200 g bittersweet chocolate (organic preferred)
150 g butter
150 g icing sugar
150 g almonds, ground
6 egg yolks
6 egg whites, whipped
1 tablespoon coffee, hot & black
1 tablespoon rum

Steps:

  • Preheat oven to 350*. Break the chocolate into small pieces and melt it with the rum and coffee on top of a double boiler.
  • Put the butter, almonds and icing sugar into a pan and stir over "low" heat until the butter melts and the ingredients are well-mixed. Stir in the chocolate mixture.
  • Remove from heat and let cool slightly. Stir in the egg yolks thoroughly ( if the mixture is not cool enough the eggs will separate) and then fold in the egg whites.
  • Turn into a 9" springform pan that you have coated with cooking spray. Bake @ 350* for 45-60 minutes. The cake will still be moist in the middle when done, and is very "fragile" due to the absence of flour.

1 orange (large)
4 -5 eggs
200 g caster sugar
300 g almond meal
1 teaspoon baking powder
caster sugar (for dusting)
icing sugar (for dusting after baking)
butter (or oil spray for greasing pan.)

Steps:

  • Place orange (unpeeled)in boiling water for 2 hours.Remove and allow to cool.This can be done ahead of time.
  • Preheat oven to 180c.
  • Break eggs into a blender.add caster sugar and blend together.
  • Cut up orange (unpeeled) and place into egg mix,and blend together to a smooth consistency.
  • Add the almond meal and baking powder and blend.
  • Grease baking pan and dust with caster sugar.
  • Pour batter into the pan and sprinkle caster sugar on top and bake for 1 hour or until top is golden brown.
  • Dust with icing sugar to serve.(you can also have it with cream).

1 (18 ounce) package devil's food cake mix
1 (3 ounce) package instant pistachio pudding mix
3/4 cup vegetable oil
1/2 cup almond liqueur (Disaronno)
1/8 cup water
4 large eggs
1/4 cup almond liqueur
1/4 cup almond liqueur
2 cups powdered sugar
1/2 cup toasted sliced almonds or 1/2 cup crushed pistachios

Steps:

  • Preheat oven to 350 degree.
  • Grease and flour a bundt pan.
  • Combine first 6 ingredients in a mixing bowl and beat on medium speed for 3 minutes.
  • Pour into prepared pan and bake for 40 to 50 minutes until toothpick comes out clean.
  • Cool at room temperature for 15 minutes.
  • Invert onto rack and brush 1/4 cup almond liqueur over cooled cake.
  • Let sit for 1 hour.
  • Meanwhile mix powdered sugar with enough almond liqueur to make a nice glaze.
  • Adding more or less sugar.
  • Pour on cooled cake and garnish by pressing in almond slices and serve.

75 g unsalted butter (2 3/4 ounces)
200 g ground almonds (7oz)
200 g sugar (7oz)
150 ml single cream (5 fl oz)
8 almonds, chopped
10 pistachio nuts, chopped

Steps:

  • Melt the butter in a heavy based saucepan. Stir well.
  • Add in the ground almonds, sugar and cream . Stir well. Reduce heat and stir constantly for 10-12 minutes, scraping the base of the saucepan.
  • Increase the heat until the mixture turns a little darker in colour.
  • Transfer the almond mixture to a large, shallow serving dish and smooth the top with the back of a spoon. You want the mixture to be around 1/4 inch thick as a minimum.
  • Decorate the top of the dessert with the chopped almonds and pistachio nuts.
  • Leave to set for 1 hour and then cut into diamond shapes and serve cold.

1 1/2 cups pistachios, weighed without shells (225 grams)
1 cup sugar
3 large eggs, separated
2 teaspoons gratted lemon zest
1/3 cup cornstarch (cornflour)
1 teaspoon baking powder, gluten-free if required for diet
1/2 teaspoon baking soda (bi-carb soda)
1/4 teaspoon salt

Steps:

  • Preheat your oen to 350°F or 180°C.
  • Well grease a 9 inch/ 23 cm springform round baking pan.
  • Boil a pot of water and then plunge the pistachios in for a quick 30 seconds. remove the pistachios- drain and then rub dry with a clean teatowel/kitchen towel. Peel off the pistachios 'skins'.
  • Place the cleaned pistachios and sugar in a food processer and chop finely.
  • Transfer the mix to a large bowl and add the egg yolks. lemon zest, baking powder, cornstarch, baking soda (bicarb) and the salt. Stir to combine.
  • In a seperate bowl, beat the egg whites until stiff peaks form.
  • Fold the egg whites into the pistachio mixture.
  • Spoon the batter into the prepared pan.
  • bake 20-30 mins or until cooked through. you can use a toothpick or fine skewer to check it comes out clean. Place back in the oven for up to another 10 minutes if required.
  • Cool the cake in the tin for 15 minutes. Remove from the tin and then cool on a wire rack.

I have tried many citrus cakes and finally found one that is awesome in texture and flavour. This is the most amazing, simple, foolproof cake. I have made it many, many times, and it has never failed. Sometimes I use lemons, or limes and weigh them to ensure they equal the orange volume/weights. I used it as a gluten free option at our daughter's wedding along with her wedding cake. ENJOY!!! Kiwi Trish

3 large oranges
500 g white sugar
6 large eggs
500 g almond meal

Steps:

  • Bring a pot of water to the boil, add the oranges, cover and simmer for one hour.
  • Stain off the water. Cool the oranges. If you are in a hurry, I suggest you partly cool them -- (this will still work).
  • While they are cooling, food process the sugar with the eggs until the sugar is dissolved and pour into a bowl.
  • Cut the oranges in half and de-seed them and put the oranges (with peel and pith) into a food processor and pulp until reasonably smooth.
  • Pour the pulp into the sugar/egg mix and add the almond meal. Gently mix together.
  • Pour mix into baking paper lined 24 - 26cm springform tin and bake for 50 - 60 minutes at 185°C.
  • Serve with creme fraiche, whipped cream, or vanilla ice-cream -- makes an awesome dessert. You could drizzle a little citrus liqueur around the plate.
  • Added thoughts -- This cake DOES NOT need any syrup poured over it.
  • NB.Simply double this recipe to get two large cakes. It is just as successful.
  • Occasionally, I will add a slurp of Grand Marnier, Contreau, or Galliano; however, try it plain initially.

250 g pistachios
200 g almond meal (ground almonds)
2 teaspoons freshly-grated nutmeg
200 g raw sugar
200 g dark brown sugar
125 g unsalted butter, softened
2 eggs
1 egg yolk
250 g Greek yogurt
honey and extra yoghurt, to serve

Steps:

  • Preheat oven to 180°C Grease and line a 24 cm round cake tin.
  • Place 200g pistachios in a blender and pulse until a fine crumb forms. Add the blended pistachios, almond meal, nutmeg, sugars and butter to a large bowl. Rub the mixture together with your fingertips to incorporate.
  • Press half the mixture into the base of the lined tin.
  • Add to the remaining mixture in the bowl - the eggs, yolk and yoghurt. Mix to combine.
  • Add the 2nd layer of cake mixture to the tin and press inches.
  • Scatter the cake with the remaining pistachios.
  • Bake for 35 minutes, until golden, then cool on a wire rack.
  • Serve with honey and extra yoghurt.
