PINEAPPLE LIME JELLO SALAD
This delicious Pineapple Lime Jello Salad is a family favorite recipe made with cottage cheese, crushed pineapple, pecans and yogurt!

Steps:
- Drain the juice from the can of crushed pineapple and reserve the liquid in a measuring cup.
- In a large bowl, mix together the cottage cheese, drained pineapple and greek yogurt. Cover and refrigerate to use later.
- Using another bowl, mix the 2 packets of jello with 2 cups of liquid. (First, measure the juice from the can and add hot water until you have 2 cups liquid). Stir until diluted.
- Cover and refrigerate the jello mixture until it begins to gel, about 1 hour.
- Remove the jello mixture from the refrigerator and whip it until it becomes frothy, about 10 minutes.
- Mix the pineapple mixture and the jello mixture together.
- Stir in the nuts.
- Refrigerate until it begins to firm, 4 hours.
LIME JELLO AND PINEAPPLE SALAD
A good old standby and another way to get kids to eat some vegetables. Besides, it always looks good on the table especially when the center is filled with green seedless grapes.

Steps:
- Using a large bowl completely dissolve Jello in the boiling water.
- Mix in sour cream and whisk until there are no lumps.
- Stir in pineapple, carrots, celery and nuts.
- Pour into a ring Jello mould.
- Place in refrigerator and chill for at least three hours.
- When ready to serve unmould Jello by dipping the bottom in very hot water for a few moments, place a plate over the top and turn upside down.

- Combine jello and hot water; stir until jello is dissolved.
- Add enough cold water to pineapple juice to equal ½ cup and stir into the jello. Chill until partially set; then whip with a mixer. Set aside.
- In another bowl, beat the cream cheese. Add pineapple, beating briefly.
- Fold in Cool whip and nuts - then combine with the jello mixture and chill until firm.

LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

- Dissolve JELL-O in 2 cups boiling water. Whisk in softened cream cheese until thoroughly blended. Then add crushed pineapple, pineapple juice and 1/2 cup cold water. Pour into 6-cup mold and refrigerate until set.
- Turn out mold onto serving plate. Spoon COOL WHIP into center of mold.
- Arrange your choice of fresh or frozen fruit on top as desired. (I'm not entirely happy about the color of the kiwi in combination with the color of the JELL-O, but since it tastes great, I live with it. Ha!)
- Serve immediately, and be sure to add a big spoonful of the fruit and COOL WHIP to your JELL-O for a cool, creamy and refreshing fruit dessert!

- Pour boiling water on gelatin in medium bowl; stir until gelatin is dissolved. Stir in cold water and pineapple. Refrigerate about 45 minutes or until thickened but not set.
- Lightly brush six 1/2-cup salad molds with vegetable oil. Stir carrot into thickened gelatin; pour into molds. Refrigerate about 4 hours or until firm.
- To unmold salads, dip molds into hot water for 10 seconds. Place salad plate upside down onto each mold; turn plate and mold over, then remove mold. Top salads with mayonnaise.

- Dissolve gelatin in water. In a bowl, beat cream cheese until fluffy. Stir in gelatin mixture and beat until smooth. Stir in vanilla, oranges, pineapple, soda and pecans. Chill until the mixture mounds slightly when dropped from a spoon. Fold in three-fourths of the whipped topping. Pour into a 13x9-in. dish. Refrigerate for 3-4 hours or until firm. LIME JELLO SALAD
Steps:
- Bring 4 cups of water to a boil.
- Remove from heat and quickly mix in the jello and pudding mix.
- Pour into a glass dish and add pineapple evenly throughout. I have used various sizes of glass dishes, they all work.
- Cover and place in the fridge for at least four hours.
- Remove from fridge and move the jello to a large bowl - mash around until it's broken up.
- Mix in Cool Whip and coconut flakes.
- Keep refrigerated until ready to serve.

- Drain pineapple, reserving 3/4 cup juice.
- Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Stir in reserved pineapple juice and lemon juice; pour 1-1/4 cups into 8x4-inch loaf pan sprayed with cooking spray. Refrigerate 1 hour or until gelatin is set but not firm.
- Add remaining gelatin mixture gradually to cream cheese in medium bowl, whisking after each addition until blended. Stir in pineapple. Spoon over gelatin layer in pan.
- Refrigerate 4 hours or until firm. Unmold before serving to serve.
