CRISPY SALMON CROQUETTES WITH REMOULADE SAUCE



Crispy Salmon Croquettes with Remoulade Sauce image

1 1/4 cups mayonnaise
1 tablespoon capers
1 teaspoon seafood seasoning (recommended: Old Bay)
1/2 teaspoon crushed garlic
2 1/2 teaspoons lemon juice
1 scallion, finely chopped
2 pre-cooked salmon fillets, about 1/2 pound
1 egg, lightly beaten
3/4 cup fish fry coating mix, plus more for coating (recommended: Kraft)
6 dashes hot sauce
1/4 cup remoulade sauce, recipe above
Canola oil, for frying

Steps:

  • For Remoulade:
  • Combine all the remoulade ingredients, except scallions in a bowl and stir together with a fork to help break up the capers. Mix in scallion and set aside.
  • For Croquettes:
  • Using a fork flake the salmon meat away from the skin. Discard skin.
  • In a medium bowl, beat egg. To the egg, add the fish fry mix, salmon, hot sauce, and 1/4 cup of remoulade sauce. Mix well to combine. Form into 8 patties.
  • Pour the remaining fish fry mix into a pie dish or onto a dish. Coat the patties in the remaining fish fry mix and set aside.
  • In a large skillet, heat a thin layer of oil over medium to medium-high heat. Without crowding pan, cook patties until golden brown, about 3 to 4 minutes per side.
  • Serve croquettes hot with remaining remoulade sauce.

This is my own creation. We had an extra guest for dinner and needed to expand the salmon out a bit, so I decided to utilize the few shrimp we had left in the freezer. Also just happened to have some colorful veggies in the fridge, so I tossed those in for some color. This turned out really good.

1 lb salmon fillet, steamed, chilled and flaked
1/2 lb shrimp, boiled, shelled, deveined and chopped
2 tablespoons red bell peppers, finely chopped
2 tablespoons scallions, finely chopped
1 1/2 teaspoons creole seasoning
1 -2 egg
Tabasco sauce, to taste
1/2 cup cracker crumb

Steps:

  • Mix all ingredients together.
  • Form into desired sized croquettes.
  • Roll and cover with cracker crumbs (I used crushed club crackers).
  • Place on a lightly greased baking sheet and bake at 400°F for approx 45 minutes, depending on how big they are.
  • Note: This being the first time I ever made Salmon Croquettes and although this turned really good, I think using corn flakes for the coating would be good too. I served Papergoddess's Recipe #100387 with.
  • Also. The prep time is an estimate. It includes the cooking time for the salmon fillets and shrimp along with putting it all together. You can save time by using canned salmon and pre-cooked shrimp. Fresh is always best though.

A classic Southern dish that is easy to make and totally delicious.

⅓ cup (85g) plain greek yogurt (nonfat)
2 eggs
¼ teaspoon salt
¼ teaspoon pepper
1 teaspoon Worcestershire sauce
2 Tablespoons capers (diced)
Zest of 1 lemon
1 cup (120g) gluten free panko bread crumbs
2 cans (7.5 oz / 212g) salmon fillets (no bones)
¼ cup (15g) parsley (diced)
¼ teaspoon dill
½ teaspoon cayenne pepper
¼ teaspoon paprika
½ teaspoon cumin
½ cup (90g) red bell pepper (diced)
2 medium shallots (diced)
½ cup (60g) yellow cornmeal
Vegetable oil (for frying)

Steps:

  • Heat butter in cast iron skillet over low to medium heat.
  • Add in diced red bell pepper and diced shallots and saute until softened and golden. Set aside and let them cool.
  • In a mixing bowl, whisk eggs, yogurt, salt, pepper, capers, lemon zest, and Worcestershire sauce together.
  • Drain liquid from canned salmon filet (and bones if your brand had bones).
  • Mix salmon, bread crumbs, diced parsley, seasonings, sautéed peppers and onions with the whisked egg mixture until well combined.
  • Use an ice cream scoop to scoop mix and form into salmon patties using your hands.
  • Once formed into a firm, pressed croquette, roll in cornmeal and set aside until all 12 are done.
  • Heat oil in the skillet over medium heat and fry Salmon Croquette for 2-3 mins on each side until golden brown and crisp.
  • Assemble the Salmon Croquettes with cornmeal and spray the tops of the Salmon Croquettes with olive oil from a spray bottle.
  • Preheat the oven to 425F / 220C / gas 7 and bake on a foil-lined baking tray for 5-7 minutes, until golden brown and crisp.
  • Assemble the Salmon Croquettes with cornmeal and spray the tops of the Salmon Croquettes with olive oil from a spray bottle.
  • Preheat Air Fryer to 360F / 180C.
  • Add Salmon Croquettes to the air fryer basket and cook for 6-8 minutes, turning the patties over halfway through the cooking time.

Most likely you have most, if not all, of the ingredients to make this surprisingly easy, budget-friendly and deliciously crispy dish sitting in your pantry right now. We tested the recipe using both cornmeal and panko for the breading and found panko produced a much better crunch and that golden crust croquettes are known for. Serve them on their own as a delicious appetizer or along with a salad for a light dinner.

2/3 cup self-rising flour (see Cook's Note)
2 teaspoons Worcestershire sauce
1 to 2 teaspoons hot sauce, optional
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
2 scallions, thinly sliced
One 14.75-ounce can salmon, drained well
1/2 medium onion, finely chopped (about 1/2 cup)
2 large eggs
3 teaspoons Cajun or Creole seasoning
Kosher salt and freshly ground black pepper
1 cup mayonnaise
1 tablespoon capers, drained and coarsely chopped
1 tablespoon sweet paprika
4 cornichons, finely chopped, plus 3 teaspoons cornichon brine
3/4 cup panko breadcrumbs
1 1/2 cups canola oil

Steps:

  • Combine the flour, Worcestershire, hot sauce if using, Dijon, garlic powder, scallions, salmon, onion, 1 of the eggs, 1 teaspoon of the Cajun seasoning, 1 teaspoon salt and several grinds of black pepper in a medium bowl and gently stir with a fork until the flour is fully incorporated. Place the mixture in the refrigerator and chill for at least 30 minutes and up to 1 hour (see Cook's Note).
  • Meanwhile, prepare the remoulade sauce by combining the mayonnaise, capers, sweet paprika, cornichons and brine, remaining 2 teaspoons Cajun seasoning and 1/2 teaspoon salt in a small bowl and set aside. (The sauce can be refrigerated, covered, up to 1 hour; serve chilled or at room temperature.)
  • Lightly beat the remaining egg in a small bowl. Place the panko in another small bowl and dust your hands lightly with flour. Using a 1/4 cup measuring cup, scoop the salmon mixture, shape it into an oblong croquette about 2 inches long and set on a large plate. Repeat to make a total of 8 croquettes. (Alternatively, these can be shaped into round patties). Working 1 croquette at a time, dip into the egg and then roll in the panko to coat completely, gently pressing so it adheres.
  • Heat the canola oil a large skillet over high heat until 350 degrees F on a deep-fry thermometer or by testing: Add a small piece of the salmon mixture to the oil; it should bubble vigorously and float to the top. Line a plate with paper towels.
  • Carefully place the croquettes in the oil, making sure to leave space in between to ensure even cooking. Cook until golden brown, 2 to 3 minutes per side. Transfer to the lined plate and let cool slightly. Serve warm with the remoulade sauce.

2 cups water
1 cup long-grain rice (recommended: Zatarain's)
4 tablespoons butter
1 pound fresh shrimp, peeled, deveined and finely chopped
8 ounces crabmeat
1 cup finely chopped green onions
1/2 cup finely chopped seeded jalapenos
4 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Essence, recipe follows
1/2 cup all-purpose flour
4 eggs, lightly beaten
Vegetable oil or peanut oil for frying
White saltine cracker crumbs
Garlic Aioli, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
4 egg yolks
2 tablespoons Dijon mustard (recommended: Grey Poupon) or Creole mustard
10 cloves garlic
1 1/2 cups extra virgin olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper

Steps:

  • Bring 2 cups salted water to a boil in a medium pot. Add the rice, reduce heat to medium-low and cook until done, about 20 to 25 minutes. Remove pot from the heat and add the butter to the warm rice and stir to incorporate. Next, add the shrimp, crab, onions, jalapenos, lemon juice, salt, pepper and Essence and stir to combine. Stir in flour and eggs. Be careful not to break up the crabmeat when mixing the ingredients. Transfer the mixture to a storage container and refrigerate for 2 hours.
  • In a large heavy-bottomed sauce pan, pour enough oil to fill the pan about a 1/3 of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F. (If you don't have a thermometer, a cube of bread will brown in about 3 minutes.)
  • Remove the croquette mixture from refrigerator and shape into 1/2-inch to 3/4-inch thick patties and coat with white cracker crumbs. Use an ice cream scoop to keep portion sizes the same.
  • Fry the croquettes until golden brown on both sides. Drain on paper towels and season with salt. Serve with Garlic Aioli.
  • Combine all ingredients thoroughly.
  • Recipe from "New New Orleans Cooking," by Emeril Lagasse and Jessie Tirsch Published by William Morrow, 1993.
  • Combine the egg yolks, mustard and garlic cloves in a food processor. While processing, add 1 cup of the olive oil in a fine stream to make an emulsion. Add lemon juice, salt, black pepper and cayenne, and then the remaining oil. Process until thick and smooth.

2 pounds salmon fillets, skinned and cut into 2-inch pieces
1 cup fine dry bread crumbs
1/2 cup heavy (or whipping) cream
1/4 cup finely chopped shallots
1 clove garlic, minced
2 tablespoons mixed chopped fresh herbs, such as flat-leaf parsley, dill, and chervil leaves
2 tablespoons Dijon mustard
2 large eggs
2 tablespoons fresh lemon juice
1/4 teaspoon Tabasco sauce
Coarse (kosher) salt and freshly ground black pepper, to taste
All-purpose flour, for coating
1/2 cup canola or other vegetable oil
2 tablespoons unsalted butter

Steps:

  • Put the salmon through the medium blade of a meat grinder into a large bowl. Lacking a meat grinder, chop the salmon by hand or place it in a food processor and pulse briefly until chopped medium fine, then transfer it to a bowl. Be careful not to chop the fish too fine or the croquettes will be dry.
  • To the salmon add the bread crumbs, cream, shallots, garlic, herbs, mustard, eggs, lemon juice, Tabasco, salt, and pepper. Using your hands or a wooden spoon, mix thoroughly. Form the mixture into six burgerlike patties, each about 3/4 inch thick. Spread about 1/2 cup flour on a plate and dip the patties, one at a time, in it to coat on both sides, shaking off any excess.
  • Heat the oil in a large heavy skillet over medium heat; it should be hot enough so a sprinkle of flour sizzles on contact. Add the butter to the hot oil and, as soon as it has melted, add the salmon croquettes and fry until cooked through and golden brown on both sides, about 5 minutes per side.
  • Using a slotted spoon, transfer the croquettes to paper towels to drain, then serve immediately.

1 can (14-3/4 ounces) pink salmon, drained, deboned and flaked
1 cup evaporated milk, divided
1-1/2 cups cornflake crumbs, divided
1/4 cup dill pickle relish
1/4 cup finely chopped celery
2 tablespoons finely chopped onion
Oil for deep-fat frying
TARTAR SAUCE:
2/3 cup evaporated milk
1/4 cup mayonnaise
2 tablespoons dill pickle relish
1 tablespoon finely chopped onion

Steps:

  • In a large bowl, combine the salmon, 1/2 cup milk, 1/2 cup crumbs, relish, celery and onion. With wet hands, shape 1/4 cupfuls into cones. Dip into remaining milk, then into remaining crumbs. Heat oil in a deep-fat fryer to 365°. Fry croquettes, a few at a time, for 2 to 2-1/2 minutes or until golden brown, Drain on paper towels; keep warm., In a small saucepan, combine tartar sauce ingredients; cook over medium-low heat until heated through and slightly thickened. Serve warm with croquettes.
