PINEAPPLE COCONUT BARS
A crisp shortbread crust is topped with a chewy gooey layer of pineapple and coconut to make these Pineapple Coconut Bars.

Steps:
- Preheat the oven to 350 degrees. Combine the crust ingredients and press the mixture into the bottom of a well-greased or parchment lined 10" square pan. Doubling this recipe will fill a 9x13 pan.
- Bake for 12 minutes (or 15 minutes for a doubled recipe). Remove from the oven and let the crust cool for 10 minutes while preparing the filling.
- Place the pineapple and 1 cup of shredded coconut in a bowl. Sprinkle with flour, brown sugar and salt. Stir to coat. Mix together the eggs, vanilla and lime and stir into the pineapple mixture.
- Pour the filling over the crust and top with the remaining coconut. Bake for 25-27 minutes, until the coconut turns golden brown. Let cool completely before slicing. Enjoy!

Steps:
- In a large bowl, mix together butter, sugar and eggs.
- Beat in flour, baking soda and salt.
- Stir in pineapple.
- Spread into a greased 9x9 square pan.
- Bake at 350 degrees F for 28-33 minutes until done. Cool in pan for 10 minutes.
- Sprinkle with powdered sugar and cut into squares. Serve.

PINEAPPLE SUMMER SLICE (BARS)- NO BAKE
Recipe from the side of a can of 'Golden Circle" crushed pineapple. THis slice can be easily made gluten-free suitable by using gf cornflakes. Makes 20 slices

Steps:
- Combine the crushed cornflakes with the melted butter and mix until the cornflake crumbs are well coated and moist.
- Press 3/4 of the crumb mixture into the base of a 7inch x 11 inch slice tin and them refrigerate whilst preparing the filling.
- Using an electric mixer, beat the cream cheese until soft,.
- Using a low speed, gradually add the condensed milk and the lemon juice. Mix until smooth.
- Fold in the crushed pineapple and then pour the topping over the chilled base.
- Sprinkle the remaining crumbs over the top and refrigerate several hours until firm.
- Slice into 20 squares and serve with whipped cream or thick Greek yogurt if desired.

- In a large heavy saucepan over medium heat combine the peanut butter, corn syrup, brown sugar and white sugar; cook stirring until smooth, then add in vanilla.
- Quickly add in the cereal, chocolate chips and peanuts; mix until combined.

- Blend the ingredients for the base in the food processor, blitz until all ingredients are combined and they reach a smooth dough like consistency. Place the base mixture in a lined baking loaf tin or silicone loaf tin and press down evenly, put in the freezer.
- Wipe the food processor quickly clean with a paper towel then add in the ingredients for the topping. Blitz until smooth.
