Boozy kirsch-soaked cherries, combined with vanilla ice cream and amaretti biscuits make a dessert as simple as it is delicious

390g jar cherries in kirsch
2 tbsp dark brown sugar
4 big scoops of vanilla ice cream
50g amaretti biscuits

Steps:

  • Tip the cherries and sugar into a small saucepan. Bring to a simmer over a medium heat, stirring, and allow to bubble for 10 mins. Leave to cool slightly.
  • Scoop the ice cream into four bowls and pour over the warm compote. Crumble over the amaretti and serve.

This recipe is from the Williams-Sonoma FRUIT DESSERT cookbook, a copy of which my gracious partner in the current Cookbook Swap sent to me! It is ALWAYS best to use fruits when they are in season, but if making this recipe when they are not, frozen berries COULD be used!

1/2 cup granulated sugar
2 cups strawberries, hulled, quartered
1 cup blueberries
1 cup blackberry
2 teaspoons fresh lemon juice
1 pinch salt
1/4 cup unsalted butter, room temperature, cubed

Steps:

  • In a large, nonreactive saute pan over medium heat, combine 1/4 cup water & 1/2 cup sugar & bring to boil, stirring to dissolve sugar.
  • Cook 2 minutes, then add berries, lemon juice & salt.
  • Return to boil, then add butter & swirl mixture around in the pan until butter melts.
  • Spoon berries along with the sauce onto warmed dessert placts &, if desired, place a small scoop of vanilla ice cream (or yogurt) in center of each plate.
  • Serve immediately & enjoy!

Number Of Ingredients 7

4 large ripe pears, about 2 pounds (preferably Bosc pears or Anjou pears)
1/2-1 cup light brown sugar, firmly packed
2 tablespoons cornstarch
1/2 teaspoon ground cinnamon or 1/2 teaspoon allspice
2 cups apple juice or 2 cups fruit nectar
2 tablespoons brandy or 2 tablespoons dark rum
4 tablespoons unsalted butter

Steps:

  • Peel and core the pears and cut into eighths; set aside.
  • In a medium-size saucepan, combine the brown sugar, cornstarch and cinnamon or allspice. Stir in the juice or fruit nectar and mix well. Place the pan on medium-high heat and cook the sauce, stirring, until the mixture is smooth. Add the pears and bring the sauce to a gentle boil.
  • Reduce the heat to medium-low and continue cooking, stirring occasionally, for 15 - 20 minutes or until the pears are just tender, almost translucent, and the syrup is thick. Stir in the rum and butter and heat a few minutes longer.

Because fresh fruit was once scarce in Sweden during the winter, compotes stewed from dried fruits (mixed with a little alcohol to take the nip off the cold) are traditional at Christmas julbord. Here, dried cherries simmered with red wine and Port are subtly spiced with cinnamon and black pepper. This pairs well with cheese. Also wonderful over ice cream or cake. Compote can be made 2 days ahead and cooled completely, uncovered, then chilled, covered. Bring to room temperature before using. Taken from Epicurious.com and posted for ZWT.

1 1/2 cups dried sour cherries (9 oz)
2/3 cup ruby port
3/4 cup dry red wine
6 tablespoons sugar
1 cinnamon stick (2 - 3 inches in length)
3/4 teaspoon black pepper
2 teaspoons cornstarch
2 teaspoons red wine vinegar

Steps:

  • Bring cherries, Port, wine, sugar, cinnamon stick, pepper, and a pinch of salt to a boil in a 1-quart heavy saucepan over moderate heat.
  • Stir together cornstarch and vinegar until smooth, then stir into boiling liquid. Boil 1 minute.
  • Remove from heat and cover, then let stand 15 minutes. Serve warm.

Steps:

  • Cook cherries and sugar over medium-high heat in a skillet, stirring occasionally, for approx 4 minutes.
  • Sprinkle in vinegar and thyme and cook 1 more minute.
  • Slice goat cheese into 4 rounds, top each with warm compote.
  • Note: Compote may be made ahead of time and refrigerated for up to 3 days.
