Ingredients

200 ml coconut milk (1/2 a tin)
125 g pineapple chunks
100 ml pineapple juice (I used half a large tin of pineapple chunks, including the juice)
2 medium bananas

Steps:

Add all the ingredients to your blender. Starting at a low speed, turn the blender on, and gradually increase the speed to medium. Blend for around 1 minute, until smooth. Serve chilled.
Note: this recipe makes a beautifully thick smoothie. If you'd like to make it thinner, just add a little more juice or milk.

1 large banana (cut into chunks)
1/2 cup light coconut milk
1/2 cup ice

Steps:

Combine all ingredients in a blender and mix until smooth. Serve immediately.

I made this smoothie, trying to copy a store-bought kind and this is so much better! The fresh pineapple gives it such a light, fresh flavour- it's just not the same with canned pineapple. If any of this smoothie makes it to the fridge, you may like to water it down with some pineapple juice as the coconut milk thickens as it cools.

Ingredients

1 whole pineapple, peeled, cored and roughly chopped
2 bananas, peeled and roughly chopped
1/2 cup coconut milk
1/2 apple, peeled, cored and roughly chopped

Steps:

Put all the ingredients in a food processor and blend until smooth.
Press through a sieve, getting as much pulp through as possible to thicken the smoothie.
Serve over ice and enjoy!

1/2 medium banana

Add the ice and blend until smooth.
