • In large bowl, combine all ingredients except 1/2 cup Pasta Sauce and 1/2 cup cheese.
  • In 13x9-inch baking or roasting pan, shape into loaf. Top with remaining 1/2 cup Pasta Sauce.
  • Bake uncovered, 50 minutes.
  • Sprinkle top with remaining 1/2 cup cheese. Bake an additional 10 minutes or until done. Let stand 10 minutes before serving.

I'm not crazy about meatloaf, but my husband is. I do however want to eat it when I do make it, so I found this recipe from What's Cooking magazine, tweaked it a bit to suit my taste and they're not half bad.

1 lb lean ground beef
1 (120 g) box Stove Top stuffing mix
2 teaspoons Italian herb seasoning
1/2-1 cup pizza sauce
1 cup Italian cheese blend

Steps:

  • Heat oven to 375.
  • Place beef in bowl along with stuffing mix and seasoning.
  • Mix well.
  • Spray an 8 sectioned muffin tin with non stick spray.
  • Divide the meat mixture into 8 pieces and press the meat into each section.
  • Make an indentation in each and spoon the sauce into each one.
  • Bake 30 minutes or until done.
  • Divide the cheese evenly over the top of each muffin and return to the oven to melt.
  • Remove and let stand a few minutes so they are easier to take out.

2 slices firm white bread
cooking spray
1 cup finely chopped onion
1/3 cup bottled roasted red pepper
1/4 cup shredded part-skim mozzarella cheese
1 1/2 teaspoons commercial pesto sauce
3/4 teaspoon salt
3/4 lb ground turkey breast (or ground beef)
3/4 lb ground round
1 large egg
1/3 cup pizza sauce

Steps:

  • Preheat oven to 375°.
  • Place bread slices in a food processor, and pulse 10 times or until fine crumbs measure 1 1/4 cups.
  • Heat a medium nonstick skillet coated with cooking spray over medium-high heat. Add onion; sauté 4 minutes or until lightly browned. Place onion in food processor. Add bell peppers, and pulse 10 times or until the bell peppers are chopped.
  • Combine breadcrumbs, onion mixture, cheese, pesto, salt, turkey, beef, and egg. Divide beef mixture into 9 equal portions, shaping each into a (3 x 1-inch) loaf. Place loaves on a broiler pan coated with cooking spray. Bake at 375° for 18 minutes or until lightly browned. Spoon about 1 1/2 teaspoons sauce over each loaf. Bake an additional 10 minutes or until a thermometer registers 160°.

1 cup cracker crumb
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese, divided
1/2 cup chopped onion

1 teaspoon oregano
1/4 teaspoon pepper
2 lbs ground beef

Steps:

  • Mix eggs, 3/4 cup pizza sauce, crumbs, parmesan, half the mozzarella, onion, green pepper, salt, oregano, and pepper.

1 lb extra lean ground turkey
3/4 cup low-sodium spaghetti sauce
1/4 cup shredded part-skim mozzarella cheese
1/2 cup chopped green pepper
1/4 cup minced onion
1 egg

Steps:

  • Preheat oven to 350 degrees F. Lightly grease 9 inch pie plate with vegetable oil.
  • Pat turkey into pie plate.
  • Put meat into bowl, mix egg and vegetables into turkey.
  • Cook turkey at for 45 minutes.
  • Take out loaf and top with spaghetti sauce and cheese.
  • Return turkey to the oven and heat until cheese is melted, about 10 minutes. Take out loaf, and take the temperature with a meat thermometer. Once it is 165 degrees in the center, it is done.

A twist on meat loaf. Make-ahead meat loaves. This recipe could probably be used for OAMC successfully. This is a kid pleaser recipe.

1 (26 ounce) jar pasta sauce, divided
1 1/2 cups herb seasoned stuffing mix
2 eggs, beaten
1 medium onion, chopped
1/4 cup green pepper, chopped
1 teaspoon dried oregano
1/4 teaspoon garlic powder
1 1/2 lbs ground beef
4 ounces mozzarella cheese, cut into 6 pieces

Steps:

  • Combine 3/4 cup pasta sauce, stuffing, eggs, onion, green pepper, oregano and garlic powder; add beef and mix well.
  • Shape firmly into six loaves, placing one piece of cheese in center of each loaf. Place loaves in baking pan.
  • Bake at 400 degrees for 30 minutes or until no pink remains and meat thermometer reads 160 degrees.
  • Cool slightly. Wrap and refrigerate up to 3 days. Cover and refrigerate remaining pasta sauce.
  • To reheat: Place meat loaves and remaining pasta sauce in a skillet.
  • Cover and heat through. You can also make bake these and serve the heated sauce with the meat loafs immediately after, if you want.
