This is a light and fluffy dessert salad based on pistachio pudding; the pudding is made lighter with the addition of whipped topping. Add an extra can of mandarin oranges, if you like.

1 (20 ounce) can crushed pineapple with juice
1 (3 ounce) package instant pistachio pudding mix
1 (12 ounce) container frozen whipped topping, thawed
2 large bananas, sliced
2 cups miniature marshmallows
1 (15.25 ounce) can fruit cocktail, drained
1 (11 ounce) can mandarin oranges, drained

Steps:

  • Dump instant pudding into a large mixing bowl. Add pineapple, and mix well. Mix in whipped topping. Stir in bananas, marshmallows, fruit cocktail, and mandarin oranges. Cover, and refrigerate until thoroughly chilled.

1 package (1 ounce) sugar-free instant pistachio pudding mix
1 can (15 ounces) unsweetened fruit cocktail, drained
1 can (11 ounces) mandarin oranges, drained
1 cup reduced-fat whipped topping

Steps:

  • Drain pineapple, reserving juice. In a bowl, whisk together reserved juice and pudding mix for 2 minutes (mixture will be thick). Stir in the pineapple, fruit cocktail and mandarin oranges. Fold in whipped topping. Cover and refrigerate until serving.

The only Energy Ball recipe you'll ever need, plus six no-bake energy ball flavors! Start with this easy base recipe, then add any of your favorite mix-ins.

1 1/4 cups rolled oats (you can also swap quick oats or a blend of half quick, half old fashioned)
2 tablespoons "power mix-ins"
1/2 cup nut butter of choice (peanut butter is my go-to)
1/3 cup sticky liquid sweetener of choice (honey or maple syrup)
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/2 cup mix-ins (see below for flavor options)
Any nut butter (honey, 1/2 cup chocolate chips)
Peanut butter (honey, 3 tablespoons chocolate chips, 3 tablespoons chopped peanuts, 2 tablespoons raisins)
Almond butter ( or cashew butter, honey, 1/4 cup dried cranberries, 1/4 cup white chocolate chips)
Replace 1/2 cup of the oatmeal with 1/2 cup unsweetened coconut flakes
Any nut butter (any sweetener, 1/2 cup mini chocolate chips, ADD 2 tablespoons cocoa powder)
Almond butter ( or cashew butter, maple syrup, 1/2 cup raisins, ADD 1/4 teaspoon cinnamon)

Steps:

  • Place all of the ingredients in a large mixing bowl: oats, power mix-ins, nut butter, sweetener, vanilla extract, salt, mix-ins, and any other spices you'd like to add. Stir to combine. If the mixture seems too wet, add a bit more oats. If it's too dry, add a bit more nut butter. It should resemble a somewhat sticky dough that holds together when lightly squeezed. Place the bowl in the refrigerator for 30 minutes to set (this will make the balls easier to roll later on).
  • Remove the bowl from the refrigerator and portion the dough into balls of desired size. (I use a cookie scoop to make mine approximately 1 inch in diameter). Enjoy!

  • Put the cherries, apricots, raisins, and dates through a food grinder using the medium-grind blade. Add to the bowl with half of the pistachios. Add the orange juice and creme de cassis to the mixture and combine, using your hands, until the liquid is evenly distributed throughout. Shape the mixture into 24 walnut size balls and roll them in the remaining chopped pistachios. Store in an airtight container in the refrigerator for up to 1 week.
