- On 6-quart Instant Pot®, select SAUTE; adjust to normal. Melt butter in insert. Add mushrooms, onions, thyme, pepper and salt; cook 11 to 13 minutes or until mushrooms are lightly browned and onions soften. Select CANCEL. Stir in broth and soy sauce; continue to stir 30 to 60 seconds to remove browned bits from bottom of insert.
- Add pork chops to mixture in insert. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 2 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure. Internal temperature of pork should be at least 145°F using instant-read thermometer. If pork is not done, select MANUAL and cook on high pressure 1 to 2 minutes longer. Select CANCEL. Set pressure valve to VENTING to quick-release pressure.
- Remove pork chops, and place on plate; cover with foil to keep warm.
- In small bowl, beat whipping cream and cornstarch with whisk. Select SAUTE; adjust to normal. Heat liquid to simmering. Beat in cornstarch mixture with whisk; cook 30 to 60 seconds, beating frequently, until thickened. Select CANCEL. Serve over pork chops with potatoes. Top with parsley.

Steps:
- Season pork chops with garlic powder, seasoned salt, oregano, onion powder, and pepper.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter in the hot pot. Add pork chops, working in two batches if necessary, and sear until crispy and brown, 2 to 3 minutes per side. Remove the chops to a plate. Pour in vegetable broth, and deglaze, scraping the browned bits from the bottom of the pot with a wooden spoon.
- Place a trivet at the bottom of the inner pot and stack the pork chops on top. You do not want the pork chops resting in the liquid or the seasoning will wash off. Close and lock the lid and turn the pressure valve to Sealing. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions for at least 10 minutes. Remove the pork chops and let rest while you make the gravy.
- Select Saute function on the Instant Pot®. Whisk sour cream into the broth and allow the liquid to simmer, stirring occasionally, until gravy reduces by half and thickens, 10 to 15 minutes. Pour gravy over chops and serve.

- Punch sauté over high heat on your instant Pot. Melt butter and add oil. when hot brownpork chops on both sides, 3 to 5 minutes per side. Transfer pork chops to a plate.
- Saute onion and mushroom garlic until fragrant; add carrots; cook another 2 minutes; add broth and stir together. Return pork chops to the pressure cooker pot. Set a steamer basket on top of the pork chops and place potatoes in the basket.

- Pat chops dry and season liberally with lemon pepper (or your favorite seasoning).
- Select Saute (adjusted to more) to preheat the pot. When hot, add the oil. Once it begins to sizzle, brown the pork chops on both sides. (You may have to brown one or two chops at a time, depending on the size of the chops.) When browned, remove to a platter.

- Trim extra fat from the pork chops.
- In a small bowl, combine oregano, smoked paprika, thyme, salt and pepper. Set aside.
- Lay pork chops on a plate or board and rub with garlic on both sides.
- Then sprinkle with spice mixture on both sides as well.
- On 6 or 8 quart Instant Pot, press Saute and wait until displays says Hot.
- Swirl a bit of oil to coat and brown pork chops for 2 minutes per side, working in batches and transferring onto the plate.

- Turn the Instant Pot to sauté. Fry the bacon in the bottom of the Instant Pot until crispy. Remove the bacon and place on top of a couple paper towels and press the paper towels over the bacon to absorb the grease.
- Drain all but 1 tsp of the bacon grease out of the Instant Pot. Sauté the onion in the bacon grease and when onions are almost translucent add in the garlic and sauté it as well.
