CREAM CHEESE PINEAPPLE PIE
This is not only easy, I always have all the ingredients on-hand. Which means it's easy to quick whip up if I find out I've got to go somewhere or people are coming over last minute. I've not done this yet, but I'm thinking it could easily be made in mini graham cracker tart shells for an easy finger food dessert. The taste is light, yet sweet, and perfect for dessert on a hot summer day. Cooking time is an estimate of how long it should take to chill completely in the refrigerator.

- In a large bowl, blend cream cheese and sugar until smooth.

VINTAGE PINEAPPLE PIE RECIPE
Steps:
- Preheat oven to 300 F
- Combine cornstarch, 1/4 cup sugar, and salt in a saucepan
- Add pineapple (including liquid)
- Cook over medium heat, stirring, until clear and thickened
- Beat egg yolks with 1/4 cup sugar and add to pineapple mixture
- Cook 1 minute
- Cool
- Add lemon juice and pour into pie crust
- Make meringue by beating 2 egg whites until stiff, gradually add the remaining 1/4 cup sugar
- Top pie with meringue and bake for 30 minutes

- 1. Mix together whipped topping, condensed milk, pineapple, and lemon juice. Pour into graham cracker shell. Don't be afraid to pile filling high. Garnish with more whipped topping and lemon zest and refrigerate for 3-4 hours or until firm. You may have a bit extra filling. If so it can be refrigerated in a pudding cup.
PINEAPPLE ICEBOX PIE WITH PINEAPPLE TOPPING
Steps:
- 1. Preheat oven to 350 degrees F. Combine vanilla wafer crumbs, sugar, and butter. Press mixture firmly into bottom and up side to rim of 9" pie pan. Bake 10-12 minutes. Cool completely.
- 2. Beat cream cheese until fluffy. Gradually, beat in sweetened condensed milk. Stir in pineapple juice, and almond extract. Pour filling into crust; chill 4 hours or until set.
- 3. Just before serving, drizzle pie slices with pineapple topping. Top with a dollop of Cool Whip.

- In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in whipped topping: set aside. , Drain pineapple, reserving 1/4 cup juice. - Whip together the cream cheese, sweetened condensed milk, orange juice and zest, lime juice and zest. Whip for 2 minutes until fully combined.
- By hand fold in the crushed pineapple, sliced maraschino cherries, cubed banana, coconut, and 1/2 container whipped topping.
- Spread evenly into the pie crust. Cover and chill for at least 4 hours or overnight.
- Garnish the top with toasted macadamia nuts and remaining whipped topping. Garnish with additional maraschino cherries, if desired.
- To toast nuts: Spread in a single layer on a baking sheet. Toast in a preheated 350°F oven for 5-8 minutes or until lightly golden and fragrant. Cool completely.

- In large glass or plastic bowl, stir pineapple, 1 cup sugar and the rum until mixed. Cover and refrigerate at least 4 hours.
- In medium bowl, mix 2 cups flour and the salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball. Divide in half; shape into 2 flattened rounds on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
- Heat oven to 425ºF. With floured rolling pin, roll 1 pastry round into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
- Drain pineapple, reserving juice. Spoon pineapple into pastry-lined pie plate. In 1-quart saucepan, mix 1/2 cup sugar, 1/2 cup flour, the cinnamon and nutmeg. Stir in 1/2 cup of the reserved juice (reserve remaining juice). Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in butter. Pour over pineapple. Trim overhanging edge of pastry 1 inch from rim of pie plate.
- Roll other round of pastry into 10-inch round. Cut round into 1/2-inch strips. Place 6 strips across filling. To make lattice top, weave a cross-strip through center by first folding back every other strip going the other way. Continue weaving lattice, folding back alternate strips before adding each cross-strip, until lattice is complete. Trim ends of strips. Fold trimmed edge of bottom crust over ends of strips, building up a high edge; seal and flute. Cover edge with 3-inch strip of foil to prevent excessive browning during baking.
- Bake 35 to 45 minutes or until crust is brown and filling is bubbly, removing foil for last 15 minutes of baking.
- In medium bowl, beat cream cheese with electric mixer on medium speed, gradually adding 1/4 cup plus 2 tablespoons reserved pineapple juice until smooth and creamy. Serve with pie.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine 1 cup sugar, cornstarch, and salt in a large saucepan. Stir in pineapple and juice until blended. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from heat.
- Place egg yolks in a bowl and gradually stir in 1 cup of hot filling. Add to the mixture in the saucepan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from heat. Stir in lemon juice and keep warm.

- Preheat oven to 400 degrees. Prepare pie crust according to package directions. Combine all the topping ingredients except the butter in a medium bowl. PINEAPPLE ICEBOX DESSERT
Steps:
- Preheat the oven to 300.
- Crush your graham crackers until they are fine crumbs (a food processor will help).
- Add in 1/2 cup softened butter to the crumbs, and mix well with a fork.
- Press 2 cups of your crust mixture firmly into the bottom of a 9×9 pan
- Bake at 300 for 8-10 minutes.
- Remove from the oven and allow it to cool completely.
- In a large bowl, combine the unsalted butter and the cream cheese with an electric mixer until smooth.
- Slowly add powdered sugar, while still mixing.
- Add one heaping spoon of the crushed pineapple and mix well.
- Spread mixture over the crust.
- In another large bowl, combine the cool whip and the crushed pineapple gently with a spoon.
- Spread the pineapple cool whip mixture over the top of the cream cheese layer.
- Top with the remaining 1/2 cup of the graham cracker mixture.
- Refrigerate overnight, or for 4-6 hours minimum.
- Serve chilled.
