I have been making this pie every Thanksgiving and it's usually the first pie to finish. This recipe makes two pies.

1 (12 ounce) container frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple, drained

2 (9 inch) prepared graham cracker crusts

Steps:

  • Blend together the cream cheese and condensed milk; gently fold in the whipped topping.
  • Stir in the crushed pineapple and pecans; pour into pie crusts and refrigerate for 3 to 4 hours.

Steps:

  • In a large bowl, beat together cream cheese, condensed milk, and lemon juice. Using a spatula, gently mix in the whipped topping.
  • Gently mix in the pineapple, chopped cherries, and pecans. Pour the mixture into pie crusts and chill for 3 to 4 hours.
  • Slice and enjoy!

This luscious, silky pie calls for a baked pie shell, and the flaky contrast with the gooey filling is really good. But if you're running short on time, you can substitute a graham cracker crust to eliminate that step. Do remember to chill the pineapple though. Simply put the can in the refrigerator as soon as you bring it home from the grocery store. Taken from the "From Storebought to Homemade" cookbook. Note: cooking time is refrigeration time.

2 cups confectioners' sugar
1 cup crushed pineapple, drained and chilled
1 (12 ounce) container Cool Whip, at room temperature
1/2 cup pecans, chopped (optional)

Steps:

  • If using a traditional pastry shell, bake it according to package directions.
  • Combine the cream cheese, sugar, pineapple and Cool Whip; blend well.
  • Transfer the filling to the pie shell and, if you wish, sprinkle the top with chopped pecans.
  • Cover and chill for several hours.

I am honoring Cafeteria's today..they fed us all well for many years. Now most alllll are gone. I miss them. Here is another pie recipe from the cafeteria recipes..from Furr's this time. I HAVE REVAMPED THIS RECIPE SO THAT "THOSE OF US WITH DIABETES" CAN ALSO HAVE SOME. I ADDED A RECIPE TO MAKE 'HOMEMADE POWDERED SUGAR' FOR US WHO HAVE DIABETES CAN USE IT TO DUST ON DESSERTS OR MAKE FROSTINGS (there is also a frosting recipe at the bottom).

2 cup(s) sifted powdered sugar (*i make my own splenda powdered sugar)
1/4 pound(s) butter, softened
2 large eggs
1/8 teaspoon(s) salt (i use sea salt)
1/4 teaspoon(s) pure vanilla
2 - (9 inch) pie crusts, baked
1 cup(s) heavy cream
1/2 cup(s) sifted powdered sugar (*again you can make your own with splenda)
1 can(s) crushed pineapple, drain well
1/2 cup(s) chopped pecans

Steps:

  • Cream 2 cups powdered sugar and butter with electric mixer until fluffy (be SURE to do this step first).
  • Add eggs, salt and vanilla. Beat until light and fluffy.
  • Spread mixture evenly into baked pie crusts, then chill.
  • Whip heavy cream until stiff. Blend in powdered sugar. Then fold in pineapple and pecans.
  • Spread mixture on top of chilled filling; and chill thoroughly before serving.
  • NOTE: This pie is sweet and not for diabetics. But if you make your own powdered sugar by grinding Splenda into a powder, you can eat some too.
  • TIP For Diabetics: *To make your homemade powdered sugar from Splenda...take 1 cup Splenda and 2 tablespoons cornstarch, using a clean coffee grinder (or a blender) place both ingredients in the cup, placeing the lid on and pulse into a powder form. This can be used for dusting cakes, cupcakes...etc. You can also make a frosting with it.
  • Frosting made with Homemade Powdered Sugar: 8 ounces low-fat cream cheese 1 teaspoon vanilla 1/4 cup light butter Beat 8 oz of cream cheese with the butter. Mix in vanilla and 1/2 cup of the home made powdered sugar (taste it as you go).

Steps:

  • Cream together the cream cheese and sugar with electric mixer; let the mixer run on high for 3-4 minutes.
  • Stir pineapple into cream cheese mixture. Stir in coconut and pecans. Mix well.
  • Carefully fold in 3/4 of Cool Whip.
  • Fill pie crust with mixture. Top with remaining Cool Whip.
  • Chill for several hours.

MY "FURR'S MILLIONAIRE PIE" CAKE



My

I came up with this cake for my Dad's birthday. I love Furr's Millionaire Pie and wondered if it could be converted to a type of cake. This is my adaption of Furr's Millionaire Pie in a cake, and it's been a hit with family and friends! I started off with a Rainy Day Yellow cake (Recipe # 108059), but used one whole cup of butter (which is reflected in this recipe as well as adaptations to the directions). For the filling, I used Furr's original recipe, then added the pecans (doubled the pecans) and pineapple from the recipe's whipped topping into the filling. Then for the topping, I just left it as a whipped topping. I didn't want the topping to have too much texture or look too funky, which is why I chose to include the pineapple and pecans into the filling instead. This cake is very dense and very sweet. It's a little bit of a mix between Furr's Millionaire Pie and pineapple upside down cake. I may actually add more pineapple the next time I make it. I hope that you enjoy it!!

4 large eggs, separated
1 cup butter, at room temperature
2 cups granulated sugar
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda

1 cup buttermilk
2 cups powdered sugar
1/2 cup butter, softened
2 large eggs
1/8 teaspoon salt
1/4 teaspoon vanilla extract
1 cup crushed pineapple, well drained
1 cup chopped pecans
1 cup heavy cream
1/2 cup powdered sugar

Steps:

  • CAKE.
  • Preheat oven to 350°F
  • Prepare a 10-inch round pan by greasing it and dusting it with flour.
  • In a large mixing bowl, cream the butter for 1 to 2 minutes.
  • Add sugar, and cream for another 2 minutes.
  • Add egg yolks and beat for another minute or until the mixture appears light and fluffy.
  • Add the vanilla extract.
  • Sift flour, baking powder, baking soda, and salt into another medium sized mixing bowl.
  • Add about a third of the flour mixture to the butter-sugar mixture and mix well.
  • Add half of the buttermilk, followed by another third of the flour, then the remaining buttermilk, and finally the last of the flour. (Be careful not to overmix.)
  • Set mixture aside.
  • In a clean bowl, beat egg whites until stiff peaks form.
  • Fold egg whites into cake mixture just until incorporated.
  • Pour batter into prepared pan.
  • Bake for around 40-50 minutes or until toothpick inserted in middle comes out clean.
  • Cool cake completely and with a serrated knife, cut cake in half horizontally.
  • FILLING.
  • Cream together powdered sugar and butter with electric mixer.
  • Add eggs, salt, and vanilla.
  • Beat until light and fluffy.
  • Fold in pecans and pineapple.
  • Spread filling mixture on the bottom layer of cooled cake.
  • Carefully place top layer of cake on top of the filling.
  • Cool in the fridge for 30 minutes.
  • TOPPING.
  • Whip cream until stiff.
  • Blend in powdered sugar.
  • With an offset spatula, spread topping on top and on the edges of the cake.
  • Cool in fridge for 30 minutes.
  • Cake must be kept stored in the fridge until ready to serve.
