Your kids will love these and they don't need to know they are healthy. Each pop has about 160 calories and includes fruit and yogurt. Good low cal snack for mom and dad too. I guessed the freezing time. It may be different for your freezer.

2 cups plain yogurt
1/2 cup canned crushed pineapple (packed in its own juice instead of packed in syrup)
1 (12 ounce) can pineapple juice concentrate (concentrate, thawed) or 1 (12 ounce) can pineapple-orange juice (concentrate, thawed)

Steps:

  • Drain the can of crushed pineapple so all the juice runs out.
  • Put all the ingredients in a medium-sized bowl and mix them together.
  • Spoon the mixture into the paper cups. Fill them almost to the top.
  • Stretch a small piece of plastic wrap across the top of each cup.
  • Using the popsicle stick, poke a hole in the plastic wrap. Stand the stick straight up in the center of the cup.
  • Put the cups in the freezer until the mixture is frozen solid.
  • Remove the plastic wrap and peel away the paper cup and enjoy.

I used to eat these all the time when I was little. Healthy and yummy, this is a good alternative for when kids want something sweet or something cold. They're still great especially for hot weather and for a healthy snack. Any kind of yogurt can be used (my favorite is Dannon's Lemon) or juice (I like apple or orange). Much better than store-bought or popsicles that contain Kool-Aid. And don't save them for the kids! They're great on-the-go snacks for everyone! (cook time is a freeze-time estimate) Use a popsicle mold (availiable at places like Target, Walmart and some groceries) or paper cups.

  • Peel, core and cut pineaple into rough chunks. Quarter and destone your peach. Combine 40g of sugar, pineapple and peach in a small saucepan.
  • Place the saucepan over medium-high heat and bring to a boil. Lower the heat and cook for 10 - 15 minutes, stirring often, until the frut is thick and delicious. Remove from heat and let cool to room temperature.
  • Whisk together yogurt and the remaining 10g of sugar. Refrigerate until needed. Using hand blender, roughy blend fruit jam. Pour a spoonful of yogurt onto the bottom of each mold, then a spoonful of pineapple peach jam. Continue layering yogurt, pineapple peach jam until the molds are full. Tap the molds lightly agains the counter to remove any air between the layers.
  • Add a wooden sticks into each mold and place the popsicles in the freezer. Freeze until solid, for at least 8 hours.
