10 garlic cloves, peeled
2 tablespoons canola oil
4 cups grape tomatoes
4 boneless beef top loin steaks (8 ounces each)
1/2 cup crumbled blue cheese
1/2 teaspoon salt

Steps:

  • In a large skillet, saute garlic in oil until tender. Cover and cook over low heat for 5-7 minutes or until golden and softened. Add tomatoes; cook and stir until tomatoes just begin to burst. Remove from the skillet; set aside and keep warm., Cut a pocket in the thickest part of each steak; fill with blue cheese. Sprinkle with salt and pepper., In the same skillet, cook steaks over medium heat for 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with tomato mixture.

1 tablespoon butter
½ cup minced white onion
3 cloves garlic, minced
1 tablespoon chopped fresh thyme
¾ cup low-sodium beef broth
½ cup port wine
1 tablespoon vegetable oil
4 filet mignon steaks (1 1/2 inch thick)
¾ cup crumbled blue cheese
¼ cup panko bread crumbs

Steps:

  • Melt butter in a skillet over medium heat. Add the onion, garlic and thyme. Cook, stirring constantly, until onion is tender. Stir in the beef broth, scraping any onion bits from the bottom of the pan, then stir in the port wine. Bring to a boil, and cook until the mixture has reduced to about 1/2 cup. Set aside. This may also be made ahead of time, and reheated.
  • Preheat the oven to 350 degrees F (175 degrees C). Heat oil in a cast-iron or other oven-safe skillet over high heat. Sear steaks quickly on both sides until brown, then place the whole pan into the oven.
  • Roast steaks in the oven for about 15 minutes for medium rare - with an internal temperature of 145 degrees F (63 degrees C). You may adjust this time to allow the steaks to finish just below your desired degree of doneness if medium is not what you prefer. Remove from the oven, and place on a baking sheet. Stir together the panko crumbs and blue cheese. Top each steak with a layer of this mixture.
  • Preheat the oven's broiler. Place steaks under the preheated broiler until the cheese topping is browned and bubbly. 3 to 4 minutes. Remove from the oven, and let stand for at least 15 minutes before serving. Serve with warm port wine sauce.

Grilled Bone-In Rib-Eye Steaks With Blue Cheese image

The usual formula for cooking an amazing slab of steak is as simple as they come: salt plus pepper plus a short stint over a hot fire. But there are times when you want an extra shot of flavor. Some good crumbled blue cheese sprinkled on the hot steak so it melts over the top does just that, especially when you spike it with hot sauce and butter. I like to use a combination of direct and indirect heat when grilling a bone-in piece of meat; it allows a crust to form but not burn while keeping the meat juicy inside. But you know your grill best, so let your instinct guide you as to where to move the steaks and when you think they are done. And if blue cheese isn't your thing, follow the grilling directions here but leave your meat bare except for the salt and pepper. If you start with good meat, you will never go wrong.

2 (1 1/2-inch-thick) bone-in rib-eye steaks, about 1 1/4 pounds each
2 teaspoons coarse kosher salt

2 teaspoons finely chopped chives
Hot sauce, as needed

Steps:

  • Season steaks with salt and pepper at least 30 minutes and up to 1 hour before you plan to cook them. Cover loosely with plastic wrap and let stand at room temperature.
  • Heat grill to high. If using a charcoal grill, mound coals to one side, allowing for an area of indirect heat. If using a gas grill, turn on only a few of the burners and leave the rest off for indirect heat.
  • Lightly oil steaks. Place on the hottest part of the grill. Cook, covered, until they develop a golden-brown crust, 2 to 3 minutes per side. Move steaks to indirect heat and crumble cheese over the top; cover and continue cooking 2 to 5 minutes longer, depending on desired doneness. (Pull the meat at 125 degrees for rare.)
  • Transfer steaks to a cutting board to rest, loosely covered with foil, for 10 minutes. While steaks rest, stir together butter, chives and hot sauce. Pour over steak before serving.

1 1/2 pounds boneless top sirloin steak (about 1 1/2 inches thick)

3 tablespoons sour cream
3/4 cup chopped fresh parsley, chives and/or scallions
1 shallot, sliced, or 2 tablespoons diced red onion

  • Preheat the oven to 425 degrees F. Pierce the potatoes with a fork, then microwave until easily pierced but slightly firm in the center, about12 minutes. Brush with olive oil and bake directly on the oven rack until tender with crisp skins, about 10 minutes. Keep warm.
  • Season the steak with salt and pepper and rub with 1 tablespoon olive oil. Mix the blue cheese, sour cream and herbs in a bowl.
  • Heat a cast-iron skillet over medium-high heat. Sprinkle the skillet with 1/2 teaspoon salt and drizzle lightly with olive oil, then add the steak and weigh it down with a heavy skillet; cook until browned, 4 minutes. Flip the steak, replace the top skillet and brown the other side, 3 minutes. Reduce the heat to low, remove the top skillet and cook 1 to 4 more minutes for medium rare. Transfer to a plate to rest.
  • Return the skillet to medium-high heat, add the shallot and port and boil until thickened, about 4 minutes. Stir in the broth and any juices from the steak and cook 5 minutes, then whisk in the butter. Split open the baked potatoes and top with the blue cheese mixture. Slice the steak; serve with the potatoes and sauce.

1⁄4 cup crumbled blue cheese
2 Tbsp chopped fresh parsley

Steps:

  • Preheat the oven to 450°F. Combine the bread crumbs, cheese, parsley, and rosemary in a mixing bowl and set aside. Heat the oil in a large cast-iron skillet, grill pan, or stainless steel sauté pan over high heat. Season the steaks all over with salt and plenty of black pepper. Sear the first side of the meat for 2 minutes, until well browned. Flip the steaks and top each with a quarter of the bread crumb mixture, using your fingers to gently press it into the meat. Transfer the steaks to the oven to finish cooking (ideally in the pan if it's oven-proof, but if not, a baking sheet or dish will do). The steaks should be done in 5 to 6 minutes, when they feel firm but still springy to the touch (an internal thermometer should read 135°F for medium- rare). This should happen at the same time that the bread crumbs have browned nicely and formed a crust. Let the steaks rest for a few minutes before serving.

1/2 c yellow bell pepper finely chopped
1/2 c onion
1 tsp salt

2 cups cremini mushrooms
1 cup spinach (raw)
1 cup crumbled blue cheese (I buy mine at Trader Joes)
1 flank steak (Around 1.5 lbs)
2 tbsp olive oil
1 tbsp each salt and pepper
1 tsp garlic powder
Kabob skewers or long toothpicks

Steps:

  • Line a cutting board with Saran Wrap. Lay flank steak over Saran Wrap, and cover top of flank steak with Saran Wrap. Pound flat and tenderize, so the steak expands in area, about an inch. Sprinkle both sides with salt and pepper.
  • In a shallow pan, heat 1 tbsp olive oil on medium heat, and add mushrooms with garlic powder, and a pinch of salt and pepper. Cook and stir continuously for 5 minutes. Add spinach, and cook for 3 more minutes. Remove from heat and let cool for 10 minutes. Wipe pan clean and set aside.
  • Remove top layer of Saran Wrap. Top pounded steak with mushroom and spinach mixture, spreading to 1 even layer over entirety of steak, and top entirety with crumbled blue cheese.
  • Begin to roll your steak, using the lower Saran Wrap to 'pinch' the roll for tightness. Go slow and pinch tight!
  • Slice into 1 1/2 to 2 inch sections using sharp kitchen knife. Pierce through 2 skewers diagonally to hold sliced roll in place (see picture in post for example). Tip- If your skewers are too long, cut them in half!
  • Heat 1 tbsp remaining olive oil in pan (seasoned cast iron works great!). Sear steak rolls on each side for 7 minutes or until steaks reach desired level of doneness. Steak will leak sauce from the bleu cheese- spoon on top for added flavor.*Medium done steak is between 135-145 degrees. Well done steak is cooked at 160 degrees.
  • Garnish if desired- Reduced balsamic and basil optional. Enjoy!

8 ounces (2 sticks) unsalted butter, room temperature
2 teaspoons coarse grey sea salt
6 ounces Roquefort or Stilton cheese, cut into chunks
4 to 6 ounces beef fillets, good quality and at least 2-inches high
Freshly ground black pepper
2 tablespoons extra-virgin olive oil

Steps:

  • In a food processor, pulse butter until whipped, and add salt and cheese. Pulse again just until incorporated. Dollop the compound butter towards 1 side of a piece of natural parchment paper or plastic wrap. Roll into a log, twisting opposite ways on both ends to create a tightly wrapped log of butter. Refrigerate for at least 1 hour to set. (Can be stored up to 1 week in the refrigerator and up to 1 month in the freezer.) This could be made into 2 logs, as you will only need half this recipe for the steaks.
  • Preheat oven to 400 degrees F.
  • Once butter log is set, slice 1/2 the whole log into 1/4-inch disks. Cut a slit in the side of each fillet, and stuff with a butter disk. Tie each fillet with kitchen twine to keep it shape and sprinkle pepper each side.
  • Add the olive oil to a large oven-proof skillet over medium-high heat. Once hot, sear each fillet until brown on both sides, about 3 to 5 minutes per side. Move skillet into the preheated oven to cook to desired doneness. Put another disk of the compound butter on top of each fillet just about 3 minutes before removing from oven, to just begin to melt but not melted completely. Remove from the oven and place on serving plates. Eat and enjoy!

  • Mix together the marinade ingredients. Place in a resealable plastic bag with the steak. Marinate for 1-2 hours in refrigerator.
  • In a large skillet, cook bacon. Season with pepper for added flavor. Once crisp remove bacon but leave bacon fat in skillet.
  • Heat to medium and add onion and garlic. Cook for about 2 minutes. Add the beer and the spinach. Season with salt to taste and cook for 1-2 more minutes.
  • Add blue cheese, panko crumbs, and bacon to the mixture. Remove from heat and mix well.
  • Spread warm mixture into the middle of the flank steak, drained from the marinade. Roll and tie using kitchen twine. Place the steak roll in a roasting pan and season the outside again with salt and pepper to your liking.
  • Roast in a 350 degree oven until cooked to your liking.
  • Serve with a basic vegetable or mashed potatoes.
  • This is also great as a leftover in sandwiches with a fresh sourdough bread.

2 lb (1 kg) Ontario flank steak
½ tsp (2 mL) each salt and freshly ground pepper
6 slices Ontario bacon, chopped
2 cloves garlic, minced
2 shallots, minced
2 cups (500 mL) arugula
2 tbsp (30 mL) chopped fresh parsley
¾ cup (175 mL) crumbled blue cheese
¼ cup (60 mL) seasoned croutons, crushed
1 tbsp (15 mL) extra virgin olive oil

Steps:

  • Preheat oven to 350°F (180°C). Set the flank steak on a large cutting board. Butterfly the steak lengthwise, so it opens like a book. Pound with a meat mallet so the steak is even, about 1/4-inch (5 mm) thick. Season both sides with salt and pepper.
  • In skillet over medium heat fry bacon, garlic and shallots for 7 to 8 minutes, until bacon is rendered and vegetables are tender. Remove from pan. Add arugula to pan and cook for about 2 minutes. Remove from pan and press to release an excess liquid. Combine with bacon mixture.
  • Spread bacon mixture over steak, leaving a 1-inch (2.5 cm) border. Top with parsley and crumbled blue cheese and crushed croutons. Tightly roll steak lengthwise into a log, tucking in the edges as you roll to enclose the filling. Secure with butcher's twine. Brush the outside with oil.

  • Transfer to oven. Roast for 20 to 25 minutes until medium-rare to medium. Remove from oven and tent for 10 minutes. Slice crosswise into 1/2-inch thick (1 cm) slices.
