MOM'S PINEAPPLE BREAD PUDDING
This was handed down from my mother. Our family would have this wonderful side dish every Christmas and Easter. It is so easy to make.

- Preheat oven to 325 degrees F (165 degrees C).
- Arrange bread cubes in a 2-quart baking dish. Stir pineapple, melted butter, sugar, and eggs into bread until well mixed. Cover baking dish with aluminum foil.
- Bake until puffed and golden brown, about 1 hour.

PINEAPPLE BREAD PUDDING
Steps:
- Preheat the oven to 350 degrees F. Butter a 1.5-quart casserole dish.
- In a large bowl with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Then add the eggs one at a time, incorporating fully between each addition. With the mixer on low, beat in the pineapple just until incorporated. With a rubber spatula, fold in the bread. Pour it into the prepared dish.
- Bake in the oven until golden brown and set, 50 to 60 minutes.
EASY PINEAPPLE BREAD PUDDING
I was little leery of pineapple in bread pudding, but this is really very good. Takes almost no time to make, and gives me yet another variety of my favourite dessert ever. I use one can organic crushed pineapple and one can regular to cut down on some of the sweetness.

- Preheat oven to 350°F and grease a 9x13-inch glass baking dish.
- Combine the butter, sugar, and cinnamon in a mixing bowl and beat until thoroughly combined.
- Add the eggs and beat with an electric mixer until thoroughly mixed.
- Fold in pineapple, pecans and bread cubes.
- Pour into prepared baking dish.
- Bake at 350F for approximately an hour, until set.
- *Check after 45 minutes to make sure top isn't getting too browned. If it is, cover lightly with aluminum foil to finish baking.
- Serve warm, garnished with whipped cream.
CUSTARD BREAD PUDDING
I received this recipe from my husband's aunt who has been serving this at her restaurant for years. Great for people who don't like bready things, because it has more custard than bread.

- Blend half-and-half, eggs, sugar, vanilla extract, and salt in a blender until smooth. Arrange bread in a 9x13-inch baking dish; sprinkle with raisins and cinnamon. Pour egg mixture over bread.
- Place baking dish in a large roasting pan; fill roasting pan with boiling water halfway up the sides of the baking dish.

- Combine eggs, 1/2 cup sugar, and vanilla in a large bowl; stir well.
- Drain pineapple, reserving the juice.
- Add juice to egg mixture; add bread crumbs and toss gently.
- Melt butter in a 9 or 10-inch cast iron skillet over medium low heat. Remove 3 tablespoons of the melted butter and add it to bread mixture.
- Sprinkle brown sugar over butter remaining in skillet, sprinkle cherries and pecans over brown sugar mixture and arrange pineapple tidbits over cherries. Pour bread mixture over fruit in skillet.
- Bake at 350°F for 35 to 40 minutes, or until bread pudding is set and lightly brown.
- Place a platter or large cake plate over skillet and invert skillet so pudding falls out, upside over plate. Spoon any thing left inside skillet over top.
NATILLA DE PINA (PINEAPPLE CUSTARD)
This custard is eaten all over Latin America, but particularly in Cuba and Colombia. Orange juice can be substituted for the pineapple and, either way, it is terrific paired with Recipe #170551 posted separately.

- Bring the pineapple juice to a boil in a small saucepan and reduce until it measures 1/4 of a cup; once reduced, cool and reserve.
- Combine the milk, sugar and salt in a medium saucepan over medium heat and bring up to a simmer, stirring occasionally.
- Dissolve the cornstarch into the cooled pineapple juice, whisk to make sure there are no lumps and then whisk into the simmering milk mixture.
- Continue to simmer and stir until the mixture begins to thicken, about 10 minutes.
- Add some of the milk mixture to the egg yolks, mix and then add the egg yolks to the pot, stirring all the while.
- Raise the heat, bring the mixture to a boil, stirring constantly, until the mixture is very thick and puddinglike.
- Remove immediately from the heat and pour into a dessert bowl. Refrigerate at least four hours or overnight.
- Dust with nutmeg before serving.

- Preheat the oven to 350°F and spray a 2-quart or 11x7 baking dish with nonstick coating. Spread the cubed bread evenly in the dish and top with the pineapple and dot with the butter.
