COLE SLAW WITH PECANS AND SPICY DRESSING



Cole Slaw with Pecans and Spicy Dressing image

1 head napa or savoy cabbage, shredded
4 carrots, shredded
2 Granny Smith apples, thinly sliced
1 medium red onion, thinly sliced
1 cup pecans, toasted and chopped
Leaves from 1 bunch fresh mint, for garnish
1 tablespoon Dijon mustard
1 teaspoon sugar
1 teaspoon ground chipotle
3/4 cup mayonnaise
1 lemon, juiced
Kosher salt and freshly ground black pepper

Steps:

  • Combine the cabbage, carrots, apples, onion, and pecans in a large bowl. Mix well with your hands and set aside.
  • In a small bowl, stir together the mustard, sugar, mayonnaise, ground chipotle, and lemon juice until blended. Season with salt and pepper. Pour the dressing over the cabbage mixture and toss well to coat. Taste again for seasoning, then mound onto a platter and garnish with mint leaves.

2 tablespoons sugar
2 tablespoons cider vinegar
1 to 2 tablespoons 2% milk
4 cups shredded cabbage

Steps:

  • For dressing, mix first 4 ingredients. Place cabbage and pineapple in a large bowl. Add dressing; toss to coat., Refrigerate until serving. If desired, sprinkle with paprika.

1/4 teaspoon salt

  • Drain pineapple, saving 2 tablespoons juice.
  • In a bowl, combine pineapple cabbage, carrots, and sunflower seeds.
  • In separate bowl mix fat-free mayonnaise, orange juice, pineapple juice and salt.

1 teaspoon salt
3 tablespoons mayonnaise
1/4 cup milk
1 (4 ounce) can crushed pineapple
paprika, to taste

Steps:

  • Sprinkle salt over cabbage.
  • Combine mayo and milk; pour over cabbage.
  • Drain pineapple and fold into mixture.
  • Toss with fork to blend and chill.
  • Before serving, sprinkle paprika over the top.

1 can (20 ounces) unsweetened pineapple tidbits
4 cups shredded cabbage
1/2 cup shredded carrot
1/3 cup raisins
2 tablespoons reduced-fat mayonnaise
1 tablespoon lemon juice
4 teaspoons prepared horseradish
1/2 teaspoon celery seed
1/2 teaspoon salt

Steps:

  • Drain pineapple, reserving 2 tablespoons juice (discard remaining juice or save for another use). In a large bowl, combine the pineapple, cabbage, carrot and raisins. In a jar with a tight-fitting lid, combine the mayonnaise, lemon juice, horseradish, celery seed, salt and reserved pineapple juice; shake well. Pour over cabbage mixture and toss to coat. 1/2 head cabbage, shredded fine
4 large carrots, shredded fine
1 (16 ounce) can pineapple chunks, drained
black pepper
3 tablespoons white wine vinegar
2 scotch bonnet peppers, seeded and chop fine
3/4 cup Carnation Evaporated Milk
1/2 cup olive oil
1 teaspoon salt
1 tablespoon Dijon mustard or 1 tablespoon spicy brown mustard
1/4 cup eagle brand sweetened condensed milk

Steps:

  • Shred cabbage fine.
  • Shred carrots fine.
  • Drain well canned pineapple chunks.
  • Combine fruit and vegies in a large bowl and toss.
  • To prepare the dressing:.
  • Combine sweetened condensed milk with the mustard of choice and salt.
  • Gradually add a little bit (a teaspoon at a time) of the oil, beating constantly.
  • Continue adding oil slowly, beating all the while.
  • Gradually beat in the evaporated milk, vinegar and peppers.
  • Pour dressing over all, and toss.
  • Cover and refrigerate until needed.
  • You can also add a few green spring chopped onions if desired.

1/2 head cabbage, finely sliced
1/2 cup pecan pieces
1 (8 ounce) can pineapple tidbits (in juice undrained)
1/2 cup coleslaw dressing

Steps:

  • place pecans in a small saute pan on medium high, cook and stir 3 to 4 minutes OR until fragrant.
  • Drain the pineable reserving 1/4 cup juice (or more if you want the slaw sweeter) Place the juice and the slaw dressing in a large bowl and whisk until blended.
  • Stir in the remaining ingredients until evenly coated. Chill for 2hours, stirring often. IF it seems dry add a bit more slaw dressing. It will create more juice the longer it chills.
