Ingredients

1 can (46 ounces) pineapple juice
2 cups spiced rum
1/2 cup fresh lime juice (from 6 to 8 limes)
Lime slices, for garnish

Steps:

In a large pitcher, stir together pineapple juice, spiced rum, and lime juice. Refrigerate until chilled. Serve over ice, garnished with lime slices.

Ingredients

2 1/2 ounces fresh pineapple juice
2 ounces light rum, such as Bacardi Light
1/4 ounce fresh lime juice, plus 1 lime wedge, for serving
1/4 ounce Demerara Sugar Simple Syrup, recipe follows
2 sprigs fresh rosemary
1/2 cup demerara sugar

Steps:

Put the pineapple juice, rum, lime juice, Demerara Sugar Simple Syrup and 1 sprig rosemary in a mixing tin and lightly muddle the rosemary. Add ice, shake vigorously and strain into a glass over fresh ice. Garnish with the remaining rosemary sprig and a lime wedge.
Combine the sugar and 1/2 cup water in a pot over medium-high heat and bring to a boil. Lower the heat to medium and simmer until the sugar dissolves. Let cool completely.

Ingredients

32 ounces (1 quart) chilled pineapple juice (preferably from a carton)
1 cup mint leaves
2 tablespoons sugar
1/4 cup fresh lime juice
12 ounces (1 1/2 cups) gold rum
Garnish: mint sprigs; lime wedges

Steps:

Blend one fourth of pineapple juice with all of mint and sugar in a blender until mint is finely chopped, then pour into a pitcher with lime juice and remaining pineapple juice. Chill until ready to use.
Just before serving, fill tall glasses halfway with ice and add 3 tablespoons rum to each, then top with 1/2 cup juice.

This pineapple rum cocktail is a stunning mixed drink with a tropical flair! Use any type of rum you have (even pineapple rum).

Ingredients

6 large leaves mint
1 teaspoon sugar
2 lime wedges
2 ounces golden (aged), dark, white, or pineapple rum*
1 1/2 ounces pineapple juice
1/4 ounce Maraschino liqueur
2 shakes orange bitters (optional but recommended)
For the garnish: Mint, lime wedges, and/or pineapple slice

Steps:

In a cocktail shaker, muddle the mint with the sugar and lime wedges.
Add the rum, pineapple juice and Maraschino liqueur to the cocktail shaker. Fill it with ice and shake until cold.
Strain the drink into a glass. Shake on the bitters if desired. Garnish with mint, a lime wedge and a pineapple slice.

Ingredients

6 cups (1-inch) chunks cored peeled pineapple (labeled "extra sweet")
12 oz (3/4 cup) amber rum such as Bacardi
3 oz (6 tablespoons) Cointreau or other orange-flavored liqueur
1 1/2 tablespoons fresh lime juice
3/4 cup superfine granulated sugar
6 cups ice cubes

Steps:

Purée 2 cups pineapple chunks, 1/4 cup rum, 2 tablespoons Cointreau, 1/2 tablespoon lime juice, 1/4 cup sugar, and 2 cups ice in a blender at high speed until very smooth, about 1 minute. Transfer to a large pitcher, then make 2 more batches in same manner, transferring to pitcher. Serve immediately.
