25 pounds tomatoes (about 80 medium)
4 large green peppers, seeded
4 large onions, cut into wedges
2 cans (12 ounces each) tomato paste
1/4 cup canola oil
2/3 cup sugar
1/4 cup salt
8 garlic cloves, minced
4 teaspoons dried oregano
2 teaspoons dried parsley flakes
2 teaspoons dried basil
2 teaspoons crushed red pepper flakes
2 teaspoons Worcestershire sauce
2 bay leaves
1 cup plus 2 tablespoons bottled lemon juice

Steps:

  • In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, one at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water. Peel and quarter tomatoes; place in a stockpot., Pulse green peppers and onions in batches in a food processor until finely chopped; transfer to stockpot. Stir in next 11 ingredients. Add water to cover; bring to a boil. Reduce heat; simmer, uncovered, 4-5 hours, stirring occasionally., Discard bay leaves. Add 2 tablespoons lemon juice to each of 9 hot 1-qt. jars. Ladle hot mixture into jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 40 minutes. Remove jars and cool.

Great tasting sauce. I wanted a recipe that would provide a smooth texture as well as have a few chunks in it. I like chunks but children prefer smooth. A compromise that works for us. Since tomatoes vary in acid levels adjust seasonings and sugar to your tastes.

Number Of Ingredients 9

18 lbs fresh tomatoes (which should equal to 4 gallons washed, peeled and chopped tomatoes)
3 cups onions, chopped
4 -8 garlic cloves, roasted
1 -4 teaspoon olive oil
1/8-1/4 cup canning salt, start with less and add more to taste
6 -8 tablespoons sugar, start with less and add more to taste
2 tablespoons dried oregano leaves
1 tablespoon dried basil leaves
2 (6 ounce) cans tomato paste

Steps:

  • Prepare tomatoes, washed, peeled and chopped. Reserve 4 cups and set aside.
  • Prepare garlic. To roast garlic place garlic cloves on aluminum foil and drizzle with olive oil. wrap foil around garlic, sealing edges. Roast at 350 degrees for 30 minute or until tender. Cool and remove papery skins.
  • Saute 3 cups chopped onion until translucent. Reserve 1 cup and set aside.
  • Mix all ingredients except reserved tomatoes and onions. Cook tomato mixture over medium heat until heated through and then simmer for 30 minutes.
  • Using a food processor or immersion blender and puree tomato mixture until smooth.
  • Continue simmering for another hour to an hour and a half until tomato sauce thickens.
  • Add reserved tomatoes and onion.
  • Adjust seasonings to taste.
  • Heat thoroughly.
  • Ladle sauce into hot jars leaving a 1 inch headspace. Process pints 20 minutes and quarts 25 minutes at 10 lbs pressure in a steam-pressure canner.

8 cups fresh plum tomato purée
2/3 cup finely chopped onion
2/3 cup finely chopped celery
1/2 cup finely chopped carrot
2 cloves garlic, finely chopped
4 tbsp bottled lemon juice
2 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp hot pepper flakes
3 Ball® (16 oz) pint glass preserving jars with lids and bands
Optional: Ball® freshTECH Electric Water Bath Canner + Multicooker

Steps:

  • Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside.
  • Combine 1 cup of tomato purée, onion, celery, carrot and garlic in a large stainless steel saucepan. Bring to a boil over medium-high heat, stirring frequently. Reduce heat, cover and boil gently until vegetables are tender, about 5 minutes. While maintaining a steady boil, add remaining tomato purée, 1 cup at a time, stirring frequently. Stir in lemon juice, salt, black pepper and hot pepper flakes. Increase heat to high and bring to a full rolling boil; boil hard, stirring frequently, until mixture is reduced by one third, about 15 minutes.
  • Ladle hot sauce into hot jars leaving 1/2 inch headspace. Remove air bubbles and re-measure headspace. If needed, add more sauce to meet recommended headspace. Wipe rim. Center lid on jar. Apply band and adjust until fit is fingertip tight.
  • Process filled jars in a boiling water canner for 35 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

4 gallons tomatoes, washed, peeled, and chopped
1/2 cup canning salt
3 lbs onions, chopped
2 heads garlic, minced (not cloves)
3 bell peppers, chopped
1 cup sugar
1 hot pepper
2 tablespoons dried oregano leaves
1 1/2 tablespoons dried basil leaves
4 (12 ounce) cans tomato paste

Steps:

  • Mix all ingredients together in large pot.
  • Simmer for 2 hours AFTER it starts to boil, stirring occasionally.
  • Fill jars, leaving one-inch headspace; wipe rims, place lids and screw bands on fingertip-tight.
  • For pints, pressure can for 20 minutes@ 10# pressure.
  • For quarts, pressure 25 minutes@ 10# pressure.
  • Makes about 20 pints or about 10 quarts.

1/2 - (bushel) ripe tomatoes
6 medium onions
3-6 - green peppers (large 3, if small 6)
1/4 cup(s) salt
1 teaspoon(s) black pepper
3 tablespoon(s) oregano
3 tablespoon(s) parsley
3 tablespoon(s) garlic salt
1/2 cup(s) brown sugar
1 can(s) (med sized) tomato paste to thicken if needed

Steps:

  • You will need a large cooking pot to hold all ingredients. You will need to have your jars clean and ready. ****SEE IMPORTANT NOTE BELOW AT THE END OF DIRECTIONS BEFORE PROCEEDING****
  • Cut up and crush 1/2 bushel of ripe fresh tomatoes. Cook over low heat when bubbling for 1 hr. Then put through the food grinder. Dice your onions and add them. Dice your green peppers and add them.

  • Add the salt, black pepper, oregano, parsley and garlic salt.
  • Simmer sauce for 2- 3 hours more. 30 to 40 minutes before your sauce is done ADD BROWN SUGAR. (This cuts the acid in your tomatoes.)
  • Don't worry if your sauce isn't as thick as you want it. You can add tomato paste when your ready to open a jar or 2 . Now, your ready to pour the hot sauce into clean jars that are sitting in warm water. Just pour it in. They will seal.
  • **** IMPORTANT NOTE **** Please read Using Pressure Canners before beginning. If this is your first time canning, it is recommended that you read Principles of Home Canning. Procedure: Caution: Do not increase the proportion of onions, peppers, or mushrooms. Wash tomatoes and dip in boiling water for 30 to 60 seconds or until skins split. Dip in cold water and slip off skins. Remove cores and quarter tomatoes. Boil 20 minutes, uncovered, in large saucepan. Put through food mill or sieve. Saute onions, garlic, celery or peppers, and mushrooms (if desired) in vegetable oil until tender. Combine sauteed vegetables andtomatoes and add remainder of spices, salt, and sugar. Bring to a boil. Simmer uncovered, until thick enough for serving. At this time the initial volume will have been reduced by nearly one-half. Stir frequently to avoid burning. Fill jars, leaving 1-inch headspace. Adjust lids and process according to the recommendations in Table 1 or Table 2, depending on the method of canning used. Table 1.   • Combine all the ingredients except the lemon juice in a large 8-quart pot, stir to combine well, and bring to a boil. Reduce the heat and simmer for 1 hour, stirring often. Take out the bay leaf and discard. For a smoother consistency, use an immersion blender or transfer the sauce to a blender to process until smooth (optional).
  • Pour 2 tablespoons of lemon juice into the bottom of sterilized, hot quart jars. Ladle in spaghetti sauce within 1/2-inch of the top. Wipe the rim of the jar with a clean, damp cloth. Place a canning lid and ring on each jar.
  • Process the spaghetti sauce in a water or steam bath canner for 40 minutes (add 5 minutes if you live at 1,001 to 3,000 feet - if you live at higher elevation than that, you'll want to use a water bath canner since steam bath canners shouldn't be used to process jars longer than 45 minutes).
  • Remove the jars carefully from the water or steam bath and let cool to room temperature. Check to make sure the jars have sealed correctly (lightly press the top of the lid; it should be firm - if the center bubbles up and down when you press on it, it hasn’t sealed correctly and will need to be refrigerated or re-processed).
