This Bread Pudding contains all the wonderful fruity flavors of the traditional Pineapple Upside Downcake, but in bread pudding form! It has a caramelized top layer with a super moist, buttery, melt-in-your-mouth interior.

1 cup brown sugar (packed)
1/2 cup butter (I don't recommend substituing margarine or coconut oil in this recipe)
1 pound French bread (you will get about 10 cups of bread cubes once they're cut)
12 ounces evaporated milk
14 ounces sweetened condensed milk
3 large eggs (at room temperature)
1 tablespoon vanilla (yes, tablespoon)
1/2 teaspoon ground cinnamon
1 cup sugar
1/8 teaspoon salt
7 slices pineapple
7 maraschino cherries

Steps:

  • Mix evaporated milk and sweetened condensed milk together.
  • Beat eggs, add to milk and stir.
  • Add vanilla, sugar, cinnamon, and salt to milk mixture and stir.
  • Pour milk mixture over cubed bread in a large bowl.
  • Allow to sit 10 minutes.
  • Wrap heavy aluminum foil around bottom of 10 inch spring-form pan. Heat oven to 375 degrees and melt butter in oven in the spring form pan. Remove from oven and sprinkle brown sugar evenly over butter.
  • Drain pineapples and cherries. Place one slice of pineapple in center of pan over butter and brown sugar. Place other pineapple rings around the center one. Place a cherry inside each pineapple ring. (You can fill every gap with a cherry if you wish.)
  • Carefully, spoon breading mixture over pineapple slices. Press firmly down.
  • Bake in a 375° oven for 40 to 45 minutes. Center will be set and bread golden brown.
  • Allow cake to cool 10 minutes in pan before inverting on a serving platter.

1/2 cup salted butter melted
1/2 cup brown sugar firmly packed
slices one small can of pineapple (6-8 slices in it with juice)
maraschino cherries
3 eggs beaten
1 can of condensed milk 300ml
3/4 cup pineapple juice
1 teaspoon vanilla
8 cups of 1/2 inch cubes of white bread day old is best

Steps:

  • Combine 1/4 cup of the melted butter with the brown sugar, then sprinkle over the bottom of an 8x8 baking pan evenly.
  • Arrange the pineapple slices on the bottom, as many as you like. I like to cut the slices in half so there is more pineapple on top. Place maraschino cherries between slices.
  • Whisk together the eggs, condensed milk, pineapple juice, vanilla and remaining butter. Fold in the bread cubes. Let sit for 10-15 minutes so that the mixture soaks into the bread.
  • Pre-heat your oven while waiting to 350°F.
  • Bake in the oven for 30-35 minutes, until the top is well-browned and the middle is cooked.
  • Remove from the oven. Run a butterknife along the edge to loosen the sides, then flip onto a serving plate. Serve hot - with a little vanilla ice cream if wanted!

3 tablespoons butter, melted
½ cup packed brown sugar
3 apples - peeled, cored and sliced
½ cup shortening
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour melted butter into the bottom of an 8 inch square pan. Tilt the pan so that it is evenly coated. Sprinkle the brown sugar over the butter. Arrange the apple slices to cover the brown sugar, set aside. In a medium bowl, cream together the shortening and white sugar. Beat in the egg and vanilla until light and fluffy. Combine the flour, baking powder, and salt, stir into the creamed mixture alternately with the milk. Pour into the baking pan so that the fruit is completely covered.
  • Bake for 40 to 50 minutes in the preheated oven, until a toothpick inserted, comes out clean. Immediately invert onto a serving plate. Serve warm with ice cream or sauce.

50g softened butter
50g light soft brown sugar
7 pineapple rings in syrup, drained and syrup reserved
7 glacé cherries
100g softened butter
100g golden caster sugar
100g self-raising flour
1 tsp baking powder
1 tsp vanilla extract
2 eggs

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • For the topping, beat 50g softened butter and 50g light soft brown sugar together until creamy. Spread over the base and a quarter of the way up the sides of a 20cm round cake tin. Arrange 7 pineapple rings on top (reserving the syrup for later), then place 7 glacé cherries in the centres of the rings.
  • Place 100g softened butter, 100g golden caster sugar, 100g self-raising flour, 1 tsp baking powder, 1 tsp vanilla extract and 2 eggs in a bowl along with 2 tbsp of the reserved pineapple syrup. Using an electric whisk, beat to a soft consistency.
  • Spoon into the tin on top of the pineapple and smooth it out so it's level. Bake for 35 mins. Leave to stand for 5 mins, then turn out onto a plate. Serve warm with a scoop of ice cream.

1 loaf (16 ounces) sliced white bread
1 can (21 ounces) cherry pie filling
1/2 cup butter, softened
1 cup sugar
5 large eggs, room temperature
2 cups 2% milk
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
3/4 cup semisweet chocolate chips
Sweetened whipped cream, optional

Steps:

  • Place bread slices on ungreased baking sheets. Broil each pan 3-4 in. from heat until golden brown, 1-2 minutes on each side; let cool. BREAD PUDDING:
1 cup whole milk
1 can (14 ounce) can sweetened condensed milk
4 large eggs
1 teaspoon vanilla extract
8 cups (12 ounce) challah bread cut into 3/4" cubes
2 1/2 cups fresh pineapple, chopped
4 tablespoons unsalted butter
1/4 cup packed light brown sugar
GLAZE:
1/3 cup confectioners' sugar
1/2 teaspoon vanilla extract
3 tablespoons melted butter
2 teaspoons whole milk

Steps:

  • Grease the Ninja multipurpose pan with cooking spray and set it aside. Whisk together the milk, condensed milk, eggs, and vanilla in a large bowl until evenly incorporated. Set aside. Melt the butter over medium heat in a large skillet. Add the brown sugar and stir until the sugar dissolves. Add the chopped pineapple and cook, stirring, for 8 minutes, or until lightly brown and all the moisture has evaporated. Place the cubed bread and 1-1/2 cups of the cooked pineapple into the egg mixture and toss. Let the mixture sit for a few minutes until the bread has absorbed all the liquid. Meanwhile, place the remaining cup of cooked pineapple on the bottom of the prepared pan. Pour the bread mixture on top and evenly distribute. The idea of cooking a cake upside down is an old technique that started in the middle ages when cakes were cooked in cast iron skillets. It was easy for the cook to add fruit and sugar in the bottom of the pan and a simple cake batter on top and put it over the fire to cook. Flipping it over onto a plate was a natural way to show the pretty fruit and to let the hot glaze run into the cake as well. The idea of using pineapple dates to soon after 1911 when James Dole of the Hawaiian Pineapple Company had both a machine to cut his pineapples into nice rings and the ability to can them as well. One of the earliest printed recipes for pineapple upside down cake is from a 1924 Seattle fundraising cookbook. The later invention of the maraschino cherry added the necessary color needed to make this cake visually appealing.

1 cup light brown sugar

Steps:

  • Line a dinner plate with paper towels. Lay the pineapple slices on the plate and blot them dry on both sides. Set aside.
  • Lightly butter a 9 inch square baking pan. Combine the butter and maple syrup in a small saucepan over medium heat. When the butter melts, stir in the brown sugar.
  • Bring to a slow boil and cook 30 seconds, stirring. Pour the mixture into the buttered pan. Tilt the pan to spread the mixture around.
  • Lay the pineapple slices in three rows and put a cherry in the center of each ring. Press one pecan half, if using, in each gap between pineapple slices. Set aside.
  • NOTE: If using a round skillet, heat the butter-maple syrup-brown sugar mixture right in the pan. Make a ring of pineapple slices, just touching, with one in the center and proceed with the cherries and pecans.
  • To start the cake portion, preheat oven to 350 degrees F.
  • Using an electric mixer on medium high, cream the butter, gradually adding sugar. Add the eggs, one at a time, beating well after each addition.
  • Beat in 1/3 cup of buttermilk, the molasses and the vanilla.
  • Sift the flour, baking powder, baking soda, salt and cinnamon into a bowl. Add half of the dry ingredients to the creamed mixture and beat until smooth. Add the remaining buttermilk, beat to blend then add the remaining dry ingredients and beat to combine.
  • Scrape the batter over the pineapple slices and smooth with a spoon or spatula.
  • Bake on the center oven rack for 35-40 minutes, until the center of the cake springs back when touched. Put a platter or baking sheet over the pan and carefully invert the cake onto the platter or baking pan. Remove the pan. Wear long sleeves and oven mitts incase the hot glaze leaks out during inversion.
  • Cool for at least 10 minutes before serving.
